Everything should be clean and dry, from clean hand, clean and stralized jar, to clean and dry lemons. Wash lemons under running water thoroughly. Using a sponge. Dry them and make sure they are not wet any more. Slice lemons into thin lemon rings. Make slices as thin as possible because thinner slices would extract better.
Remove as many seeds as possible.
For each 1kg lemon or other citrus you will need 1kg sugar ( 1:1 ration).

Leave mixture of sugary lemony for an hour.
Then place sliced lemon in the dry jar. Make a wall with the sliced lemons in the jar for nice presentation.
Repeat until you get to the top. Use remaining sugar on top of sliced lemons. Seal the jar with plastic wrap and cover the lid. Leave in the fridge for 1 week for mature. The sugar will turn into a syrup.
