Potato Pancake with Cheese

Ingredients

  • 3 large potatoes
  • 3 tbsp rice flour or corn flour
  • 3 tbsp Mozzarella cheese, grated
  • Vegetable oil

Instructions

  • wash, peel and slice potatoes. Add them to salted water and allow to cook until soft.
  • Remove from the pan and drain it.
  • Use one of theses mashers.
  • Add it in a bowl and mash it.
  • Now add rice flour, season with salt and chilli flakes.
  • Mix together and knead with hand until smooth.
  • Divide it into medium size balls.
  • Take one of potato balls and make it flat. Place some grated cheese in the middle of flatten potato and give a ball shape again.
  • Repeat same process with remaining ingredients.
  • Heat the oil in a pan. Place each potato ball in the pan. Gently press each one down and make it flat.
  • Fry each side for 2-3 minutes and then flip over for other side. Voila, our gorgeous mashed potatoes are ready. They are delicious. Just have a look
