Walnuts pilaf

A simple rice dish with lots of spices such as turmeric, cardamom, cinnamon, coriander, fried onion and walnuts, mmmmmmm so good and healthy light dish.

Ingredients

  • 200g rice, cooked
  • 100g green peas, cooked
  • 1large onion, peeled, thinly sliced
  • 3tbsp walnuts, roughly chopped
  • 2tbsp fresh coriander, chopped
  • ½ tsp cinnamon
  • ½ tsp cardamom
  • 1tsp cumin
  • ½ tsp ground coriander seeds
  • ½ tsp turmeric
  • 2 bay leaves
  • Salt and pepper to taste
  • Butter or vegetable oil

How to make it?????

Heat the oil in a pan. Add bay leaves and all above mentioned spices. Fry for a minute until aroma of spices released.

Add chopped onion and sauté until tender. Add green peas, walnuts, chopped coriander and cooked rice.

Gently mix all ingredients together and ready to serve.

 

کته گردو

سلام به همگی . امروز یک کته  درست کردم. یک کته ی بسیار ساده‌ای که خیلی سریع آماده میشه و با اینکه در این غذای برنجی از گوشت خبری نیست ولی استفاده از ادویه های خوش عِطر و بو و پیاز تفت داده شده طعم فوق‌العاده‌ای به برنج می‌دهد. این کته را با الهام از کته های هندی درست کردم. در آشپزی هندی از ادویه های زیادی در یک غذا استفاده میکنن که هم غذا رو تند و تیز میکنه و هم عِطر و طعم قوی به غذا میده. در این کته ادویه ها رو به اندازه‌ای تنظیم کردم که با طبع ما مناسب است و خیلی تند نیست ولی اگر دوست داشتید می تونید زیره و فلفل رو بیشتر هم بزنید.

مواد لازم

دویست گرم برنج

صد گرم نخود فرنگی پخته

یک عدد پیاز درشت خلالی خرد شده

سه ق غ گردوی خرد شده

دو ق غ گشنیز خرد شده

نصف ق چ دارچین

نصف ق چ هل

یک ق چ زیره

نصف ق چ پودر تخم گشنیز

نصف ق چ زردچوبه

دو عدد برگ بو

نمک وفلفل به میزان نیاز

کره یا روغن مایع

طرز تهیه

مقداری روغن را در تابه گرم کنید یا کمی کره را آب کرده و تمام ادویه ها و برگ بو را در تابه برای یک دقیقه تفت دهید تا زمانیکه عِطر ادویه ها به مشامتان برسد. در این زمان پیاز خرد شده را به ادویه ها افزدوه و تفت دهید تا پیاز نرم شود. در انتها نخود فرنگی – گردو – گشنیر خرد شده و کته ی پخته را به مواد داخل تابه اضافه کرده و به آرامی همه ی مواد را با هم مخلوط کنید . کته آماده ی سرو هست.

Marinated Olives زیتون پرورده

In Northern cities of Iran, having pickled garlic with 7-10 years old and marinated olives in their daily meals is a MUST.

If you are an olive lover, so perhaps my following post can caught your attention.  I love this salad or pickle which is called ‘ Zytoon Parvardeh’ or marinated olives with walnuts, pomegranate molasses, garlic and spices such as ground angelica. A lovely combination of these ingredients create beautifully a delicious dish with a unique flavour.

Olive is called ‘ Zeytoon’ in Persian and Arabic languages. There are recipes for marinated olives and this is Persian style marinated olives.

marinated olives or zeytoon parvarddeh, is a tasty Persian dip/ salad or pickle from Gilan Province near Caspian Sea in North of Iran.

Like other recipes, there are different versions of this salad/pickle. In some recipes use whole olives in other recipe use minced olives. I personally prefer to use not minced olives.

Ingredients

  • 500g olives, remove stones
  • 1 cup walnuts, finely chopped
  • 3-4 garlic cloves, grated (You can add more garlic if you wish)
  • 1 cup pomegranate molasses
  • 1 tsp ground angelica (Golpar)
  • 2 tbsp virgin olive oil

How to make it?????

If pitted olives are very salted, it is better to rinse them under cool water. Then in a large bowl add pitted olives (as whole olives or roughly chopped), chopped walnuts, grated garlic, olive oil, pomegranate molasses and ground angelica ( give beautiful taste and fragrance to the salad).

Stir well and ready to serve main course like rice , or fish dishes and bread.

You may store zeytoon parvardeh in a jar with tight lid and keep in the fridge for several months.

زیتون پرورده

در شهرهای شمالی ایران مثل گیلان و رودبار همراه بودن غذا با سیر ترشی چندین ساله و زیتون پرورده

یک باید هست .

اگر شما طرفدار زیتون هستید زیتون پرورده جزو ترشی هایی هست که حتمن شما از اون لذت خواهید برد.

زیتون پرورده از ترکیب زیتون با گردو – رب انار و ادویه ی گلپر تهیه میشه. طرز تهیه زیتون پرورده متنوع هست در بعضی از دستورها از نعنا خشک یا سبزی محلی استفاده میشه. در یک دستور زیتون هارو چرخ میکنن در دستور بعدی زیتون رو خرد میکنن. ولی من شخصن زیتون خرد شده بیشتر

رو بیشتر ترجیح میدم.

مواد لازم

پانصد گرم زیتون بدون هسته

یک پیمانه گردوی خرد شده

سه چهار حبه سیر رنده شده : اگر دوست داشتید سیر بیشتر هم می تونید بزنید

یک پیمانه رب انار

یکی ق چ پودر گلپر

دو ق غ روغن زیتون

طرز تهیه

 داخل یک‌کاسه زیتون هارا یا به صورت درسته یا خرد شده همراه با گردوهای خرد شده – سیر رنده شدهروغن زیتون – رب انار و پودر گلپر ریخته و با هم خوب مخلوط کنید تا همه ی مواد با هم ترکیب شوند.

زیتون پرورده از همان لحظه تهیه قابل مصرف هست ولی بهتر است چند ساعت در یخچال نگه داری شده تا تمام عِطر و طعم را بهخود بگیرد.

در ضمن بهتر است ترشی را داخل یک بطری دردار و در یخچال نگه داری گنید.


Marinated olives

Ingredients

Walnuts Snowballs

These beautiful cookies could be made with walnuts or pecan. They are buttery, with plenty of walnuts and full of flavour. It’s surprisingly easy recipe to follow.

Ingredients

  • 1 cup all purpose flour
  • 1 cup walnuts, finely diced and toasted for better taste
  • 113g unsalted butter, room temperature
  • 3tbsp white sugar
  • 1tsp vanilla extract

How to make it?????

In a large bowl, add all ingredients and mix it up by hand. Keep mixing until turning into a dough. Then warp it up in plastic and refrigerate it for half an hour to chill. By this way, would be easier to roll it up afterwards.

Preheat the oven to 176C degree. Now open the dough and roll them into small balls and place them on a parchment paper lined tray. Transfer the baking tray into the oven and allow to bake for 15 minutes.

Once they are done, they are fragile so let them cool for 5 minutes.

Now still they are warm, so coat them with powdered sugar and because they do not take much sugar at first time, so after 15 minutes when they are cool, roll them in powdered sugar for the second time and that’s it. Enjoy it 🙂

کیک گردویی توپی

این کیک های توپی رو میشه با پی کنPecanنوعی گردوگرمسیری و یا با گردومعمولی درست کرد. معمولن نزدیک کریسمس که میشه یکی از شیرینی‌هایی که در منازل درست میکنن walnuts snow balls هست که توپک های خیلی خوشمزه ی کره ای و پر از گردو هستن. طرز تهیه ی این توپک ها بقدری ساده هست که تعجب خواهید کرد. نکته ی دیگر اینکه می تونید خمیر مایه را از چند روز یا چند هفته قبل آماده کرده و در یخچال نگه دارید و بعد آن‌ها را بپزید.

مواد لازم

یک پیمانه آرد همه منظوره

یک پیمانه گردوی خرد شده و بوداده شده

صدوسیزده گرم کره بدون نمک و نرم

سه ق غ شکر سفید

یک ق چ عصاره وانیل

پودر قند

طرز تهیه

داخل یک‌کاسه بزرگ تمام مواد لازم را ریخته و با دست مواد را آنقدرمخلوط کرده و ورز دهید تا به صورت خمیر یک‌دست در آید. سپس خمیر آماده شده را داخل پلاستیک پیچیده و برای نیم ساعت در یخچال نگه دارید تا کمی سفت شود.

بعد از نیم ساعت فر را روی حرارت 176 درجه سانتیگراد گرم کنید. سینی فر را با کاغذ آشپزی بپوشانید. خمیر آماده شده را از پلاستیک خارج کرده و مطابق تصاویر توپک های کوچکی به اندازه ی گردو درست کنید وداخل سینی فر قرار دهید.

سینی را داخل فر گذاشته تا برای 15 دقیقه کیک ها بپزند. وقتی آماده شدند سینی را از فر خارج کرده و چون کیک ها حالت ترد و شکننده دارند بگذارید برای 5 دقیقه بمانند و سپس در حالیکه هنوز گرم هستند داخل پودر قند بغلطانید ولی چون دفعه اول کاملن پودر قند را بخود نمیگیرند بگذارید 15 دقیقه بمانند و وقتی سرد شدند برای بار دوم باز در پودر قند غلطانده و حالا می‌توانید نوش جان کنید.

My Pumkin-Walnuts Dessert

An easy recipe for a delicious and  humble dessert.

Ingredients

  • 1 pumpkin
  • ½ cup walnuts, crushed
  • 2 tbsp sugar
  • 1 tsp cinnamon powder
  • 1 tbsp unsalted butter

How to make it???

Preheat your oven to 176 C.

Rinse off the pumpkin. Cut off pumpkin lid. Use a knife to stab outer shell a few times, to allow for ventilation. Then place the pumpkin in a glass baking dish and transfer the dish into the oven to roast for about 45-60 minutes. The duration for roasting depending on the size of the pumpkin.

Meanwhile, melt the butter in a saucepan, add crushed walnuts, sugar and cinnamon and fry for 2 minutes. Set aside.

Once the pumpkin is roasted, Let to cool down, Use a spoon and scrape out the seeds. Cut pumpkin into slices but do not need to separate the slices ( as you see in the photos).

Fill centre of pumpkin with fried walnuts and sprinkle some icing sugar top of it.

My Yogurt Balls

Hi my dear page visitors. I am just in love with these yogurt balls. Aren’t they gorgeous? They look like jewels. Very healthy, light and tasty snacks. It is fantastic when you see how easy yogurt transform into these tasty balls.

Once you made your yogurt balls , you may keep plain yogurt balls in a jar with some olive oil or topping and serve them.

For making these tasty yogurt balls you would need to get rid of yogurt liquid and I made it with traditional method, as you would see in the following recipe. Also you have myriad choices for topping from dried herbs to seeds and nuts.

Ingredients

  • 500g Greek yogurt
  • 2 tsp salt

For topping

  • Dried herbs such as: dill, mint, oregano, chives,
  • Smoked paprika
  • Pomegranate seeds
  • Chilli flakes
  • Dried rose petals
  • Chopped walnuts

Instructions

Stir salt into the yogurt . Pour the yogurt into a double layer of cheesecloth or kitchen cloth. Tied up the corners.. Hang it over a bowl and leave to drain for 24 hours, until all liquid left in the bowl and strain away.

That’s all you have to do . Resulting is a thick and creamy yogurt.

Shape it into little balls and roll in a topping your choice.

Shirazi Rice Pilaf

Shiraz is an ancient city in SW of Iran. Shiraz is known as the city of literature, flowers, wine, gardens, nightingales and poets.

With a short driving distance from Shiraz there are ruins of some of most spectacular ancient sites such as: ancient city of Persepolis, Tomb of Cyrus the Great in Pasargadae, ancient necropolis of Naqsh-e Rustam with rock cut tombs of Persian kings, Naghsh-e Rajab with rock cut reliefs,….

My today recipe is called Qanbara polow, one of traditional classic rice dish from Shiraz that is served in especial occasions, parties and as Iftar in month of Ramadan.

Ingredients

  • 3 cups rice
  • 350 g minced meat
  • 1 large onion, finely chopped
  • 100 g chopped walnuts
  • 2 tbsp gram flour
  • 50 g raisins
  • 3 tbsp pomegranate molasses
  • 1 ½ tsp grape molasses
  • 1 tsp turmeric
  • Salt and pepper to taste
  • Vegetable oil

Instructions

In a bowl with minced meat, add gram flour, turmeric and season with salt and pepper. Mix all together well. Then, give small ball shape to the meat. Heat the oil in a pan and fry them.

Heat the oil in another pan and sauté chopped onion until soft, then add raisins and chopped walnuts. Fry for 2 minutes and set aside.

In a bowl with pomegranates molasses, add grape molasses and 2 tbsp of olive oil. Mix together.

Semi cook the rice. Add meat balls and fried onion mixture with walnuts and raisins. Pour molasses mixture top of rice and allow to cook perfectly.

Once rice is done, gently stir the rice and serve it.

Deemaaj

Qazvin in NW of Tehran, is one of ancient cities of Iran. Qazvin was capital of the Persian Empire under Safavids for 57 years.

Nowadays, this city is one of important cultural and tourism centre in Iran due to archaeological sites, fortifications, monuments, ……. and beautiful sights and for its carpet patterns, poets, pistachio gardens and Sweets such as Baklava.

Name of my recipe is Demaaj or Dumaaj that is a traditional cold food in Qazvin and Tabriz. Dumaaj is a light, traditional and different food. When weather gets warmer, this food would be one of amazing cold food recipes for summer time.

Deemaaj is combination of Persian naan Lavash with aromatic fresh herbs, plain yogurt, cream and walnuts.

Recipe for this food is slightly different area by area. Deemaj is one of healthy foods for Iftar in month of Ramadan. One of essential ingredients for deemaaj is Persian naan Lavash. If you do not have access to this bread, tortillas bread would be good substitute.

Other ingredient is Iranain Paneer ( cheese) , and good substitute for cheese also would Greek cheese.

Preparing this food is very cheap and easy. You can store it for several days in the fridge. I recommend you to try this refreshing and light meal for a warm summer afternoon.

Ingredients

  • 1 large Persian Lavash naan bread ( 2 tortillas bread)
  • 2 medium cucumber, finely chopped
  • 4-5 spring onions, finely chopped
  • Small bunch of each herbs includes: dill, chives, mint, coriander, parsley, tarragon
  • 100 g chopped walnuts
  • 100 g Feta cheese, crumbled
  • 100 g butter or clotted cream
  • 4 tbsp Greek yogurt
  • ¾ of a cup water
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

Break the bread into small pieces and toast it in a pan until crunchy.

Add water to the yogurt and season with salt- pepper and paprika. Whisk it well until you have a thick liquid.

Now, mix yogurt mixture with cream or butter and crumbled cheese. Next, in a large bowl with chopped herbs, cucumber, bread and chopped walnuts, add yogurt mixture and gently combine all ingredients together.

Allow to set in the fridge for 2 hours until firm, then give mini ball shapes and serve it. You can store this lovely bites fresh for few days in the fridge.

Easy Nut Energy Bar

Hi lovely people. If you are very busy that have no time to eat your food, a delicious and good solution is nut energy bar that is a good sources of protein and carbohydrate.

Ingredients

  • 1 cup walnuts
  • 1 cup almond
  • ½ cup sesame seed
  • ½ cup pistachio
  • ½ cup cashew
  • ½ cup pumpkin seed

For syrup

  • 1 cup white or brown sugar
  • ½ cup honey
  • Half a lime or lemon juice
  • pinch of salt

Instructions

Roast all of nuts in a pan for 5 minutes. Keep stirring and once they roasted remove from the heat.

In a pot add all ingredients for syrup. Stir together and then simmer the syrup on low heat for 5 minutes. Pour the syrup on nuts, combine together and let to cook for 2 minutes.

 

Line your cake mould with parchment paper or grease it. Pour nuts mixture in it and refrigerate it for 2-3 hours. Remove from the mould and cut it into small pieces.

Spinach and Garlic-Yogurt Rolls

This is such a delicioussssssssssss and good finger food, party nibbles or snack. Star of this recipe is spinach. You can use either fresh or frozen spinach leaves. One of other ingredients for this beautiful dish is barberry which is called ‘ Zereshk  ‘ in Persian language. Zereshk is dried fruit of Barberries.

Iran is the largest producer of zereshk in the world. Most of the zereshk gardens are located in NE of Iran in Khorasan province.

This red colour fruit is used a lot in Iranian cooking. As adding to the rice ( pilaf/polow), or dish with chicken or adding to Persian frittata ( Kookoo). Also for making zereshk jam and zereshk juice that is very refreshing and delicious with good source of vitamin C.

Ingredients

  • 150 g spinach leaves
  • ½ onion, chopped
  • 1 cup Greek yogurt
  • 2 garlic cloves, grated
  • 5 eggs
  • 3 tbsp chopped walnuts
  • 2 tbsp barberry zereshk ( substitute for zereshk might be currant)
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tsp turmeric
  • 1 tbsp vegetable oil

Method

Preheat the oven to 180C.

Add spinach leaves with 3 tbsp water to a pot . Cook it for 3-4 minutes. Remove from the heat and squeeze to get ride of extra water.

Pour cooked spinach, onion, spices, oil and eggs in a food processor or a blender. Mix well for 2 minutes or until you have a smooth mixture. Add Chopped walnuts and barberry to the mixture. Combine it.

 

Cover the baking tray with parchment paper. Pour the spinach mixture in it and with a spoon or a spatula spread the liquid mixture equally in the tray. Cook it in the oven for 15 minutes. We nearly done it.

While spinach get to be ready, add grated garlic and pinch of salt to the Greek yogurt and mix together, set aside.

Once spinach cooked remove from the oven. Allow to cool down. Now, flip over spinach and remove the paper. With a knife cut the spinach into long strips ( as you see in the photos).

Spread garlic-yogurt on each strip and roll it gently. Once all strips rolled out, refrigerate them for an hour and then serve it.

Gata ( walnut rolled sweet) گاتا مغز گردویی

This lovely sweets are so good and delicious. Armenian community in Iran make it and it is very popular in the whole nation. We can get it easily form confectioneries or bakeries.

Ingredients
1 cup unsalted butter
2 cups plain flour
1 cup icing sugar
½ tsp nutmeg powder
½ tsp cardamom powder
1 tsp cinnamon
1 egg yolk
1 cup crashed walnuts
Puff pastry dough

Preparation
Heat the pan on a medium heat and melt the butter in it. Add flour and stir in for 5 minutes. Then add sugar and stir in for 2 minutes. Add cardamom, cinnamon, nutmeg, and walnuts to the mixture and stir for 2-3 minutes more. Set aside to cool.


Preheat the oven on 175C .
Sprinkle 1-2 tbsp. flour on working table. Place puff pastry dough on it. Brush with egg yolk. Spread filing mixture on dough and then roll the dough from one of the long sides. Give soft punch to the dough with rolling pin.

Brush with egg yolk surface of prepared dough . Then use a cutter or a knife and cut it into small pieces.
