Chocolate Tortilla

I am sure all of you know Tortilla bread. This flat and thin bread is similar to one of Iranian naan breads which is called Lavash. So Today I treated my family with chocolate lavash (or chocolate tortilla). A simple but yet sooooooooooo good 😊🍣

I love and love chocolate but In the following recipe I did not use any melted chocolate or Nutella. Because there are thousands of additives in the chocolate. So I just used coca powder and made a lovely mixture with Tahini and honey.

It is really amazing and tasty. Of course you can have a plain chocolate tortilla but I added slices of banana, pomegranate seeds and ….

It is super easy to prepare it, I mean in less than 10 minutes you can make such a tempting dessert for parties or family gathering.

Ingredients

 

  • 1 Lavash naan bread (or Tortilla bread)
  • 1tbsp cocoa powder
  • 3tbsp tahini
  • 2tbsp honey
  • 1 banana, peeled and thinly sliced
  • Mandarin orange
  • 1tbsp pomegranate seeds
  • Few raspberries, chopped
  • Handful almond, or pistachio, crushed

How to make it?????

In a bowl add cocoa powder, honey, and tahini. Mix well together and set aside.

Place a pan on the stove and heat the pan over low heat. Place one slice of Lavash bread in the pan and warm the bread up. Then flip over the naan and allow both sides to get warm.

Remove the bread from the pan and spread all the coca mixture on the bread with a little distance from the bread edges.

Then place it back again into the pan and spread banana slices, pomegranate seeds, raspberries and chopped nuts all over top of the bread. The Chocolate Tortilla is ready. Cut it into slices and serve it.

لواش شکلاتی

نان تورتیا یا تورتیلا از نظر ظاهری خیلی شبیه به نان لواش خودمون هست ولی در سایز کوچک تر. امروز من با تورتیا یک دسر خوشمزه درست کردم . شاید خیلی هاتون بگید اه اه اه شکلات روی نون لواش یعنی چی ؟ ؟؟؟ ولی باور کنین اگر یک موقع درست کردید و خوردید می بینید واقعن خوشمزه هست. اصلن اون چیزی که فکر می کنید نیست .
طرز تهیه نان لواش شکلاتی به‌قدری ساده هست که باورتون نمیشه و در عین حال فوق العاااااااااااااااده خوشمزه.
من شخصن عاشق شکلات هستم ولی در دستور امروز بجای استفاده از شکلات یا ناتلا که برای تهیه اشون از دهها مواد افزودنی استفاده شده من از پودر کاکائو استفاده کردم و از ترکیب پودر کاکائو با ارده و عسل یک مخلوط محشر درست کردم که تا امتحان نکنید باورتون نمیشه چقدر خوشمزه میشه.
از میوه‌های مختلف می تونید برای روی نان شکلاتی استفاده کنید و حتی می تونید ساده نگهش دارید و فقط شکلات رو روی نان پخش کنید.
نکته مهم دیگه این هست که این دسر خوشمزه رو میشه فقط در عرض 5 دقیقه تهیه کرد.

مواد لازم

نان لواش

یک ق غ پودر کاکائو

سه ق غ ارده

دو ق غ عسل

یک عدد موز حلقه حلقه شده

یکی دو حبه نارنگی از وسط نصف شده

یک ق غ دانه انار

چند دانه تمشک یا توت فرنگی خرد شده

یک ق غ فندق – گردو یا پسته خرد شده

طرز تهیه

داخل یک پیاله پودر کاکائو را با عسل و ارده خوب مخلوط کنید. یک تابه را روی گاز قرار داده و گرم کنید . نان لواش را داخل تابه قرار داده و گرم کنید و سپس نان را پشت ورو کنیدتا هر دو روی نان گرم و نرم شود.

حالا نان را از تابه بیرون آورده و شکلات را روی نان پخش کنید بطوریکه کمی فاصله با لبه نان داشته باشد.

نان شکلاتی را دوباره داخل تابه با حرارت کم بگذارید. در این مرحله موزهای خردشده – تمشک – انار و پسته را روی شکلات پخش کنید.

همین. خیلی فوری و آسان. نان شکلاتی را مثل پیتزا برش داده و نوش جان کنید.

Persian rice with sour cherries (Albaloo polo)

Sour cherry or Morello cherry is called ‘ Albaloo’ in Persian language. Iranian housewives make different things with albaloo such as: sour cherr juice, hot and cold drinks, jam and stew, cake and cookies. One of the Iranian famous rice dish is called Alballoo polo/pilaf which is made with sour cherries, spices and different meats such as: beef, lamb, or chicken and meat balls.

The spices used in this pilaf vary but typically include Persian saffron and cinnamon. In Iranian cuisine there are wonderful mild sweet dishes such as: Fesenjan, Jewelled rice, Basterma pilaf, Albaloo polo and . And, and………….

Albaloo polo is mind blowing rice dish with combination of sweet/tangy taste. It’s moist and fluffy with plenty of morello cherries.

Ingredients

  • 4 cups sour cherries
  • 3 cups rice
  • 1/3 cup white sugar
  • 4 tbsp unsalted butter
  • 300 g chicken breast or thigh, cooked
  • 1 tsp cinnamon powder
  • ½ tsp cardamom
  • 2 tbsp Persian saffron water
  • Salt and pepper to taste
  • Vegetable oil

How to make???

Soak the rice in salted water for an hour. Meanwhile, Place deseeded cherries in a pan. Add sugar and simmer gently over low heat for 10 minutes. Then place the cherries in a colander and let to drain the juice.

Melt the butter in a pan. Add cinnamon, cardamom, pepper, 1 tbps saffron water and stir. Then add cooked chicken to the butter and fry for 5 minutes. In this point, toss in the cherries and fry for 5 minutes more and set aside.

Pour in water into a pot and bring it to a boil. Drain the salted water of rice and add the rice to the boiling water and simmer for 8-10 minutes. Drain the rice in a colander and rinse the rice with cold water.

Add some oil to the pot, place a tortilla bread over the oiled base. Place some rice over the bread, then place half of the cherries and chicken mixture. Repeat until the rice and cherries mixture are used up.

Pour some saffron water, and albaloo juice over the rice. Place pieces of butter top of the rice. Cover the pot with a lid and cook for 20 minutes on medium to low heat.

Serve the rice in a plate along with the crispy tortilla from bottom of the pot that is called ‘ Tahdig’ in Farsi.

King Rice/Shah Pilaf

Shah plov or crown rice is an Azerbaijani signature dish. There are different types of rice dish in Azerbaijani cuisine but this one is king of rice.

This rice dish is known as : Khan rice, shah rice or crown rice and is served in special occasions. Shah rice made with red meat or chicken mean, dried fruits and nuts and last but not least, Persian Saffron water.

Ingredients

  • 3 cups rice
  • 1 large onion, chopped
  • 400g diced meat, cooked
  • 1 cup raisins
  • 1 cup apricot, cut into small pieces
  • 220 g melted butter
  • 3 tbsp Saffron water
  • 1 large Lavash bread or 5-6 medium tortilla bread
  • Salt and pepper to taste

How to make it

Preheat the oven to 180C.

Rinse the rice in cold water 2-3 times. Then soak the rice in salted water ( add 1 tbsp salt) for an hour.

Heat the oil in a frying pan. Add chopped onion and fry onion until soft. Then add cooked meat , dried fruits, season with salt and pepper and  fry for few minutes.   Add saffron water and Stir constantly to prevent from burning and set aside.

Fill a pot with water. Bring it to a boil. Drain salted water of rice and add it to the boiling water. Let to cook for 10 minutes.

Using a colander and strain the rice. Rinse with tap water. Melt the butter and spread it on the bottom and sides of the pot.

Place one round bread on the bottom of the pan . Grease each Lavash or tortilla bread with melted butter and arrange around the sides of the pan, overlaps each other ( as you see in the photos).

Do not leave any open space between breads. Now, Spread a layer of rice in the pot and then pour some of meat and fruits mixture. Pour some saffron water on the rice. Repeat the procedure again.

Cover top of the rice with another round bread then fold the corners down. Grease with melted bread.

Cover the pot with a lid. Cook in the oven for 50-60 minutes until Lavash bread is golden. Remove from the oven and let to rest 5 minutes.

Turn the pot upside down and cut the crust into portions and serve it.

Chilli con carne

If you are a spicy and hot dish lover, chilli con carne would be right choice. Chilli con carne means chilli with means. It serves with bread or rice.

Ingredients

  • 500g minced beef

  • 1 large onion, peeled and finely chopped

  • 2 cloves of garlic, peeled and finely chopped

  • 2 medium carrots, peeled and finely chopped

  • 2 sticks of celery, peeled and finely chopped

  • 1 red pepper

  • 1tsp ground cumin

  • 1tsp ground cinnamon

  • 400g kidney or Pinto beans, cooked

  • 400g chopped tomatoes

  • 1 small bunch of coriander

  • 2tbsp vinegar

  • plain yogurt as much as you wish

  • Salt and pepper to taste

  • Olive oil

How to make it

Place the pan on a medium heat and add oil and all chopped carrots, onion, celery, garlic, red pepper, cumin and cinnamon. Stir frequently and fry them for few minutes until softened.

Add minced meat, Pinto beans and chopped tomatoes and chopped coriander . Fry until meat lightly coloured. Pour 1 ½ cups water and vinegar into the pan. Season with salt and pepper. Turn the heat down to simmer for about 20-30 minutes. Serve chilli con carne with fluffy rice, or tortilla bread.

Mashed Dates and Cheese Wrapped in Bread

This is an easy recipe with only three ingredients and superb appetizer for any party.
Soft and sweet dates with salty cheddar cheese wrapped in bread and toasted.

Handful pitted dates
3 Tbsp shredded cheddar cheese
Persian Lavash bread or Tortilla bread

Preparation
Mash the dates and make it paste. Spread shredded cheddar cheese all over the tortilla bread, then put mashed dates top of the cheese. Roll the bread. Place it in the sandwich maker and toast the bread.

Rozina’s Persian Calzone Pizza

Calzone pizza is very easy to make it. Usually need pizza dough and sometimes tortilla bread. In this recipe I have made my version of Persian calzone pizza. It was so good and everyone enjoyed it. I hope you also like this recipe and try it.

Calzone pizza

ingredients

200 g minced beef

80 g shredded orange cheddar cheese

2 slices of tortilla bread

1 large onion, peeled and thinly sliced

1tbsp tomato paste

2 tbsp black olives, pitted

1tsp Persian saffron water

½ tsp turmeric

sea salt and chilli powder to taste

oil

 

 

Method

Heat the oil in a saucepan and fry onion until soft. Then add minced beef, tomato paste, and season with salt, turmeric and chilli. Gently stir all ingredients and allow to fry until meat is brown. Transfer from the heat and stir in saffron water.

Pour some oil in a pan, place one of tortilla bread in the pan, spread half of shredded cheddar cheese top of bread and place black olives and meat mixture. Then at the end add remains of shredded cheese and cover it with second tortilla bread.

Now, fry the calzone in the pan, and after 2 minutes flip over and fry other side of bread.Once both sides fried, transfer it to a plate and cut it into slices and serve it with salad and fried potatoes.

Mashed potato wrap

My mother used to make mashed potato wrap as snack for us. It was simple and tasty, a combination of spices with fried onion and mashed potato.

Ingredients

  • 300 g potatoes
  • 1 medium onion
  • Salt and pepper to taste
  • ½ tsp cumin
  • 1/2 tsp turmeric
  • Slices of   Persian Lavash bread (naan) or tortilla bread
  •  Vegetable oil

How to make it
Cook and mash potatoes. Fry chopped onion. In a bowl with mashed potatoes add fried onion, and all spices. Mix together well.
Spread mashed potato mixture on the surface of torttila bread. Roll it up. Cut it into 3 small pieces.
It’s done. Take a chance and try this simple recipe, you would surprise.

سیب زمینی کوبیده ی لقمه ای
وقتی که بچه بودیم مادرم این لقمه های سیب زمینی رو برای عصرانه ی ما درست می کرد. خیلی ساده هست ولی ترکیب پیاز سرخ شده با سیب زمینی کوبیده و ادویه ها ی استفاده شده واقعن خوشمزه اش میکنه.

مواد لازم

سیصد گرم سیب زمینی

یک عدد پیاز متوسط

نصف ق چ زیره

نصف ق چ زردچوبه

نمک و فلفل به میزان لازم

نان لواش

روغن مایع

طرز تهیه
سیب زمینی ها را آبپز کنید و بکوبید. پیاز رو ریز خرد کرده و سرخ کنید. در یک کاسه سیب زمینی کوبیده را با پیاز سرخ شده و ادویه ها مخلوط کنید و روی نان لواش پهن کنید. نان رو لوله کرده و به چند قسمت کوچک برش بدهید.
به همین آسونی و به همین خوشمزه گی

Cheese wraps

This recipe is about cheese wraps. It is fast and easy and fun to prepare.
Ingredients
Tortilla bread or Persian Lavash bread
Turkey slices ( or Ham)
Red bell pepper, finely chopped
Spring onions , finely chopped
Grapes, finely chopped
Walnuts, crushed
Black olives, chopped
Cream cheese
Salt to taste

 

 

Preparation
I am going to prepare two different types of cheese wraps. One with cheese, walnuts, and grapes. Second one with cheese, Turkey slices, bell pepper, black olives and herbs.
In a bowl with cream cheese, add chopped bell pepper, black olives, herbs, and pinch of salt. Mix well together.
Spread thinly cream cheese mixture on the bread and just make sure all over the bred is covered. Put slices of Turkey top of cheese mixture. Rolls up bread tightly as much you can. Wrap it nice and firm. Put warped bread in the refrigerator for 1 hour. Then, unwrap carefully and cut it into small pieces. They are gorgeous
In a bowl with cream cheese, add chopped grapes and walnuts. Mix together. Spread second cream cheese mixture top of the bread and repeat process like above mentioned.
