Iranian pan kebab ( kebab Tabei )

Hello lovely Ladies and gentlemen. For today I cooked Persian pan kebab that is known as kebab tabei or kebab deegi. These kebab tabei are hearty, simple, delicious meal and easy peasy to make them. So just cook it, serve it, sit and watch your favourite TV program. These kebabs might be served with rice and salad or with Lavash or tortilla bread.


Kebab in the Iranian cuisine has a special place. There are variety of kebabs, such as: ground meat kebab: kebab koobideh, sour kebab : kebab torsh, beef tenderloin : kebab barg. These kebabs made either with minced or diced beef, lamb, chicken or fish.


There are different kinds of kebab in the Persian cuisine and kebab tabei or pan fried kebab is one of the most delicious and brilliant meals. Kebab tabei is a juicy, moist and flavourful kebabs in a frying pan. Making this kind of kebab at home is very easy, and no need to a grill. All you need is minced beef /lamb and onion.



  • 500g beef/lamb mince
  • 1 large onion, grated
  • large tomatoes or cherry tomatoes
  • 1 green or yellow bell pepper
  • 1 tsp paprika
  • Salt and pepper to taste
  • Vegetable oil



Squeeze grated onion to get rid of onion juice. In a bowl add minced meat, onion, paprika, season with salt and pepper and mix all ingredients together until well combined. Set aside for 15 minutes.

Add vegetable oil to a non stick pan. Spread the meat mixture in the pan and press the meat with your hand to cover the base of pan evenly.

Place the pan over medium low heat and allow to cook for 10 minutes until kebab has hardened. Now using a spatula or a knife and cut the flattened keban into stripes as you see in the photos.

Flip over kebab strips, also add tomatoes and chunks of bell pepper to the pan. Pour 4 tbsp water to the pan. Cover the pan with a lid and cook for 7-8 more minutes until other side of kebabs cooked and lightly roast tomatoes and bell peppers.

Serve the kebabs with rice and Shirazi salad.

Rice Balls

A lovely finger food with rice. These tasty rice balls with different tastes will bring lots of fun and flavour to your table.


Especially these days with World cup games, preparing quick foods, sit and watch the football.



  • 4 ½ cups sticky rice or sushi rice, cooked
  • 4 spring onions or small bunch of chives
  • 2 small carrots
  • 2 tarragons
  • 3 dill stems, chopped
  • 3 tbsp tuna
  • 3 tbsp minced beef
  • 1 tsp turmeric
  • ½ tsp chilli flakes
  • salt and pepper to taste
  • sesame oil or olive oil




Cut carrots into long thin stripes and then cut them into tiny cubes. Finely chop spring onions /chives and tarragon leaves.


Heat the oil ( Sesame or Olive) in a pan and fry carrots until soft then add minced beef, season with salt and pepper. Fry until meat is brown.

In a bowl with 1 ½ cups of cooked rice, add fried meat mixture and 2tbsp of chopped spring onions .Mix together well and set it aside.


Squeeze out all of the oil from tuna and in a separate plate with 1 ½ cups of cooked rice, add dry tuna and chopped tarragon leaves. Season with salt and pepper. Mix well together and set aside.


In another plate mix rice with chopped dill, spring onions, chilli flakes, salt and turmeric.

Now, wet your hand and shape small portions of rice into balls.

Once all is done, serve them.







Lahmacun Pizza

Yesterday I posted and shared my pide pizza recipe and today I am going to present Lahmacun pizza. A pizza that is incredibly flavoured and satisfying. It is a a kind of very thin flatbread topped with minced beef or lamb.


This pizza is popular in Turkey, Armenia and Lebenan. That’s why it is known as Turkish or Armenian pizza too.

Lahmacun pizza might be cooked in a pan or on a griddle or in the oven. I personally cook in a pan.


Lahmacun means meat and dough as you spread meat mixture on a flattened dough and cook it.


This pizza after cooking is crunchy and crispy but after few hours flat bread turn into soft and lovely bread and still is fantastic and you can roll it and eat it with salad, lime, onion, and doogh ( a Persian beverage combination of yogurt with water).


Ingredients for dough

  • 3 cups all purpose flour
  • 1 cup warm water
  • 2 tsp salt
  • 2 tsp sugar
  • 2 tsp dry yeast


Ingredients for meat sauce

  • 300 g minced beef or lamb
  • 1 large onion
  • 2 small red- yellow bell peppers
  • 2 large tomatoes
  • 5-6 brunches of coriander
  • 1 tbsp tomato paste
  • 1 tsp salt
  • 2 tsp paprika
  • 1 tsp chilli flakes
  • 2 tbsp vegetable oil



In a bowl mix ground meat with all spices, oil and tomato paste. Set aside. Place remains of ingredients and oil in a food processor or blender and make a smooth mixture. Add it to the meat and mix it very well.


In a bowl mix flour with salt. Make a hole in the centre of bowl and add yeast and sugar and warm water. Knead the dough until all ingredients come together. . cover the dough and keep it in a warm corner of the kitchen for 1-2 hours until it rise.


Next, on the floured board, place the dough and knead it again for few minutes. Then, cut the dough into 8 pieces.

Take one of dough pieces, using a rolling pin, and roll the dough to a medium size circle. Transfer it to a pan and spread some of meat mixture top of the dough.

Cover the pot with a lid and let to cook for about 10 minutes. Once it is cooked remove it to a plate.


Pide Pizza

Pide is delicious Turkish speciality, a kind of Turkish flatbread with a boat shape. Pide dough is very simple and easy to make. . Pide is one of the popular and comfort foods in Turkey. Pide can be made with different variety of toppings such as ground meat, cheese, sausages, eggs, …



Ingredients for the dough

  • 300 g strong white flour
  • 14 g dried yeast
  • 1 cup warm water
  • 3 tbsp olive oil
  • 1 tsp sugar
  • 1 tsp salt


For topping

  • 200 g grounded beef
  • 1 grated onion
  • Salt and pepper to taste
  • Paprika
  • 1 tbsp tomato paste
  • Shredded cheddar cheese
  • Half of sliced onion
  • Handful black olives, pitted



In a bowl with yeast and sugar, pour in ½ cup of warm water. Stir and set aside until yeast to be activated with bubbly foam on the surface ( it will take about 10 minutes).

In a large bowl, mix flour with salt. Pour in the olive oil and yeast mixture. Mix together. Then slowly pour water. Combine with your hand until all ingredients come together and you have a dough.


Place the dough on a floured surface and knead the dough for 3-5 minutes, until you reach to a soft and smooth dough. Drop some olive oil into the bowl and place the dough in it. Cover the bowl with kitchen towel and leave for 2 hours to rise and double in size.

Meanwhile, we prepare our filling. In a bowl we mix meat with onion, tomato paste and season with salt and pepper and paprika. Heat the oil in the pan. Add meat mixture and fry it. One of the topping is ready.


Pre heat the oven to 220 C.

Once the dough is risen. Place it on a floured board and cut the dough into 2 equal pieces. Using a rolling pin and roll the dough balls into oval shapes or boat shape. Dough should be very thin.

Now brush surface of the oval shaped dough with butter. Spread the meat mixture evenly over the dough, leaving about 2 cm at the edges with no filling. Fold in the sides and squeeze the oval dough each end to make it pointy.


Spread cheddar cheese, onions and black olives over the other dough too. Brush the edges of dough with melted butter. Bake for 15-20 minutes until the pides are golden brown and cripsy at the edges.

Once the pide is ready,  brush the melted butter all over the cooked pide edges  again and cut into slices and bon apetite.








Chicago Deep Dish Pizza

For the first time when I saw deep dish pizza , I just amazed, it was totally different from regular pizza. What a super delicious and I just love it.


Oh by the way I know deep dish pizza has different dough that is combination of all purpose flour with cornmeal and I cooked with this dough, but then I told myself lets try with regular pizza dough, and honestly I did not find any difference and as you see I made my today deep dish pizza with regular pizza dough and was absolutely wonderful.



  •  pizza dough
  • Cast iron or round shape cake tin

For topping

  • 350 g minced beef
  • 1 large onion, finely chopped
  • 200 g shredded mozzarella or cheddar cheese
  • 1 ½ cups chopped tomatoes
  • 1 tbsp dried oregano
  • 3 tbsp grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil


For topping, heat the oil in a skillet and fry minced meat, s for 10 minutes or until turn into brown, season it with pinch of salt. In separate pan, heat the oil, add chopped onion and fry for 5 minutes to become soft. Add chopped tomatoes and fry for few minutes, season with salt and pepper, remove from the heat and add dried oregano.

Put the dough on a floured work surface, using a rolling pin and give it a round shape.

Brush the cake tin or cast iron with oil. Plop the dough down into the cake tin and push it up around the sides as you see in the photos.

Layer half of the shredded cheese all over the bottom of the pizza. Top it with fried minced, again another layer of cheese, then ladle the tomato sauce top of the cheese.

Sprinkle Parmesan cheese all over the top of tomato sauce. At the end pinch the crust , brush edges of the pizza with olive oil.

Place it in the oven and cook for 25-30 minutes or until is beautifully golden brown on the crust. Remove from the oven , let to rest for 5 minutes and then serve it with salad.




pizza with minced beef and egg

This is my home made pizza from scratch.

500 g plain flour
7 g dried yeast
1 tbs salt
1 tsp sugar
250 ml warm milk
50 ml olive oil

Ingredients for topping
500 g minced beef
1 large onion
1/2 of red/green bell peppers
3 large tomatoes
2 tbsp tomato paste
1 bunch of parsley
2 tsp salt
numbers of eggs
2 tsp paprika powder
1 tsp cumin
1/2 tsp hot chilli pepper, finely chopped

Pour all ingredients for dough in a food processor, and mix together for 5 minutes. Put 1 tbsp. semolina or bread crumbs in bottom a big bowl, place dough in the bowl. Sprinkle a little bit flour top of dough. Cover the bowl with a towel to prove for 2 hours.


meanwhile, prepare topping for pizza. Chop tomatoes, bell peppers,parsley, and onion. Put them in a food processor and puree it. Remove it to a bowl, add spices, tomato paste and minced beef. combine together very well.



Preheat the oven on 220 C.
Once dough is ready, put some flour on the board, and place dough on it. Press the dough with your hand to take out air. Then, cut dough into small portions.

Heat the oil in a pan and saute meat mixture for 10 minutes.Set aside.
Take one of dough portions, and open it with rolling pin. Open a thin dough in a medium round shape. Take 2 tbsp of meat mixture and cover top of the dough. crack an egg over the the dough inside the oven and allow to cook for 7-10 minutes.

Repeat process with remains of ingredients and dough. Once pizzas are ready garnish with onion rings and chopped parsley.
These pizzas are just delicious.

Pan Fried Sumac Kebab

Sumac is one of essential spices in Middle East cooking. It is lovely spice with purple colour and lemony taste. In Iranian cuisine, Sumac is used in stews, Kebabs and rice for the flavour.

200 g ground beef/lamb meat
2 medium onions
2 potatoes/ cooked
2 tomatoes
2 Tbsp flour
1 Tbsp ground sumac
½ tsp turmeric
Salt- chilli powder to taste


Grate the onions. Squeeze out of the juice. Add ground meat , flour, sumac and all spices to the grated onions and combine all together very well.

Heat the oil in a pan, take a portion of meat mixture and give a shape, place in the pan alongside with tomatoes. Cook until kebabs are brown and cooked.
These lovely pan fried kebabs could be serves with rice or bread, cooked potatoes and fried tomatoes.



Rozina’s Persian Calzone Pizza

Calzone pizza is very easy to make it. Usually need pizza dough and sometimes tortilla bread. In this recipe I have made my version of Persian calzone pizza. It was so good and everyone enjoyed it. I hope you also like this recipe and try it.


Calzone pizza


200 g minced beef

80 g shredded orange cheddar cheese

2 slices of tortilla bread

1 large onion, peeled and thinly sliced

1tbsp tomato paste

2 tbsp black olives, pitted

1tsp Persian saffron water

½ tsp turmeric

sea salt and chilli powder to taste





Heat the oil in a saucepan and fry onion until soft. Then add minced beef, tomato paste, and season with salt, turmeric and chilli. Gently stir all ingredients and allow to fry until meat is brown. Transfer from the heat and stir in saffron water.


Pour some oil in a pan, place one of tortilla bread in the pan, spread half of shredded cheddar cheese top of bread and place black olives and meat mixture. Then at the end add remains of shredded cheese and cover it with second tortilla bread.


Now, fry the calzone in the pan, and after 2 minutes flip over and fry other side of bread.Once both sides fried, transfer it to a plate and cut it into slices and serve it with salad and fried potatoes.


Pan Fried Minced Kebab

Kebab is Persian favourite. They are cooked on a grill, on a skewer over a fire or  in a frying pan and all of them  are delicious. Here is very easy peasy way to prepare your lovely pan fried kebab.



  • 200 g minced beef or lamb
  • 2 large tomatoes, grated
  • 1 onion, finely grated
  • 1 small bell pepper, finely chopped
  • 1 tsp sumac powder
  • Salt and pepper to taste
  • Olive oil


How to make it?????

It’s very easy and quick to make this lovely minced kebab. In a bowl with grated onions, add minced meat, grated tomatoes, chopped bell pepper and seasoning with salt and pepper.


When all ingredients thoroughly combined heat oil in a frying pan, and place meat mixture in the pan and fry until brown.



Now it’s time for sumac. Drop some olive oil on a roll bread and sprinkle sumac powder on it. Now spread fried kebab on the bread and garnish with fresh mint and slices of radish and onion.




Cabbage Dish

This is an easy quick cabbage dish,  full of flavour and colour.



Half of a small white cabbage, lengthwise sliced

1 large onion, thinly and lengthwise sliced

300g minced beef or lamb

Small bunch of coriander, chopped

2 cloves garlic, chopped

2 medium tomatoes, diced

2 tbsp tomato paste

3tbsp rice, cooked

½ tsp turmeric

salt and chilli flakes to taste

Olive oil



Heat the oil in a saucepan and sauté onions until soft. Add minced meat and fry it until brown. Then add chopped garlic, tomatoes, turmeric, tomato paste, cooked rice, chopped coriander, season with salt and chilli, stir well and allow to cook for 10 minutes. Set aside.

Separately, sauté chopped cabbage for 5 minutes. Pour ½ cup water, season with salt and chilli, allow to cook the cabbage until soft.

Serve cabbage on a plate and top it with meat mixture.
