Potato-Beetroot Salad

This potato beetroot salad is a light, fresh, colourful and delicious salad.

Ingredients

  • 5 potatoes
  • 1 large beetroot, cooked and grated
  • ½ lemon or lime
  • ½ cup yogurt
  • 2 tbsp mayonnaise
  • 2 tbsp cooked carrots
  • 2 tbsp cooked corn
  • 2 tbsp cooked green peas
  • 2 tbsp pickled cucumber, finely chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

How to make it??

Place the potatoes in a pot. Add enough cold water to cover the top of potatoes. Add 1 tsp salt to the water. Cook the potatoes until tender. Drain the potatoes. skin off potatoes, and mash with potato masher.

Squeeze grated beetroot to get rid of juice. Add beetroot, lemon juice, salt, pepper and olive oil, to the mashed potatoes and mix all ingredients together. Taste again, if needs add more salt and pepper.

Take an orange size of potato mixture and shape it like a bowl ( as you see in the photos). Once all potato bowls are done, place them in a plate and set aside.

Mix yogurt and mayo in a bowl. Add cooked carrots, corn, green peas and pickled cucumber. Season with salt and pepper. Combine all together.

 

Pour 1 tbps of yogurt mixture inside each potato bowl and serve it.

Jelly Eggs

These beautiful and colourful jellied eggs are tasty and you would love to make and eat them , it is just fun.

Jelly eggs
Ingredients
6 eggs
1 ½ cups hot vegetable broth
4 Tbsp cooked corn
4 Tbsp cooked green peas
15 g gelatine
2 small sausage links, finely chopped
1 small bell pepper finely cut
Handful parsley leaves
Baking soda
Salt and pepper to taste

Preparation
Make an medium hole in each egg. Pour out eggs and empty egg shells. In a big bowl with water and baking soda, put egg shells in it to sterilise for 15 minutes. Then, take out eggs shells and wash with tap water, let to dry.


For filling egg shells, first put parsley leave into the egg shell. Then 1 Tsp chopped bell pepper, then chopped sausages, corn and finally green peas. Pour 1 ½ cups of hot vegetable broth into gelatin, add pinch of salt and pepper. Mix well until gelatin dissolved.


Using a strainer to separate solid from a liquid. Fill each egg shell. Place them in the fridge for 4-5 hours. Then peel the eggs and VOILA , you have these wonderful jelly eggs

Leek and Green Peas Soup

My family and I are big fan of soup and that’s why every other day i make different soup. Today i made a wonderful, green and satisfying soup with leek, green peas and mint.This is a light green soup. Combination of leek with green peas, fresh mint leaves, lemon, … It’s fresh and tasty, with a satisfying texture.
Very easy to follow the recipe.

Leek and green peas soup
Ingredients
250g green peas
2 leeks
2 vegetable stock cubes
150g cream cheese
Handful fresh mint leaves
1/2 lemon juice
Salt- red/black pepper
Olive oil

Thinly slice the leeks and cut into the small rings. Place them in a bowl with cold water and allow the leeks stay in the water for few minutes. Drain and rinse it. Heat the oil in a pan and add the leeks. Let it to cook for about 10 minutes. Then, add green peas and allow to cook for 5 minutes more.

Pour 500 ml cold water in a pot. Bring it to boil. Add vegetable stock cubes to the pan. Simmer for few minutes. Add cooked ingredients to the pot. Cover and simmer for 10 minutes.

Meanwhile, add lemon juice, salt and pepper to the cream cheese. Mix it very well. Add it to the soup. Then add mint leaves.. let it to cook for 10 minutes. Remove from the heat. Taste and adjust it.

blend your soup with blender or food processor. Serve it in a bowl and garnish it with mint leaves and cream cheese.

Tuna Fish Patties

This recipe is combination of tuna fish with potato, fresh tarragon and seasoned with aromatic spices. Freshly chopped tarragon gives very nice flavor to the fish cakes.

Tuna fish patties

Ingredients

140 g canned tuna fish

1 cooked potato

Small bunch of fresh tarragon

1 ½ tbsp corn flour

50 g cooked green peas

1 egg

½ tsp cumin powder

½ tsp coriander powder

½ tsp ginger powder

¼ tsp turmeric powder

Salt and chili flakes to taste

Bread crumbs

Olive oil

Method

Drain the liquid from tuna can. Mash cooked potato. In a bowl, mix together all of the spices, chopped tarragon, green peas, egg yolk, corn flour, tuna fish and mashed potato.

Divide the mixture into small parts and form into a ball and then flatten into a patty. In a small ball, whisk white egg. First dip each patty into the white egg and then cover with bread crumbs.

Heat the olive oil in a pan, gently place patties in the pan and cook each side for 3-4 minutes until nicely brown.

Serve fish patties with sweet chilli sauce or tartar sauce.

Chicken noodle soup

This  is a rich, hearty and spicy chicken soup that would make your cold winter evening very warm 🙂

Ingredients

2 skinless and boneless chicken breast or thighs

1 sheet of egg noodles

1 small red bell pepper

Small piece of fresh ginger root, chopped lengthwise

2 garlic cloves, finely chopped

1 bunch scallions, sliced green part and white part separately

1 cup coconut milk powder

1 tbsp light soy sauce

50g green peas

3 cups water

Salt and pepper to taste

Method

Heat the oil in a saucepan, add diced chicken to the pan and fry for 5 minutes and stirring until golden. Add ginger, garlic, bell pepper and white part of spring onions to the chicken and fry for 2-3 minutes.

Stir in water, coconut milk powder, soy sauce, noodles in a pot and season with salt -pepper, bring it to a boil. Then add fried ingredients, green peas and green part of spring onions and cook for 10 minutes. Stirring occasionally.

سوپ مرغ با رشته فرنگی

این سوپ خیلی لذیذ – تند ( ولی نه اونقدر که اشکتون دربیاد) و دلچسبه و جون میده برای یک غروب سرد زمستونی 🙂

مواد لازم

یک دسته رشته فرنگی

دو تکه ران یا سینه ی مرغ خرد شده بدون پوست و استخوان باشه

یک عدد فلفل دلمه کوچک قرمز رنگ

یک تکه ی کوچک زنجبیل تازه ی که به صورت طولی خرد شده

دو حبه سیر خرد شده

یک دسته پیازچه که قسمت سفید و سبز رنگش جداگانه خرد شده باشن

یک پیمانه پودر نارگیل

یک ق غ سس سویا

پنجاه گرم نخود سبز

سه پیمانه آب

نمک و فلفل به میزان لازم

طرز پخت

روغن رو در تابه گرم می‌کنیم و گوشت مرغ رو برای 5 دقیقه سرخ می‌کنیم تا طلایی رنگ بشه و در ضمن سرخ کردن هم میزنیم تا نسوزه. وقتی گوشت مرغ سرخ شد – زنجبیلسیر – فلفل دلمه و قسمت سفید رنگ پیازچه رو به مرغ اضافه می‌کنیم و برای دو سه دقیقه همه ی مواد رو با هم تفت می دیم.

در یک قابلمه آب می‌ریزیم وپودر نارگیلسویا سس و رشته فرنگی و نمک و فلفل اضافه می کنیم. می‌گذاریم آب بجوش بیاد . وقتی شروع به جوشیدن کرد موادسرخ شده ی بالا – نخود سبز و قسمت سبز پیازچه رو هم به مواد داخل قابلمه اضافه می‌کنیم و می‌گذاریم برای 10 دقیقه و روی شعله ی کم بپزه.

گاه گاهی هم سوپ رو هم می زنیم. همین سوپ حاضره خیلی سریع پخته میشه و واقعن لذیذه .

Vermicelli Pasta Nests With Vegetables

This dish is an easy meal and simple to make. If you love pasta, You will amaze how much it is delicious.

Ingredients
5 vermicelli pasta nests
2 medium carrots, peeled and finely cut
2 small red-orange bell peppers, finely diced
2 medium sausages, finely chopped
½ cup green peas
½ Tsp turmeric
1 Tbsp curry powder
1 Tsp cumin
1 Tsp coriander
Salt – chilli powder to taste
Oil

Preparation

Heat the oil in a skillet, saute chopped carrots for 5 minutes. Add chopped sausages, spices and green peas. Fry 10 minutes more.
In a pot with water, add 1 Tsp salt, 1 Tbsp oil. Bring the water to a boil, pour vermicelli pasta nests inside the boiling water and cook for 5 minutes. Drain it.
Stir in vegetables mixture well and serve it.
