Christmas fruit cake

This is my Christmas fruit cake, a dark, super tasty and full of flavour.

Ingredients

  • 150g plain flour
  • 75g ground almond
  • 350g prunes and glacé cherries
  • 230g raisins
  • 35g candied orange peel
  • 175ml honey
  • 125ml spiced rum
  • 175g unsalted butter
  • 175g muscovado sugar
  • 1 orange juice and zest
  • 1 lemon zest
  • 3 eggs
  • 2tbsp cocoa powder
  • ½ tsp cinnamon
  • ½ tsp clove
  • ½ tsp nutmeg
  • ½ tsp baking powdered
  • ½ tsp baking soda

How to make it?????

Preheat the oven to 150C degree. Grease and line the cake tin with baking paper. Make the parchment paper larger than tin to protect the top of the cake from burning.

In a pot add dried fruits, spiced rum, butter, sugar, spices, lemon and orange zest, juice, honey, and coca powder.

Heat the mixture and bring it to a boil. Stirring the mixture and let to simmer for 10 minutes. Remove from the heat and allow to cool down.

Mix flour, ground almond, baking powder and baking soda together. Crack the eggs In a bowl and whisk them. Now add beaten eggs and flour mixture to the fruit mixture. Mix well until all ingredients combined.

Next, pour the cake batter into the lined cake tin.With a wooden or silicon spatula press the batter down.

Place the tin into the oven and bake it for about 2 hours or until top of the cake is hard and firm. You can test the cake with a skewer. If it comes out clean, it means cake is ready. Yayyyyyyyyyyyyy

When the cake is done, allow to cool for an hour in the tin and then remove it from the tin and peel the paper off. Before wrapping the cake, you need to feed the cake.

Feeding the cake puts back the moisture you lost during the baking and build the flavour. So, You can use a syringe and inject the liquid to the cake or use a chopstick, make few holes on top of cake to help liquid flow to the cake. You can feed the cake with 2-3 tbsp alcohol every two weeks until Christmas. But if you do not drink alcohol, there are non-alcohol options for feeding the cake too.

You can use cold earl grey tea or spicy tea or orange juice. Therefore, add 3 tbsp orange juice on top of the cake 3 or 4 times over the next couple of weeks. Then, Wrap the cake well in the grease proof or parchment paper and store it in the dry and cold area.

For decoration of the cake, there are loads of ideas:

– sprinkle icing sugar and top the cake with glace cherries or chocolates

brush over the hole cake with apricot jam and decorate, dust with icing sugar

or roll out with marzipan.

Christmas fruit cake

Ingredients

Kimchi

I love any kind of salads and pickles. Kimchi is one of those pickles that I enjoy a lot. Kimchi in Korean cuisine is a traditional dish. There are many kinds of kimchi recipes made from salted vegetables. I have attached some photos some of different kimchi.

Kimchi was traditionally made in large amounts and then stored in ceramic jars to keep cool. It’s delicious, hot and easy to make.

As you see in the following photos, kimchi is very red due to chilli powder. In some areas of Korea, kimchi is made with less salt and chilli so it is brighter colour and in some area is made with more salt and more chilli powder, therefore, it is deep red colour and very hot. So using chilli powder would be based on your taste, if you enjoy hot dish, so add as much as you like, but in my recipe I made a mild taste kimchi.

This is traditional style kimchi.If you have never made kimchi , this is good chance to learn how to make traditional and easy kimchi.

Ingredients

  • 2 spring onions, finely chopped
  • 1 carrot, cut into matchsticks
  • 1 cup radishes( white or red), cut into thin pieces

How to make it??

Slice the cabbage into short strips. In a large bowl with water add add cabbage and 6 tbsp salt. Mix and set aside for an hour.

Meanwhile, make porridge for the kimchi 🙂 at this point, add 1 cup water, and rice flour in a pot and mix it well. Once started to boiling( it takes about 9 minutes). Remove from the heat. Now you have a thin soupy porridge. Let it cool down.

Now, rinse the cabbage under cold running water and drain well thoroughly.

For making the kimchi paste, put garlic, ginger, and onion in the blender and mince them.

Add minced mixture, fish sauce, sugar, black pepper and chilli flakes to the rice flour porridge and mix.

Then add all chopped vegetables to the paste and mix well. Kimchi paste is ready. Now mix the paste with the cabbage leaves.

Store it in a jar or container in the fridge for 2 days until kimchi starts fermenting. At this point kimchi smell sour cabbage and top or surface of the kimchi is bubbling.

You might serve kimchi with rice or soup.

Vegetarian kebab

This is one of the  tastiest vegetarian kebabs which is made with bread and vegetabls. It is simple but super tasty and easy to make it, with crispy texture, golden outside and fulllllllllllll of flavour. You may serve it with yogurt, sweet chilli sauce, any kind of chutney or ketchup.

Ingredients

  • 5 slices of fresh white or brown bread
  • 1 cup chickpeas, cooked
  • 1 onion
  • 1 lemon juice
  • Handful fresh mint leaves
  • Handful fresh coriander leaves
  • 1-2 cloves of garlic
  • Small piece of fresh ginger
  • 3 tbsp yogurt
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp coriander powder
  • ½ tsp curry powder
  • 1 tsp Olive oil
  • salt and pepper to taste

How to make it???

Put slices of bread into a food processor or blender and blend it until crush and look like soft bread crumbs and set aside.

Put cooked chickpeas into a mixing bowl. Add onion, garlic, ginger, mint and coriander leaves, lemon juice, yogurt and oil to the chickpeas. Blend until become purée. Add puree mixture and all spices to the bread crumbs, mix until combine well.

Grease your hand, take a small portion of mixture and roll it like a hot dog, however you can give ball shape or cutlet/ round burger shape too. Once all kebabs are done, you may push the wooden sticks into the kebab . it ‘s just optional.

Now heat the oil or butter in a saucepan. Place kebabs into the pan and fry for 3-4 minutes, until golden crispy.

Serve it with your favourite sauce.

Sour cherry beef stew ( Khoresht-e Aalbalu) with spiced rice

This is a delicious / aromatic sweet stew due to combination of cherry stew with spiced rice. In Iran, best time to get fresh sour cherry is summer time. Most of housewives make jam and marmalade or simply freeze it, and once, want to make sour cherry stew, they use those. Anyway, I have also used sour cherry jam for my stew. You can use meat balls, chicken , beef or lamb for this stew. All are delicious.

Ingredients
150g rice
200g diced beef
1 medium onion/ peeled and chopped finely
200g sour cherry jam
2 tbs saffron water
1 tbs rice spice( It is a combination of numbers of spices that in Persian cuisine we use it as rice spice ( advieh poloei) and these spices are: cardamon, cumin, cinnamon, ginger, rose petals, nutmeg, pepper and clove.

Preparation
Place a pot on the heat, add water . Bring it to boil. Add diced meat, chopped onion and oil. Allow to cook until it is tender. Once meat is cooked, add sour cherry jam, stir it very well. Let it to cook for more 10 minutes on a low heat.

Boil your rice for 10 minutes, drain and rinse it under running water. Bring rice back into the pot, and then add one layer of rice and one layer of spices, repeat it until all rice is done. Cover the pot with a lid and let it to cook on a low heat for 20 minutes.Once you serve the rice, take 2tbs of cooked rice and mix it with saffron water and garnish top of your rice with it.

Serve sour cherry stew with spicy rice.

Chicken Noodle Soup

This is a rich, hearty and spicy chicken soup that would make your cold winter evening very warm 🙂

Ingredients

2 skinless and boneless chicken breast or thighs

1 sheet of egg noodles

1 small red bell pepper

Small piece of fresh ginger root, chopped lengthwise

2 garlic cloves, finely chopped

1 bunch scallions, sliced green part and white part separately

1 cup coconut milk powder

1 tbsp light soy sauce

50g green peas

3 cups water

Salt and pepper to taste

Method

Heat the oil in a saucepan, add diced chicken to the pan and fry for 5 minutes and stirring until golden. Add ginger, garlic, bell pepper and white part of spring onions to the chicken and fry for 2-3 minutes.

Stir in water, coconut milk powder, soy sauce, noodles in a pot and season with salt -pepper, bring it to a boil. Then add fried ingredients, green peas and green part of spring onions and cook for 10 minutes. Stirring occasionally.

Ginger Biscuits (Christmas Cookies)

Every year I bake ginger biscuits for family and extra for sharing with friends and neighbours. They are lovely with a cup of tea or coffee.

Ingredients

  • 600g plain flour
  • 150g self-raising flour
  • 100g butter
  • 250ml golden syrup
  • 250g brown sugar
  • 2 eggs
  • 1 orange
  • 1/2 tbs cinnamon powder
  • 1tbsp ginger powder
  • 3/4 tsp cloves powder
  • 1/2 tsp nutmeg
  • 1tsp baking powder

Method

Add brown sugar, butter and golden syrup into a pot. Grate orange zest and add it to the pot as well. Put the pot on a medium heat and Stirring until sugar has melted. Then, remove from the heat and let it cool down.

Beat the eggs and stir into the cold sugar mixture.

Mix flour, baking powder, mixed spices and ground ginger in a large bowl. Stir in sugar mixture. Combine all ingredients until you have a soft dough.

Knead the dough few minutes by hand. Then divide it into two balls. Wrap them in cling film. Let the dough rest overnight in the fridge.

Preheat oven to 180 C.

Now, Roll one of dough balls with a rolling pin on lightly floured work surface.

Cut into ginger bread men, stars, Christmas tree, moon shapes from the dough. Place them on the baking tray with baking paper.

Bake for 10 minutes, until edges of cookies begin to brown. Cool on baking tray for 2 minutes then remove to wire racks. Decorate cookies as desired.

Herbed Rice with Potatoes

This herbed rice is incredibly delicious. It is seasoned with aromatic spices, seeds, herbs and tossed in butter.

Ingredients

  • 2 cups rice
  • 150 g baby potatoes, cooked and peeled off
  • Mix herbs such as: mint, parsley, coriander, spring onions and dill, finely chopped
  • 1 Tsp fennel seeds
  • ½ Tsp ginger paste
  • ½ Tsp garlic paste
  • 2 Tsp pomegranate molasses OR ½ cup pomegranate seeds
  • ¼ Tsp chilli flake
  • Salt to taste
  • Butter

Preparation

In a pan, melt the butter, ad fennel seeds, pomegranate seeds or molasses, ginger/garlic paste and chilli flakes. Fry for 1 minute, set aside.

Herbed rice with potatoes

 

Ingredients

Tuna Fish Patties

This recipe is combination of tuna fish with potato, fresh tarragon and seasoned with aromatic spices. Freshly chopped tarragon gives very nice flavor to the fish cakes.

Tuna fish patties

Ingredients

140 g canned tuna fish

1 cooked potato

Small bunch of fresh tarragon

1 ½ tbsp corn flour

50 g cooked green peas

1 egg

½ tsp cumin powder

½ tsp coriander powder

½ tsp ginger powder

¼ tsp turmeric powder

Salt and chili flakes to taste

Bread crumbs

Olive oil

Method

Drain the liquid from tuna can. Mash cooked potato. In a bowl, mix together all of the spices, chopped tarragon, green peas, egg yolk, corn flour, tuna fish and mashed potato.

Divide the mixture into small parts and form into a ball and then flatten into a patty. In a small ball, whisk white egg. First dip each patty into the white egg and then cover with bread crumbs.

Heat the olive oil in a pan, gently place patties in the pan and cook each side for 3-4 minutes until nicely brown.

Serve fish patties with sweet chilli sauce or tartar sauce.

سوپ مرغ با رشته فرنگی

این سوپ خیلی لذیذ – تند ( ولی نه اونقدر که اشکتون دربیاد) و دلچسبه و جون میده برای یک غروب سرد زمستونی 🙂

مواد لازم

یک دسته رشته فرنگی

دو تکه ران یا سینه ی مرغ خرد شده بدون پوست و استخوان باشه

یک عدد فلفل دلمه کوچک قرمز رنگ

یک تکه ی کوچک زنجبیل تازه ی که به صورت طولی خرد شده

دو حبه سیر خرد شده

یک دسته پیازچه که قسمت سفید و سبز رنگش جداگانه خرد شده باشن

یک پیمانه پودر نارگیل

یک ق غ سس سویا

پنجاه گرم نخود سبز

سه پیمانه آب

نمک و فلفل به میزان لازم

طرز پخت

روغن رو در تابه گرم می‌کنیم و گوشت مرغ رو برای 5 دقیقه سرخ می‌کنیم تا طلایی رنگ بشه و در ضمن سرخ کردن هم میزنیم تا نسوزه. وقتی گوشت مرغ سرخ شد – زنجبیلسیر – فلفل دلمه و قسمت سفید رنگ پیازچه رو به مرغ اضافه می‌کنیم و برای دو سه دقیقه همه ی مواد رو با هم تفت می دیم.

در یک قابلمه آب می‌ریزیم وپودر نارگیلسویا سس و رشته فرنگی و نمک و فلفل اضافه می کنیم. می‌گذاریم آب بجوش بیاد . وقتی شروع به جوشیدن کرد موادسرخ شده ی بالا – نخود سبز و قسمت سبز پیازچه رو هم به مواد داخل قابلمه اضافه می‌کنیم و می‌گذاریم برای 10 دقیقه و روی شعله ی کم بپزه.

گاه گاهی هم سوپ رو هم می زنیم. همین سوپ حاضره خیلی سریع پخته میشه و واقعن لذیذه .
