Monte Cristo sandwich

What a great sandwich. You can make it savoury by adding Mayonnaise and mustard sauce or sweet by adding jam, it is just your choice and both are equally tasty.


Traditionally the whole sandwich is dipped in the beaten egg and then pan fried or deep fried.



  • 6 slices of toasted bread
  • 8 sliced cheese
  • 8 slices of ham or turkey
  • Strawberry jam
  • 4 eggs, beaten
  • Salt and pepper to taste
  • Bread crumbs
  • Vegetable oil or butter

How to make it

Cut the crusts off the bread. Spread jam on the bread. Put one slice of cheese on it, then put 2 sliced ham and another slice of cheese. Spread jam on the bread and place on top of the cheese. Spread jam on the bread again and repeat the process.

Crack the eggs into a bowl. Season with salt and pepper. Beat the eggs.

Dip the sandwich thoroughly in the beaten eggs. Coat with the bread crumbs.

Heat the oil or melt the butter in a pan. Fry the sandwich on both sides and four corners.

That’s it our tasty sandwich is ready.

Tahchin shevid- baghali (Persian dill & broad beans rice cake

Traditionally this rice dish is called Tahchin or upside down rice also known as Persian baked rice cake. Tahchin is an Iranian divine rice dish with beautiful presentation. It’s made of layered meat and rice. It may not look like much from the outside but the combination of cooked meat, yogurt, egg and aromatic spices with rice create a crunchy outer crust and soft inside rice. We Iranians love our Tahchin.


There are different versions of Tahchin made with red meat, chicken, and vegetables. My today’s Tahchin is made with combination of dill or (ُُ Shevid  in Persian) and broad beans or (Baghali  in Persian) with chicken .



  • 3 cups Iranian rice ( due to it’s amazing aroma and taste)

  • 400 g chicken fillet, cooked and diced

  • 2 cups Broad beans or Fava beans, cooked

  • 1 cup dried dill

  • 500 g Greek yogurt

  • 3 eggs

  • 2 onions, finely chopped

  • 1 tsp cardamom

  • 3 tbsp Persian saffron water

  • 1 tsp cinnamon

  • 1 tbsp dried rose petals

  • Salt and pepper to taste

  • Vegetable oil


How to make it

Yogurt is important ingredient in making Tahchin. We need a sort of thick yogurt, therefore, I have used a traditional way that my mother used to apply and make a thick creamy yogurt by Pouring regular yogurt into a double layer of cheesecloth or kitchen cloth. Tied up the cloth.. Hang it over a bowl and leave to drain overnight. ( as you will see in the following photos).. You would see the liquid left in the bowl. Resulting is a thick yogurt.  Wash the rice. Soak it in the salted water for 1 hour.

Meanwhile, fry the onion until slightly soft. Add diced chicken meat. Stir in salt- pepper, cardamom, cinnamon, dried rose petal, dried dill and Fava beans ( just keep 1 tbsp of Fava bean for later) for 2-3 minutes.

Now, In a bowl, mix yogurt with eggs, 2 tbsp of Persian saffron water, pinch of salt and pepper. Whisk it until combine well and set aside.

Pour water in a large pot and bring it to a boil. Drain salted water of rice and add the rice to the boiling water. Cook for 10 minutes.

Using a colander and drain the rice.Add half of the drained rice and half of the chicken mixture into the yogurt mixture bowl and gently blend together.

Pour some oil into a non stick pot or pan, spread 1 tbsp of plain fava bean on the bottom of the pot. Spread rice mixture into the pot ( as you see in the photos) and flatten with wooden spoon or spatula.

Then, layer second half of the chicken mixture around the edges of the surface. Finally, layer with second half of the white rice and cover the entire surface. Flatten the top with the back of a large spatula or spoon while pressing down( as you see in the photo). Pour 1 tbsp of saffron water over the rice.

Place the pot on medium heat for 5 minutes. Then lower the heat cover the pot with a lid and cook it for 45-60 minutes until the crust forms.

Once rice is done, let it cool for few minutes. Place a serving platter on top of the pot and gently turn the pot over, Voila you have a wonderful rice cake shape dish. Sooooooooo delish.




Fruit cake

This is light fruit cake with candied orange, coloured cherries and raisins. A cake for four season. I love this beautiful cake , full of colours and flavour.



  • 1 cup all purpose flour
  • 2 eggs
  • 1 cup white sugar
  • ½ cup melted butter
  • 1 tbsp baking powder
  • 1 tbsp vanilla extract
  • 5 tbsp milk
  • ½ cup candied orange
  • ½ cup candied cherry
  • 1/3 cup raisins


Preheat the oven to 180C.

In a bowl mix two eggs with sugar. Whisk for 5 minutes. Then add melted butter, baking powder and vanilla extract and whisk for 2 minutes. Now, add flour to the mixture in two steps. Keep stirring. Add milk and mix. Now you have a smooth batter. Finally add candied fruits and raisins. Mix all together.

Grease the baking pan with oil and line it with parchment paper. Spoon the mixture into the pan. Put the pan into the oven and bake for 60-70 minutes or until a toothpick inserted into the centre comes out clean.

When cake is done , remove from the oven and let to cool in the pan.


Scrambled eggs

A delicious and popular dish in all over the world. It is made from beaten white and yolk eggs.

  •  2 eggs
  • 20 g butter
  • 1/2 tbsp. crème fraiche
  • Salt – Pepper to taste

Crack the eggs in a pot, add butter. Don’t add slat as it will cause watery eggs. Place the pot over low heat and start to stir slowly.

Keep stirring until eggs aقe runny. Remove from the heat, add cream fraiche, still keep stirring.

Place it back on the heat and stir for 1 minute more. Now, you could add salt and pepper.

And serve it with toasted bread and fried cherry tomatoes.

Sheermal bread ( Naan sheermal)

Sheermal/shirmal bread naan  is a traditional mildly sweet flatbread in Iran. Sheer means milk in Persian language,and because the dough is kneaded with milk instead of water , it’s called sheermal, means a bread made with milk.


Sheermal bread is popular in Iran, India, Pakistan and Bangladesh.

Semnan سمنان is located in South of foothills of Alborz Mountains. Semnan is one of historical and ancient cities of Iran, which was an important city throughout the era of the Persian Achaemenid Empire ( 550-330BC).



Anyway, if you travel to ancient city of Semnan and towns around Semnan, among the souvenirs of this city, such as pistachio, walnuts, local breads, silk made cloth, halva, candy sugar and fruit leather, Sheermal bread naan is very popular between tourists, that is baked in Seman city for over 100 years.

Sheermal bread naan is one of bread for month of Ramadan.



  • 3 cups all purpose flour
  • 1 cup warm milk
  • ½ cup sugar
  • 100 g melted butter
  • 1 large egg, beaten
  • 1 egg yolk, beaten as egg wash
  • 1 tbsp dried yeast
  • ½ tsp salt
  • Sesame seeds (optional)



In a bowl, mix sugar, yeast, and milk warm together.


In other bowl mix flour with salt and then pour milk mixture, beaten egg, and melted butter in it. Combine together. Oil your hand and knead the dough with your hand for 6-7 minutes until is smooth and no longer sticky.

Cover the dough, and let to rest until double in size. You can leave the dough in a corner of your kitchen in room temperature , to rise but it will take long time dough double in size but if preheat the oven for few minutes, and then turn off the oven and by this way you can create a warm environment to speed the dough to proof and rising up.

Preheat  the oven to 160C.Line your baking tray with parchment paper and once dough is ready, place it on the parchment paper. Sprinkle some flour top of it and deflate the dough.

Cover the dough and let to rest for another 20 minutes. Then give favourite decoration or design to the bread.

Egg wash top of the dough and garnish with sesame seeds. Sprinkle pinch of cinnamon powder on the dough. Transfer the dough into the oven and bake for 20-25 minutes until golden brown.



Green beans frittata ( Tabrizi Kookoo loobia sabz)

Kookoo lobia sabz is a traditional classic dish in Tabriz an ancient city in NW of Iran. This dish is served in especial occasions and for Iftar in month of Ramadan.

Tabrizi green beans is absolutely delicious, full of flavour and colour.


Kookoo ( kuku) in Iranian cuisine, applies to an eggy dish or an egg-based dish. Kookoo or frittata might be meatless that would be a vegetarian dish and sometimes is made with meat.

Kookoo is a mixture of whipped eggs with different ingredients.

Green beans is called loobia sabz in Farsi language. My today recipe is meatless kookoo loobia sabz but you can add 200g minced beef to the ingredients if you wish.



  • 350 g baby green beans, finely diced and boiled
  • 100 g carrots, finely diced and boiled
  • 100 g potatoes, finely diced and fried
  • 1 large onion, finely chopped and fried
  • 5 eggs
  • 2 tbsp chopped walnuts
  • 1 tbsp flour
  • ½ tsp baking powder
  • 1 tbsp saffron water
  • 1 tbsp milk
  • 1 tsp turmeric
  • Salt and pepper to taste
  • Vegetable oil


Crack the eggs into a large bowl. Add milk, chopped walnuts, flour, baking powder, saffron water, turmeric and season with salt and pepper. Whisk it well until all ingredients combine together. Saffron smell spread all over the kitchen and it’s lovely.

Next, add fried and boiled vegetables to the egg mixture. Mix all together.

Heat the oil in a deep pan, pour the mixture in the pan. Firmly press the ingredients with the back of the spoon to the down. Cover the pan with a lid and allow to cook on side ( about 10-15 minutes), then flip over to cook other side.

Serve it in a platter garnish with Zereshk (Barberries) and cut it into pieces.




Hi everyone, I am so excited about this recipe. So I cooked omelette rice yesterday. It was just lovely, gorgeous and delicious rice dish , full of colour , taste , vegetables.


I used chicken meat but if you wish you might be use sausages. You will be surprise how much is easy and simple to make this dish and in other hand how much is tastyyyyyyyyyyyyyy.




  • 2 cups cooked rice
  • 2 boneless, skinless chicken breast or thighs
  • 2 eggs
  • 2 tbsp ketchup
  • 2-3 slices of cheddar cheese
  • 1 large onion
  • 2 small carrots
  • 1 celery
  • 3 mushrooms
  • 2 cloves of garlic
  • 2 small bell peppers
  • 3 tbsp milk
  • Salt and chilli flakes to taste
  • Oil or butter




Cut all vegetables into small pieces. Cut chicken meat into pieces. Heat the oil in a pan, add chicken meat season with salt. Fry until cooked and changed the colour.

Heat the oil in a pan again and add all chopped vegetables and season with salt and chilli flakes. Sauté until softened.


Once vegetables are done, add fried meat and ketchup. Mix well together. Next, add rice to the cooked vegetables and combine together.


Now place some of rice mixture in a bowl, add pieces of cheddar cheese and top it with more rice. Whisk eggs in a bowl with pinch of salt and 3 tbsp milk .Heat the oil in a pan, pour the egg into the pan and tilte to cover the bottom of pan. Allow to cook the omelette.

Put a plate on top of the rice bowl and put the omelette top of the rice. It ‘s done , ready .






Poppy seeds cake with lemon curd

A lovely classic poppy seeds cake, is filled with lemon curd and whipping cream would be a perfect dessert.



  • 1 ¾ cups all purpose flour
  • 3 tbsp poppy seeds
  • ¼ tsp salt
  • ¼ tsp baking soda
  • 1 ½ tsp baking powder
  • lemon zest of 2 lemons
  • ¾ cup sugar
  • 1/3 cup butter, softened
  • 3 eggs
  • 1 tsp vanilla extract
  • 1/3 cup oil
  • ½ cup buttermilk
  • Lemon curd
  • whipping cream



Preheat the oven to 180C.

In a bowl mix flour with baking powder, baking soda, salt, poppy seeds and lemon zest and set aside.

In other bowl, combine butter with sugar. Break the egg one at a time and add to the mixture. After eggs, add vanilla extract and vegetable oil and mix well. Add some of flour then add butter milk and again add remains of flour.

Grease the baking pan with butter. Pour the flour mixture into the pan and bake for 50 minutes.

Once cake is ready, let it cool. Cut it in half. Spread the lemon curd over each half. Then spread the cream over the lemon curd. Put one half over the other one. Cover surface of the cake with cream. Sprinkle poppy seeds and serve it.





Fried Sausage flowers with eggs

These lovely flowers made with fried sausages and eggs. Very easy and cute.



  • Sausages or hot dog
  • eggs
  • Fresh mint or dill leaves
  • Salt and pepper to taste
  • Butter or Oil



Cut the sausage in half lengthwise. Slice halfway through sausages. Form the sausage into a circle and secure the ends with cocktail sticks. Put the sausage in the frying pan. Add the egg to the centre of the sausage, season with salt and pepper and fry it.


Almond chocolate muffins

These almond muffins are easy to make , very rich and keeps well for next few days.


3 eggs
300g marzipan ( %25)
85g butter
60g cocoa powder
Strawberry jam

First of all preheat oven to 165 C. Put the marzipan and cocoa powder in a big bowl and mix it with your hand. Then, Transfer marzipan mixture to the bowl of food processor.

Crack the eggs and add eggs to the mixture one by one and slowly. Mix it after each egg addition. Melt butter and add it to the bowl. Grease inside the cup cakes tray. Put 2 tbs of cake mixture inside each cup. Bake it in the oven for about 12 minutes.
Dusting your cakes with icing sugar.
