My Deadly Chocolate Cake

If you are chocolate cake lover, anything you want from a chocolate cake is right here: Most dangerous, most wanted, most delicious cake. The texture is soft, gooey, moist and rich.

I am sharing my chocolate cake recipe :). You can make just one layer cake or bake layer cakes.

Ingredients

  • 80g plain flour

  • 150g white sugar

  • 50g coca powder

  • 60g melted buttermilk

  • ¼ tsp baking powdered

  • ½ tsp baking soda

  • 1 whole egg

  • 125ml hot milk

  • 2tbsp coffee

  • pinch of salt

  • 200g dark chocolate

  • 150 cream cheese

  • 100g white sugar

  • 50ml milk

  • 1tbsp coca powdered

  • Bourbon biscuit

How to make it??

Preheat the oven to 180C degrees. In a large bowl mix together all dry ingredients. Add melted butter or oil and combine it.

Then add 2tbsp coffee and hot milk to the mixture and mix until come together. Maybe you ask why hot milk? Well, for dissolving of coca powder. Now add egg and stir in until combined.

Line the two pans with flour and then line the bottom of pans with parchment paper. Divide batter among the two pans. Bake for 25 minutes until a toothpick inserted into the centre comes out clean.

Cool on wire racks for 5 minutes and then turn them over and let to cool completely.

Now we make chocolate sauce: In a pot with milk, add sugar and allow to dissolve. Let to boil for 5 minutes on a low heat. After 5 minutes, add coca powder, mix together. Remove from the heat, transfer to a bowl and set aside.

Now we need to prepare chocolate ganache. Melt the chocolate and add soft cheese. Mix until well blended.

Poke some holes with the toothpick in one of the cakes and spoon over that chocolate sauce and add some of chocolate ganache and spread all over the cake.

Place the second cake and spread remaining of the chocolate ganache on the came. Top it with some crushed cookies and chopped strawberries.

Mimosa Salad

Mimosa salad, is a traditional, scrumptious and satisfying layered Russian salad. Mimosa got it’s name from Mimosa Spring flower.

This tasty salad is popular in Russia and has a wide variety of recipes. For instance, typically it is made with canned fish but in some other recipes there is cooked chicken instead. Or in some recipes there is mixture of Mayonnaise and cheese. In this salad all ingredients are grated finely and layered.

It’s really tasty salad especially with fresh dill leaves for garnishing, you will experience a piece of heaven in your plate.

Ingredients

  • one canned tuna in oil, drained
  • 2 medium potatoes, boiled, peeled and grated
  • 2 medium carrots, boiled, peeled and grated
  • 1 small onion, peeled and finely chopped
  • 4 eggs, hard boiled, peeled, whites and yolks separated after boiling
  • Mayonnaise
  • Fresh dill leaves for garnish
  • Salt and pepper to taste

How to make it??

Drain the fish and mash it with a fork. Prepare your serving plate or dish. In my serving plate I am using a Springform pan that will give a nice round shape to my salad but this is optional and you can just layering ingredients on a plate in any shape you wish.

Arrange grated potatoes evenly on the bottom of plate and press down with a spoon. Season with pinch of salt and pepper, then on top of potatoes, goes some Mayonnaise.

On top of potatoes, make fish layer then cover this layer with chopped onion and then spread Mayonnaise.

Then arrange grated carrots, season with salt and pepper and spread Mayonnaise. Now, cover top of carrots with egg whites, season with salt and pepper and , spread Mayonnaise.

For last layer, arrange  egg yolks, season with salt and pepper. Garnish with dill leaves or any other fresh green herbs to make it similar to Mimosa flower.

You can keep this salad in the fridge for few days. As i mentioned above, you can use chicken instead of canned fish, or cooked rice instead of potatoes.

Peach cookies

These tempting, pretty peach shape cookies are just beauties and suitable for any occasion, for 4 seasons, and resemble to the real peaches.

Ingredients

  • 210g plain flour
  • ½ tsp baking powder
  • 80g unsalted butter
  • 55g plain yogurt
  • 2 egg yolks
  • pinch of salt
  • 50g white sugar
  • 1 tsp vanilla extract

 

Ingredients for filling

  • 1/3 cup Nutella or
  • 1/3 peach jam

Ingredients for colouring

  • 3 tbsp white sugar
  • Yellow and red food colouring
  • Two small bowls with water

How to make

Preheat the oven to 170C.

Line the baking tray with parchment paper. Place egg yolks,vanilla extract, salt and sugar in a mixing bowl and beat for 3-4 minutes. Add yogurt and beat until creamy. Mix the flour with baking powder and sift it.

Add butter to the flour and combine and add it to the batter. Knead it for 3-4 minutes until all comes together and non stick to your hand.

Divide the pastry into small amount (about 15g). Take one the dough and roll it into ball. Continue rolling all of the batter into balls. Place them on the tray. Put your finger on each ball and and gently press down each ball.

Bake them for 15 minutes. Once they are baked, allow them to cool.

Now, use a sharp knife and core out the centre of cookie from the bottom of each cookie and remove the cookie centre( as you see in the photos).

Break up cookies pieces and mix them with nutella or peach jam. Carefully fill cavity of each cookie and place tow cookies together.

Mix few drops of red colour in one bowl and few drops of yellow colour in other bowl. Dip cookie in yellow/red food colouring and roll them in the sugar. Allow the cookies to set and serve it.

Baghala Ghatogh (Persian Fava Beans Stew)

Baghala ghatogh  is a northern Iranian speciality dish in Gilan and Mazandaran provinces. Traditionally it made beans, dill, poached eggs and spiced with turmeric.
For making this dish needs a type of beans called ‘Pache baghali’ but out of Iran it’s difficult to fine it, so ‘Fava beans or broad beans’ are good substitute.

Baghal 
ghatogh, is a vegetarian dish. Northern part of Iran is called ‘ Shomal=North’. So northern part of Iran is located near Caspian sea. It’s a beautiful green land with famous Persian rice and tea fields and forests.
North of Iran is one of favourite destinations for summer time with amazing nature, clean weather far from air pollution and loads of beautiful villas for rent. People are so friendly and welcoming with tasty meals such as baghal 
ghatogh.

 

Ingredients

  • 250 g Fava beans (broad beans), shelled and peeled 
  • 50 g fresh or dried dill, finely chopped
  • 30 g butter
  • 3 cloves garlic, grated
  • 2-3 whole eggs
  • 1 tsp turmeric
  • Salt and pepper to taste
  • Oil

Preparation
Melt the butter in a skillet over medium heat. Sauté grated garlic for 1 minute. Add fava beans and sauté five minutes.
Add chopped dill, turmeric, salt and pepper. Fry 2-3 minutes. 


Add 2 cups of water, bring it to a boil. Reduce heat, cover the pot with a lid and simmer for 20 minutes. In last 10 minutes, crack the eggs into the stew and cook until eggs are cooked.
Baghala ghatogh can be served either with steamed rice or  flat bread. Serve one whole poached egg on top of each serving dish.

Persian petit meatballs ( Kofteh rizeh Yazdi)

In Iranian cooking ‘ Kofteh’ or ‘ Kofta’ is a kind of meat ball. Kofteh means pounded meat in Persian language. Meat ball or Kofta is made from ground meat such as: mutton, beef, lamb and chicken, along with aromatic fresh or dried herbs, nuts, fruits and eggs.

Kofteh is usually shaped into balls and round but sometimes kofteh is in cigar-shape too. Kofteh , kupta, kofta, kufta …. are in different sizes from giant ones to medium and petit kofteh.

Some of cities in Iran are well known for their Kofta recipes. Tabriz an ancient city in NW of Iran is known for having Giant Kofteh Tabrizi recipe, that is one of the most famous and popular kofteh in Iran. This dish includes a giant meat ball made from meat, rice, yellow split peas, aromatic herbs and spices.

Kofteh Isphahani, kofteh Shirazi, Kofteh Kermanshahi, Kofteh Yazdi, are other type of Persian meatballs from different areas in Iran.

Kofteh sometimes is stuffed with nuts, eggs or fruits and sometimes are normal kofta.

Petit kofteh might be served with Persian flat bread or with rice, pickles, yogurt and salad.

Today I made Yazdi Kofteh rizeh ( petit kofteh), that takes its name after the Yazd an ancient city in central Iran. Yazd is an ancient city in Iran and is recognised as a world Heritage site by UNESCO. Yazd is well  known for its special architecture that its nickname is ‘ wind catcher’ or ‘ Badgir’. Also this city is well known for having its Zoroastrian ancient fire temple, Qantas (under ground water channels to transport water from water well to surface for irrigation and drinking) and Yakhchal ( yakh meaning ice and chaal meaning pit) is an ancient type of evaporative cooler, it used to create ice in the winter and store it in the summer time.

Ingredients

350g minced meat ( half beef/ half lamb)

1 onion, grated

Handful cherry tomatoes

1 egg

3 tbsp freshly chopped chives or coriander

2 tbsp gram flour

½ tsp turmeric

Salt and chilli pepper to taste

Olive oil

 

Method

Peel the onion and grate it. Extract juice from grated onion . Add all ingredients to grated onion. Mix well until combine together.

Shape the meat mixture into little balls, the size of a walnut. Heat the oil in a frying pan over medium heat. Add meat balls . Cook until brown. Then add ¼ cup water and cherry tomatoes to the meat balls and let the cook for 10 minutes with the lid partially covering the pan.

I served meat balls with steamed rice-potato but as I mentioned it might be served with flat bread and salad, yogurt and pickles on the side.

Cheese omelette

This is my cheese omelette. Combination or eggs with orange cheddar cheese.

Ingredients

2 eggs

30g orange cheddar cheese, grated

Butter

Salt and pepper to taste

Method

Beat the eggs with salt and pepper in a bowl. Melt the butter in a pan. Pour in the eggs and cook for a minute until omelette lightly set. Put grated cheese in the centre of omelette and cook until cheese has melted. Then fold the omelette in half and turn the heat off.

Tomato omelette

This is my favourite omelette with tomatoes . I have made them with Persian tomato because taste of these tomatoes are very good and give lovely flavour and colour to any dish.

3 large tomatoes, cut into halves

Method

Melt the butter in a pan. Add diced tomatoes and fry for 2-3 minutes. Beat the eggs in a bowl. Season with salt and pepper. Crack the eggs in a bowl. Season with salt and pepper. Beat the eggs, an add it to the fried tomato and beat it. Add it to the fried tomatoes and cook it.

Persian style chicken omelette with fried onion

Omelette is a dish made from beaten eggs, duck, goose, quail , ostrich egg…fried in butter or oil. Sometimes omelette is plain and sometimes you can add other ingredients and give more flavour.

I love any dish made from eggs : Boiled, fried, scrambled and poached eggs all are not only fantastic and tasty also full of goodness.

Ingredients
3 eggs
One skinless, boneless  chicken breast, cooked and shredded
One large onion, chopped
Salt, chilli powder to taste
Olive oil
Slices of Persian flat bread or tortilla bread

Method
Peel and finely chop onion. Melt the butter or heat the oil in a pan and fry onion until get gold colour. Put it aside. Crack the eggs into a bowl, add a pinch of salt and chilli powder and beat well with a fork. Add shredded chicken and beaten eggs to the pan with fried onion and let it cook and serve it with flat bread.

Japanese Salmon rice with fresh vegetables

You can serve this meal as a main course or side dish.

Ingredients

  • 200 g salmon fish, finely cut into small pieces
  • 200 g rice
  • 2 eggs
  • 1 tbsp soy sauce
  • 1 carrot, grated
  • 3 tbsp green peas
  • 2 spring onions, finely chopped
  • Salt and oil

Method
Place rice in a rice cooker, add oil, water, soy sauce and cook it. While rice is cooking, Crack the eggs in a bowl, whisk, add pinch of salt and cook.

Then, fry grated carrot, and add chopped green onions and green peas, let to cook until softened carrot and onions softened. Heat the oil in a pan and fry chopped fish.

Add all cooked ingredients to fried fish and mix all together. At the end, everything goes in a bowl with cooked rice and combine together and serve it. Garnish with green onions.

Cutlet or Persian Meat Patty with Yellow Split Peas

Cutlet is famous Persian meat patty. You can make it with different meat such as ( beef – lamb- veal). Persian cutlet or meat patty has a simple recipe but it is incredibly tasty and delicious. It looks like burger BUT it’s combination of meat  either with potatoes chickpeas or yellow split peas.

It can be served either with Persian Naan bread ( Lavash) or with steamed rice. Both are equally yummy. Cutlet would be double tasty day after cooking ,because flavour develops . It might be served warm or cold at home or at picnic. I just love cutlet.

Ingredients

200 g ground beef

100 g split yellow peas, cooked and mashed

1 medium onion, peeled and grated

1 egg

½ tsp of cumin

½ tsp turmeric

Bread crumbs or plain flour

Salt- pepper to taste

Preparation

Grate onion and set aside. Mash cooked yellow split peas.

In a large bowl, add ground beef, grated onion, egg, and , spices . Combine together, add mashed yellow split peas  and knead very well.

Take one spoonful of mixture in your hand palm and form round shape or flat shape. Scatter bread crumbs or flour in a plate or tray. After shaping cutlet, coat both side of cutlet with flour / bread crumbs.

In a frying pan on a medium heat, add oil let it to get hot. Place cutelet in the pan. Fry each side for about 6-7 minutes or until edges of meat is brown. Then, flip them over and let cook other side as well.

Serve it with rice, salad and pickle.
