Iranian pan kebab ( kebab tabei )

Hello lovely Ladies and gentlemen. For today I cooked Persian pan kebab that is known as kebab tabei or kebab deegi. These kebab tabei are hearty, simple, delicious meal and easy peasy to make them. So just cook it, serve it, sit and watch your favourite TV program. These kebabs might be served with rice and salad or with Lavash or tortilla bread.

Kebab in the Iranian cuisine has a special place. There are variety of kebabs, such as: ground meat kebab: kebab koobideh, sour kebab : kebab torsh, beef tenderloin : kebab barg. These kebabs made either with minced or diced beef, lamb, chicken or fish.

There are different kinds of kebab in the Persian cuisine and kebab tabei or pan fried kebab is one of the most delicious and brilliant meals. Kebab tabei is a juicy, moist and flavourful kebabs in a frying pan. Making this kind of kebab at home is very easy, and no need to a grill. All you need is minced beef /lamb and onion.

Ingredients

  • 500g beef/lamb mince
  • 1 large onion, grated
  • large tomatoes or cherry tomatoes
  • 1 green or yellow bell pepper
  • 1 tsp paprika
  • Salt and pepper to taste
  • Vegetable oil

Instructions

Squeeze grated onion to get rid of onion juice. In a bowl add minced meat, onion, paprika, season with salt and pepper and mix all ingredients together until well combined. Set aside for 15 minutes.

Add vegetable oil to a non stick pan. Spread the meat mixture in the pan and press the meat with your hand to cover the base of pan evenly.

Place the pan over medium low heat and allow to cook for 10 minutes until kebab has hardened. Now using a spatula or a knife and cut the flattened keban into stripes as you see in the photos.

Flip over kebab strips, also add tomatoes and chunks of bell pepper to the pan. Pour 4 tbsp water to the pan. Cover the pan with a lid and cook for 7-8 more minutes until other side of kebabs cooked and lightly roast tomatoes and bell peppers.

Serve the kebabs with rice and Shirazi salad.

Tuna salad

A healthy, delicious , light and filling meal for lunch or dinner. Perfect in sandwich or wrap. Very easy to prepare and it’s ready in minutes.

Ingredients

  • 1 tin tuna, drained
  • 1 small bell pepper, chopped
  • 1/3 cup pitted black olives and chopped
  • 1/3 cup Mayonnaise
  • 2 hard boiled eggs
  • 1tsp paprika
  • Salt, pepper to taste

Method

Break up tuna with a fork. In a bowl, add the tuna, olives, bell peppers, eggs and mayonnaise. Season with salt, pepper and paprika. Stir together . Refrigerate until serving.

pizza with minced beef and egg

This is my home made pizza from scratch.

Ingredients
500 g plain flour
7 g dried yeast
1 tbs salt
1 tsp sugar
250 ml warm milk
50 ml olive oil

Ingredients for topping
500 g minced beef
1 large onion
1/2 of red/green bell peppers
3 large tomatoes
2 tbsp tomato paste
1 bunch of parsley
2 tsp salt
numbers of eggs
2 tsp paprika powder
1 tsp cumin
1/2 tsp hot chilli pepper, finely chopped

Preparation
Pour all ingredients for dough in a food processor, and mix together for 5 minutes. Put 1 tbsp. semolina or bread crumbs in bottom a big bowl, place dough in the bowl. Sprinkle a little bit flour top of dough. Cover the bowl with a towel to prove for 2 hours.

meanwhile, prepare topping for pizza. Chop tomatoes, bell peppers,parsley, and onion. Put them in a food processor and puree it. Remove it to a bowl, add spices, tomato paste and minced beef. combine together very well.

Preheat the oven on 220 C.
Once dough is ready, put some flour on the board, and place dough on it. Press the dough with your hand to take out air. Then, cut dough into small portions.

Heat the oil in a pan and saute meat mixture for 10 minutes.Set aside.
Take one of dough portions, and open it with rolling pin. Open a thin dough in a medium round shape. Take 2 tbsp of meat mixture and cover top of the dough. crack an egg over the meat.place the dough inside the oven and allow to cook for 7-10 minutes.


Repeat process with remains of ingredients and dough. Once pizzas are ready garnish with onion rings and chopped parsley.
These pizzas are just delicious.

Chicken Noodle Soup

This is a rich, hearty and spicy chicken soup that would make your cold winter evening very warm 🙂

Ingredients

2 skinless and boneless chicken breast or thighs

1 sheet of egg noodles

1 small red bell pepper

Small piece of fresh ginger root, chopped lengthwise

2 garlic cloves, finely chopped

1 bunch scallions, sliced green part and white part separately

1 cup coconut milk powder

1 tbsp light soy sauce

50g green peas

3 cups water

Salt and pepper to taste

Method

Heat the oil in a saucepan, add diced chicken to the pan and fry for 5 minutes and stirring until golden. Add ginger, garlic, bell pepper and white part of spring onions to the chicken and fry for 2-3 minutes.

Stir in water, coconut milk powder, soy sauce, noodles in a pot and season with salt -pepper, bring it to a boil. Then add fried ingredients, green peas and green part of spring onions and cook for 10 minutes. Stirring occasionally.

Choban Salati ( Shepherd’s Salad)

A delightful Turkish salad. Very simple, healthy and delicious with very beautiful dressing consists lemon juice, salt and olive oil.

Ingredients

1 Cucumber
1 Tomato
1 Onion
1 Bell pepper
Small bunch of Parsley leaves
1 lime or lemon juice
Olive oil
Salt and pepper to taste

Preparation
Finely chop cucumber, tomato, onion, parsley and bell pepper. Add olive oil, lemon juice, season with salt and pepper and gently mix together.

Rice Salad

A quick – easy made salad with lovely taste of sesame oil.

Ingredients
1 cup cooked rice
1 Tsp soy sauce
1 Tsp sesame oil
Half a cucumber
10 Radish
1 small yellow bell pepper
Small bunch parsley
Salt- red chilli powder to taste

Method
Finely chop cucumber, parsley, bell pepper and radish. In a bowl with chopped vegetables, add cooked rice, sesame oil, and soy sauce. Season with salt and pepper. Gently mix together.

Bread pizza

This recipe is so awesome. First of all you do not need prepare pizza dough and secondly is just pretty easy and quick to make it.

Ingredients
4 slices of bread
100 g chorizo sausages cut into small pieces
100 g Mozzarella cheese, cut into small pieces
50 g cheddar cheese, shredded
½ onion, finely chopped
1 small bell pepper, finely diced
1 clove of garlic, grated
2 Tbsp. tomato paste
2 Tbsp. Olive oil
1 tsp dried oregano
Flakes chilli, as much as you like
Pinch of salt and sugar

Method
Preheat the oven at 180C.
In a bowl with tomato paste and olive oil, add dried oregano, salt- sugar and flakes chilli. Mix together well and set aside.


Arrange slices of bread on the baking tray. Apply tomato sauce on the breads. Put chopped sausages top of the sauce, then chopped bell pepper and onion. Spread shredded cheddar cheese all over the slices of breads and finally, put pieces of Mozzarella cheese on the top.
Place the tray in the oven and bake for 15 minutes.

پیتزا با نان تست
دستور تهیه ی پیتزا با نان تست فوق العاده هست. اول اینکه نیازی به تهیه خمیر پیتزا نیست و دوم اینکه خیلی فوری فوتی آماده میشه .

مواد لازم

چهار تکه نان تست

صد گرم سوسیس خرد شده

صد گرم مازارلای خرد شده

پنجاه گرم پنیر چدار رنده شده

نصف پیاز خرد شده

یک عدد فلفل دلمه ی کوچک خرد شده

یک حبه سیر رنده شده

دو ق غ رب گوجه فرنگی

دو ق غ روغن زیتون

یک ق چ پودر پونه ی خشک یا اورگانو

نمک و فلفل به میزان لازم

یک چهارم ق چ شکر

طرز تهیه
اجاق را از قبل روی حرارت 180 درجه ی سانتیگراد گرم کنید.
در یک پیاله رب گوجه – روغن- پودر اورگانو- سیر رنده شده- نمک- فلفل و شکر را با هم مخلوط کنید. نان های تست را داخل سینی فر بچینید و روی آنها را با سس گوجه بپوشانید. سپس سوسیس خرد شده روی نان قرار دهید و بعد فلفل و پیاز خردشده و پنیر رنده شده چدار و در انتها پنیر مازارلا را.
سینی نان ها را داخل فر گذاشته و به مدت 15 دقیقه بپزید.
پیتزاها آماده ی خوردن هستند.

Pan Fried Kebab With Aubergine Sauce ( Kabab Tabei Ba Sauce Bademjan)

There is variety of kebab in Iran along with different method of cooking ( grilled or pan-fried). I just would tell, alllllllllllllllllllllllll those beautiful kebabs are just heavenly delish. So, if you love kebab, and yet do not want a grill one, this pan kebab is tasty and quick to make.

Ingredients for kebab

200 g ground beef
2 medium onions, finely diced
4 medium tomatoes, diced
1 bell pepper, cut into strips
1 Tsp turmeric
Salt- chili powder to taste
Oil or butter
1 baguette bread

 

 

Ingredients for sauce

1 eggplant, peeled and cut into half
2 clove garlic, grated
5 Tbsp plain yogurt
1 Tbsp olive oil
Salt to taste
½ lime or lemon juice

Preparation
Heat the oil in a frying pan. Saute the diced onions for 5 minutes. Add bell peppers and all spices. Let to fry for few minutes. Add ground beef, stir gently. Once the meat is browned, add diced tomatoes and allow cooking just for 2-3 minutes. (no need to cook for long time).Taste and season if needed. Set aside.


Peel of aubergine. Cut into half. Grill in the oven or on the stove and grill until rich brown. Cut it into small pieces. In a bowl with lemon juice and grated garlic, add chopped eggplant, olive oil and salt. Using a blender and make it puree and smooth. This sauce has a Smokey flavour and give wonderful taste to the kebab.


Spread aubergine sauce all over the bread. Flatten a rich portion of kebab top of the sauce and serve it with fresh herbs such as: mint leaves, chives, radish, spring onions.

Coloured rice

If you want to have a rice festival in your plate, here it is how to dye your steamed rice. There are different methods to do this:

– you can use fresh herbs, vegetables or fruits such as: red cabbage, beetroot, spinach..

– you can use dried spices such as: saffron, turmeric, curry..

– or you can apply food colours.

All will work very well and result would be amazing. This dyed rice sometimes is not only fascinating by kids but also for adults would be attractive and beautiful.

Preparation

Once rice is cooked, divide it into 3 bowls. Then squeeze food colouring into the rice. Mix it well. You can combine different rice colours together and made a rainbow rice dish or you may serve each rice colour separately.

 

 برنج رنگی

اگر مایلید جشنواره پلو /کته را در بشقاب خودتون داشته باشید می تونید برنج خود را رنگ کنید و برای این کار باید به این ترتیب عمل کرد.

می تونید از سبزیجات و میوه‌هایی مثل  اسفناجکلم قرمز یا لبو استفاده کنید.

می تونید از ادویه هایی مثل زعفران – زردچوبه – کاری مصرف کنید

و یا می تونید از رنگ‌های آماده مثل رنگ سبز – قرمزنارنجی – آبی – صورتی که برای رنگ آمیزی غذا و کیک هست بکار ببرید.

همه ی موارد بالا نتایج فوق‌العاده دارن و حتمن خوشحالتون می کنن. این برنج های رنگی گاهی اوقات نه تنها برای کودکان

جالب هستن بلکه گاهی برای افراد بزرگسال هم زیبا و جذاب هست.

طرز تهیه

برنج را می پزیم و در سه ظرف جدا تقسیم می کنیم. از رنگ‌های خوراکی مورد نظرمون چند قطره روی هر کدام از برنجها می‌ریزیم .

برنج را با رنگ ترکیب می‌کنیم تا خوب رنگ مورد نظر رو بخودش بگیره.

زمان سرو می تونیم برنج های رنگی رو با هم مخلوط کنیم و برنج رنگین کمانی داشته باشیم و یا جداگانه هر رنگ برنج رو سرو کنیم.

رنگ غذاها اصلن تغییری در مزه ی کته یا پلو ایجاد نمی کنن و فقط باعث زیبایی بیشتر برنج شما خواهند شد.

سوپ مرغ با رشته فرنگی

این سوپ خیلی لذیذ – تند ( ولی نه اونقدر که اشکتون دربیاد) و دلچسبه و جون میده برای یک غروب سرد زمستونی 🙂

مواد لازم

یک دسته رشته فرنگی

دو تکه ران یا سینه ی مرغ خرد شده بدون پوست و استخوان باشه

یک عدد فلفل دلمه کوچک قرمز رنگ

یک تکه ی کوچک زنجبیل تازه ی که به صورت طولی خرد شده

دو حبه سیر خرد شده

یک دسته پیازچه که قسمت سفید و سبز رنگش جداگانه خرد شده باشن

یک پیمانه پودر نارگیل

یک ق غ سس سویا

پنجاه گرم نخود سبز

سه پیمانه آب

نمک و فلفل به میزان لازم

طرز پخت

روغن رو در تابه گرم می‌کنیم و گوشت مرغ رو برای 5 دقیقه سرخ می‌کنیم تا طلایی رنگ بشه و در ضمن سرخ کردن هم میزنیم تا نسوزه. وقتی گوشت مرغ سرخ شد – زنجبیلسیر – فلفل دلمه و قسمت سفید رنگ پیازچه رو به مرغ اضافه می‌کنیم و برای دو سه دقیقه همه ی مواد رو با هم تفت می دیم.

در یک قابلمه آب می‌ریزیم وپودر نارگیلسویا سس و رشته فرنگی و نمک و فلفل اضافه می کنیم. می‌گذاریم آب بجوش بیاد . وقتی شروع به جوشیدن کرد موادسرخ شده ی بالا – نخود سبز و قسمت سبز پیازچه رو هم به مواد داخل قابلمه اضافه می‌کنیم و می‌گذاریم برای 10 دقیقه و روی شعله ی کم بپزه.

گاه گاهی هم سوپ رو هم می زنیم. همین سوپ حاضره خیلی سریع پخته میشه و واقعن لذیذه .
