Sabzi polow Ba Mahi (Persian Herb Rice With Fish) سبزی پلو ماهی

Sabzi in Persian language refers to green herbs and polow means rice. Sabzi polow is a Persian rice dish with freshly  chopped herbs such as dill, parsley, coriander, .. . that is served with  crispy fried fish (mahi) or Persian herbs frittata (kookoo sabzi).

Herbed rice with fish or kookoo sabzi is one of the two main dishes that are  traditionally served for Persian new year (Nowruz). The other main dish for new year is called : Reshteh polow or rice with toasted noodles.

Ingredients for the rice

  • 300 g rice
  • 150 g mixed herbs ( parsley, coriander, dill, spring onions), finely chopped and washed
  • 1 Tbsp ground cinnamon
  • 3 cloves of garlic , peeled and diced
  • Salt to taste
  • Thin Lavash bread or Tortilla bread for tahdig
  • Vegetable oil and butter

Ingredients for fish

  • 200 g haddock fish
  • 4 Tbsp plain flour
  • ½ Tsp turmeric
  • 1 egg
  • 1 Tbsp saffron water
  • 4 Tbsp bread crumbs
  • Salt- chilli powder to taste
  • 1 lemon or lime
  • Vegetable oil

Preparation of the rice
Wash the rice. In a bowl with salted water add rice and let the rice soak for about 1 hour.
Bring a pot of water to a boil. Drain the soaked rice and stir it into the boiling water. Allow to cook the rice for 7 minutes. Add chopped herbs and let to cook for 3 minutes more. Then drain the rice and discarding the water.

Pour oil over the bottom of the pot . Place a sheet of thin bread on the bottom of pot. Spread half of the rice over the bread, add diced garlic and some ground cinnamon.

Then repeat with remaining of the rice. Finally place small pieces of butter top of the rice. Cover the pot with a lid and set over high heat for 2-3 minutes and then reduce the heat and  simmer for 30 minutes.

Preparation of the fish

In a plate mix flour with turmeric, salt and chilli powder. Crack the egg in a bowl, add salt and chilli powder and beat together.

Coat both sides of the fish with flour, dip in the  beaten egg and coat with bread crumb. Fry in the pan.Once the rice is ready let rest for 5 minutes and serve it with fish and sabzi koko ( herbed frittata).


Dish is ready. So so sooooo  delicious , healthy and aromatic.

Rice with Toasted Noodles (Reshteh Polow رشته پلو)

There are two main dishes  that are traditionally served in the evening of the Persian new year (Nowruz). One of them is Reshteh polow. This dish  is a combination of rice with a special kind of  smoked noodles. In Persian language noodles are called ‘ Reshteh’ and rice dish is called ‘Polow’. Therefore, name of this rice dish is ‘ Reshteh polow رشته پلو’

It is believed that by eating Reshte Polow on the  new year, you can grab hold of your destiny for the coming year.

This dish  comes  to our table in the winter time too,  with fried raisins, and dates. In some recipes this rice dish serves  with fried minced beef or smoked fish as well.

Reshteh polow
Ingredients

  • 200 gr rice
  • 100 gr toasted noodles ( reshteh polowei)
  • 1 medium onion
  • 1 cup of raisins
  •  1 tsp orange skin, finely chopped
  • 1 cup of dates
  • 2 tbsp of saffron water
  • Olive oil
  • Salt to taste
  • one slice  of flat bread

preparation
Peel off onion. Chop it finely. Saute it in a pan for 5 minutes over a medium heat. Add raisins and orange skin to onion and cook it for 2-3 minutes more. Set it aside. Remove pits from dates. Mash them with hand or put them into a microwave and add 1 tbs water and microwave for 20 seconds. Then, makes date pastes as size of small balls. Saute in the pan for 2-3 minutes. Set aside.

Place the rice in a bowl and wash the rice with cold water and drain it. Then fill the bowl with 4 cups of cold water, add 3 tbs of salt and rice. Let it soak for an hour. Bring water to boil in a pot. Drain soaked rice and pour it into the pot. Gently stirring . Let it to cook for about 5 minutes. Cut noodles into small pieces and add toasted noodles to the boiled rice and let it to cook for 5 minutes more.

Then, pour boiled rice mixture into a strainer and rinse under running water.
Put the pot on the heat. Add 3 tbs of Olive oil to the pot. Cover bottom of pot with a sheet of flat bread. Place the rice-noodle top of the bread. Cover the pot with a lid. Allow to cook for 20 minutes over how heat.

Once rice is ready, place 2-3 tbs of cooked rice in a bowl and add saffron water to rice and mix it. Keep it for garnishing rice.
Serve the rice with fried raisins and dates. This meal goes very well with pickles as well.
