Tomato quiche

I love my tomato quiche. It’s easy to make it  with lovely taste.

Ingredients for the pastry
175 g plain flour
75 g unsalted butter
½ cup water
½ tsp salt

For the filling
250 g cheddar cheese/ shredded
6 large tomatoes
5 eggs
150 ml milk
Salt – pepper to taste
Dried thyme powder

 

 

Preparation
Preheat the oven to 160 C. For the pastry, put the flour into a bowl, add butter and salt. Mix together with your hand. Pour  cold water  on the flour mixture. Knead the dough with hand for 5 minutes until your dough is nicely done.
Grease a deep tart tin. Roll the pastry out to line of the tart tin and refrigerate 40 minutes. Then Pour milk over the pastry. Whisk the eggs and pour over the milk, then add shredded cheddar cheese, cover with slices of tomatoes and season with salt – pepper and thyme powder.
Bake for 40 minutes until the mixture has set and the top is golden. Leave in the tin for a few minutes before serving.
