Pesto Pasta Recipe

Basil pesto Pasta is my darling. It is a quick dish, super tasty and comforting meal. Just in less than half an hour, you can prepare this delicious dish and Enjoyyyyyyy it because it is just piece of paradise in your plate.

About Basil pesto, yes I know we can get it from local supermarket but sometimes it is really fun and pleasant just you make it at home from scratch.

In most of pesto recipes , Parmesan cheese is used but I had Mozarella cheese in the fridge and I used it. I should say, it was very good.

Ingredients for basil pesto

  • 2 cups fresh basil leaves

  • 3 cloves of garlic

  • ½ cup olive oil

  • ½ cup nuts such as : almond. Cashew, pine nuts, walnuts

  • ¼ cup Mozarella cheese

  • Salt – pepper to taste

Ingredients for pasta

  • 3 cups pasta penne

  • Few cherry tomatoes

  • Salt and pepper to taste

How to make it

To make the basil pesto, combine basil leaves, almonds, cloves of garlic, some olive oil, Mozzarella cheese and , season with salt and pepper in a bowl. With a food processor blend it until you have a smooth paste, and add remaining of olive oil. Mix well and set aside.

Simply cook Penne pasta in salted water until cooked well and is soft.

Heat some water in a pot, add some salt, and make sure salt is enough. Bring it to a boil. Add Penne pasta and boil it until soft ( about 15 minutes). Meanwhile, heat the oil in a pan and fry cherry tomatoes for 2-3 minutes, until slightly soft.

Add pesto sauce and fried tomatoes to the pasta and gently mix together. Garnish with cheese and drop some olive oil. If there is leftover sauce, store it in an airtight jar in the fridge for a week.

Pesto pasta recipe

Ingredients for basil pesto

Rainbow Spaghetti/Pasta

For making coloured pasta or spaghetti you can  use either natural colours of veggies and  spices such as spinach, beetroot, green, yellow bell pepper or turmeric or food colouring.

It’s just fun to make beautiful and colourful pasta that are so mouthwatering and scrumptious.

  • 1 package pasta or spaghetti
  • Food colouring

Instructions

Cook plain spaghetti or pasta according to package instructions. Drain and rinse under water tab and set aside.

Combine 2 tbsp water with 1 tbsp food colouring in a plastic bag. Add small portion of cooked pasta to the colour. Seal the bag and use your hand to mix pasta and fool colouring until pasta is coloured.

Repeat colouring remaining of pasta.

Let paghetti / pasta set in colour for 10 minutes and then rinse separately under cold water.

You can mix it with other ingredients to make a salad and serve it cold or put it in the oven or microwave for few minutes and serve it with your favourite spaghetti sauce.

Persian style meatballs spaghetti

Dear friends, please do not forget this is a Persian style spaghetti so do not surprise if the method of preparation is a little bit different because In Iran we  cook pasta like cook the  rice. It means first simmer spaghetti in boiling water and then steamed. So we treat pasta like rice, it means in the process of cooking, we cover bottom of the pot with a slice of a flat bread or thinly slices of potatoes or simply plain noodles. BUT BUT BUT, at the end result is amazing and you will have tasty macaroni plus crispy bread, potatoes or noodles from bottom of the pot.

Ingredients

  • 150 g spaghetti
  • 200 g ground beef
  • 1 medium onion, grated
  • 1 bell pepper, finely chopped
  • 1 potato, thinly sliced
  • 1 can tomato, diced
  • 3 Tbsp tomato paste
  • Salt- chilli powder to taste
  • 1 Tsp turmeric
  • 1 Tsp cinnamon
  • Extra olive oil

Preparation

In a bowl with ground beef, add grated onion. Season with salt- pepper, and also add turmeric and cinnamon. Mix all ingredients together well. Give small ball shapes to the meat and fry them in a pan until meatballs are brown. Then, add tomato paste to the meat balls and heat for 2 minutes and set aside.

In a separate pan, heat the oil and saute chopped bell peppers for 5 minutes. Add diced can tomato to the bell pepper and fry for 2-3 minutes, then pour fried bell pepper and tomatoes over the meat balls, gently stir. Your sauce is ready.

Now, in a pot, bring to boil water, add some salt, 1 Tbsp oil and spaghetti. Cook it for 10 minutes then drain the spaghetti using a colander.

Now pour 3 Tbsp oil in the pot, let it hot, then lay on sliced potatoes as you see in the image, then pour par cooked spaghetti top of the potatoes and at the end pour meatballs over the spaghetti. Cover the pot with a lid and let spaghetti cook for 20minutes over medium to low heat.

Once spaghetti is cooked , you would serve spaghetti but there is surprise at the bottom of pot, yes it’s crispy fried potatoes that is called ‘ tah dig’ in Persian cuisine and it is speciality of Iranian cuisine.

Serve the dish with pesto and salad. Bon appetite

Macaroni cheese

I love Mac and cheese . It’s very easy dish with lots of cheese sauce.

Ingredients

  • 200g pasta
  • 150g cheddar cheese, grated
  • 2 medium onions
  • ¾ cup milk
  • 1tbsp flour
  • 1tsp nutmeg powder
  • Salt- pepper to taste
  • Butter
  • Vegetable oil

Method

Heat the oil in a pan and sauté chopped onion until they are soft. Bring the water to a boil, add pasta, pinch of salt and 1tbsp oil and cook it.

For making cheese sauce: Melt the butter in a pan, add flour and pinch of pepper and nutmeg powder. Stir 2 minutes. Then pour milk in the pan and once milk is warm, add grated cheese. Stirring for 2 minutes and remove from the heat and mix it with fried onion. Such an amazing sauce.

Mix pasta with cheese sauce and serve it.

Sweet Chilli and Tomatoes Pasta

This pasta made with roasted chilli peppers and tomatoes.

Ingredients

3 large tomatoes, halved
1 large red chilli
2 garlic cloves, grated
40 g ground almonds
1 cup green olives, chopped into small pieces
200 g dried pasta
150 g chicken breast, diced
Handful fresh basil leaves, chopped
Olive oil
Salt- chilli flakes to taste

Method
Place the tomatoes and chilli skin side up on the baking tray and grill until charred. Then leave to cool and remove the skin from the tomatoes and chilli.
Place the ground almonds on a baking tray and cook under the grill for 2 minutes or until golden.

Heat the olive oil in a saucepan and Fry the diced chicken until golden, add chilli flakes and salt. Then add green olives, and grated garlic. Stir the toasted ground almond into the mixture.


Using a food processor, blend the chilli and tomatoes to make a puree. Add blended tomatoes and chopped basil leaves to the mixture and combine together.
Cook the pasta in boiling water for 10 minutes. Drain the pasta and transfer to a serving dish and pour over the sauce.

Manti ( Persian Dumpling)

Manti or mantu is a kind of dumpling that is popular in many countries such as Iran, Turkey, China, Armenia, Poland, Russia..
It’s made with dough and fill with combination of ground meat and spices or cheese or herbs and vegetables.
Manti (mantu) is a popular dish between Turkmen people who are living in East coast of Caspian Sea in Iran.

Ingredients
2 cups plain flour
1 cup water
1 egg
200g ground beef
1 onion, grated
Salt and pepper to taste
100 g shredded cheddar cheese

Ingredients for  tomato sauce
2 tbsp tomato paste
1 tbsp olive oil
2 tsp dried mint
Salt and pepper

Ingredients for yogurt sauce
½ cup plain yogurt
1 garlic clove, grated
1 tsp olive oil
Salt and chilli flakes
How to make it
In a large bowl with flour, add salt. Combine the beaten egg with water and pour over the flour. Using your hand, mix the flour for few minutes. Then add olive oil and knead the dough for 5 minutes.
This dough for making dumpling should be hard. Place it in a bowl, cover it with towel and leave to rest in the fridge for 1 hour.

Meanwhile, make the filling. Combine grated onion with ground meat. Season with salt and pepper.

Also make two sauces: the garlic yogurt sauce : in a bowl beat the plain yogurt with grated garlic, olive oil, salt and chilli flakes. Set aside.

For tomato sauce, heat the oil in a pan. Add tomato paste , dried mint, salt and pepper. Mix together and simmer for 2 minutes.

Now, dough is ready. Cut the dough into 4 pieces. Working one piece of dough at a time.

On a floured surface, roll the dough as thinly as you can. Using a cutter, cut the dough into small squares as you see in the photo.

Place a little bit of the filling ( meat or cheese) into the middle of the each square shape dough.

And pinch the opposite corner to seal it firmly.

Repeat with the rest of the dough that would be lots .
Bring the salted water in a pot to a boil. Gently place 5-6 of dumpling in a time in the boiling water and cook for 10 minutes and until dumplings come to the surface of the boiling water.

Take them out of the pot and let the manti cool. You can freeze some portion of this boiled manti.
Place the manti in a plate, pour some yogurt sauce over it and then drizzle tomato sauce over the yogurt sauce. It is just heavenly tasty.

Azerbaijani Pasta with Potato and Garlic Yogurt Sauce

This pasta dish is divine.  It is popular in Azerbaijan and Turkey. There is no meat sauce but with fried potatoes and onions along with garlic yogurt sauce is just a piece of heaven in your plate.

Ingredients:
120 g pasta
2 medium potatoes, peeled and diced
2 medium onions, peeled and chopped
1 clove of garlic
1 Tbsp fresh thyme leaves
1 Tsp turmeric,
Salt and pepper to taste

Olive oil
5 Tbsp Greek yogurt

Method
Put a frying pan on a medium heat and add some olive oil. Add chopped onion and potato to frying pan and stir until softened. Then add spices and stir it for 1-2 minutes and then add thyme leaves. Stir for few seconds and remove the pan from the heat.

Put a a pot on a medium to high heat and add 600 ml water, add some salt and 1 Tbsp oil. Bring it to boil and add pasta to the pot and let it to boil again and cook it for 10 minutes.

Then remove pot from the heat and drain it. Place pasta in the pot and add potato mixture to the pasta. Cover the pot with lid and let it to cook on low heat for 20 minutes.

 Meanwhile, grate garlic and add it to yogurt. Mix it well. Pasta is ready now. Serve on your favourite plate or in a bowl.

Vermicelli pasta nests with vegetables

This dish is an easy meal and simple to make. If you love pasta, You will amaze how much it is delicious.

Ingredients
5 vermicelli pasta nests
2 medium carrots, peeled and finely cut
2 small red-orange bell peppers, finely diced
2 medium susages, finely chopped
½ cup green peas
½ Tsp turmeric
1 Tbsp curry powder
1 Tsp cumin
1 Tsp coriander
Salt – chili powder to taste
Oil

Preparation
Heat the oil in a skillet, saute chopped carrots for 5 minutes. Add chopped sausages, spices and green peas. Fry 10 minutes more.
In a pot with water, add 1 Tsp salt, 1 Tbsp oil. Bring the water to a boil, pour vermicelli pasta nests inside the boiling water and cook for 5 minutes. Drain it.
Stir in vegetables mixture well and serve it.

Persian Style Spaghetti

Ingredients


300g spaghetti
200g ground beef
1 large onion, finely chopped
1 small bell pepper, finely chopped
1 clove garlic, grated
2 cups of fresh grated tomatoes

1 tbsp tomato paste
½ tsp turmeric
1 tsp oregano powder
1/3 tsp cinnamon
Salt and chilli powder to taste

How to make it??


Heat the oil in a frying pan, add chopped onion and saute until just soft. Mix in diced bell pepper and sauté until tender. Add turmeric, salt, flakes chili, cinnamon and oregano to the mixture and stir.
Add minced beef and stir until mixed and brown. At the end, add tomato passata and stir couple of minutes. Remove from the heat and set aside. Sauce is ready.
In a large pot bring water to a boil, add salt and 2tbsp oil to it. Cook pasta 2-3 minutes less than package instructions, strain and set aside.
Heat 3 Tbsp oil in the pot. Add a layer of a flat bread or slices of potato or plain noodles ( as you see in the photo). Then, a layer of sauce. Keep layering until pasta and meat sauce have used.
Cover the pot with a lid. Let it cook on low heat for 20 minutes.

Stuffed pasta shells with cheese and spinach

This dish is made with conchiglioni pasta shells with combination of ricotta cheese and spinach. Ricotta cheese is a creamy cheese with nice flavour.

Ingredients
300 g conchiglioni pasta shells
230 g ricotta cheese
400 g canned chopped tomatoes
1 large onion. Finely chopped
200 g spinach
2 cloves of garlic, crushed
50 g bread crumbs
½ cup milk
Olive oil
Pinch of Salt- pepper powder to taste
½ tsp nutmeg powder
Preparation
Put the bread crumbs, ricotta cheese, milk and 3 tbsp. olive oil, nutmeg powder, and season with salt and pepper powder in a food processor and blend it. Then divide mixture into two portions, set aside one and add spinach leaves to other one in the food processor and make a smooth mixture . Now you have two colour mixtures.
Bring lightly salted water to the boil. Add lumache pasta shells and 2 tbsp. olive oil. Let shells cook until tender. Drain the pasta and set aside.
Heat the oil in a sauce pan, and saute chopped onion for 5-6 minutes. Add chopped tomatoes and let to cook for 5 minutes more. Transfer tomato sauce into a cooking tray, add crushed garlic and mix together.
With a teaspoon, fill the lumache shells with two different cheese mixtures. Arrange over the tomato sauce . Cover with a foil and bake in the oven at 180C for about 15-20 minutes.

 

پاستای گوش ماهی شکم پر ایتالیایی
این خوراک خوشمزه با استفاده از پاستای گوش ماهی شکل و ترکیبی از پنیر ریکوتا و اسفناج تهیه میشه. ریکوتا پنیری خامه ای است که بافت نرمی دارد.

مواد لازم

سیصد گرم پاستای گوش ماهی شکل

دویست سی گرم پنیر ریکوتا

چهار صد گرم گوجه فرنگی خرد شده ی تازه یا کنسروی

یک عدد پیاز خرد شده

دو حبه سیر له شده

پنجاه گرم آرد سوخاری

نصف پیمانه شیر

روغن زیتون

دویست گرم اسفناج  خرد شده

نمک خیلی کم چون پنیر ریکوتا نمکدار هست

فلفل به میزان لازم

نصف ق چ پودر جوز هندی

طرز تهیه
آرد سوخاری- پنیر ریکوتا- شیر- 3 ق غ روغن – پودر جوز هندی- نمک و فلفل را در غذاساز ریخته و با هم مخلوط نمایید. سپس سس آماده شده را به دو قسمت کنید. یکی را کنار بگذارید و به دیگری اسفناج خرد شده را اضافه کنید و در غذا ساز با هم مخلوط کنید. حالا دو نوع سس دارید.
آب را با مقداری نمک به جوش بیاورید. پاستاها را داخل آب جوش ریخته و 2 ق غ روغن زیتون هم اضافه کنید . بگذارید تا موقع نرم شدن ( حدودن 10 دقیقه) پخته شوند. سپس پاستا ها را آبکش کنید و کنار بگذارید.
در یک تابه مقداری روغن را گرم کنید و پیاز خرد شده را برای 6-5 دقیقه تفت دهید تا نرم شود. گوجه های خرد شده را اضافه کنید و 5 دقیقه ی دیگر حرارت دهید. سس گوجه ی آماده شده را در سینی مخصوص فرریخته و سیر های رنده شده رابا گوجه مخلوط کنید.
هر یک از پاستا های پخته شده را با یک قاشق مربا خوری یا چایخوری از دو نوع سس پنیر که قبلن آماده کردید پر کنید. سپس آنها را روی سس گوجه بچینید. روی سینی فویل بکشید. داخل فر با حرارت 180 درجه ی سانتیگراد برای 20-15 دقیقه بپزید.
