Persian Frittata with Herbs (Kookoo Sabzi)

Kookoo (frittata) is a group of Persian meatless (mostly) and sometimes with meat foods that is mixed with eggs. Kookoo is quit easy and quick to make. Kookoo might be something like frittata or herb patties: a mixture of egg with vegetables.

Sabzi means herb in Farsi. In koko sabzi, herbs such as parsley, coriander, chives or spring onions and dill are used. Traditionally kookoo cooked in round shape pans on the gas stove but you can bake them in square shape and in the oven as well :).

Ingredients

4 eggs

500 g  herbs includes: Parsley, coriander, dill, spinach , chives or green part of spring onions)

3  tbsp chopped Walnuts

2 tbsp Barberries ( Zereshk)

4 cloves of garlic, grated

1  tsp turmeric

2 tbsp flour

1 tsp baking powder

Salt and pepper to taste

Method

Remove stems from all herbs. Wash and drain them. Chop them in a food processor .

In a large bowl with chopped herbs, add eggs and whisk it well.

Add  beaten eggs, grated garlic and rest of ingredients  to chopped herbs. Mix  until well combined.

Heat the oil in a non stick pan. Put kookoo mixture in the pan, spread it in the pan and gently press the herbs batter.

Cover the pan with a lid and allow to cook and fried one side, then flip over and leave to cook other side or until browns.

Serve kookoo sabzi either  cold or warm with bread or steamed rice, salad and pickles.

Persian Egg Pancakes

Egg pancakes are easy and fun breakfast. You can prepare your butter overnight and next day in few minutes you would have tasty egg pancakes.

You may serve these pancakes with sugar but they go well with anything. I am telling this because I have tried and that’s why today I have served these pancakes with 3 different things: fried onions, fried tomato and fired shredded meat 🙂

Egg pancakes

Ingredients

3 eggs

1 ¾ cups plain flour

350 ml warmed milk

Salt – pepper to taste

¼ cup melted butter

Ingredients for filling

3tbsp fried onions

3tbsp fried tomatoes

3tbsp fried meat

Method

Whisk eggs in a large bowl. Add warmed milk and melted butter. Whisk to combine. Add flour, salt and pepper. Carry on beating until the batter is entirely lump free.

Preheat the oven to 180C.

Heat a frying pan over medium heat. Once the pan is hot, ladle one small tea cup batter into the pan. Tilting the pan to move the mix around the pan. Cook for few seconds until golden, then flip over and cook other side.

Pile the pancakes. Now, spread about 1tbsp of each filling on the pancake, fold up sides and bring to gather, as you see in the photo. Put small piece of butter top of each pancake. Place them in the oven and cook for 4-5 minutes.

Remove from the oven. Serve them with rice or meat, they go very well with cooked rice or meat dish.

Poached eggs

Poached eggs

 
Ingredients
2 eggs
Water
Salt- pepper
Preparation
Crack the eggs in a bowl and set them aside.
Bring to boil water in a pot ( 1 cup water for each egg). Gently pour eggs one by one into the boiling water. Remove from the heat, and allow to cook . for a soft poached egg, 2-3 minutes and for firm ones will need 4 minutes .
Once eggs are done, drain onto kitchen paper. Serve it with buttered toasted bread and sprinkle salt and pepper, or make a sandwich with flat bread.

 

تخم مرغ آبپز بدون پوست یا همون پوچد اگ
پوچد اگ یعنی تخم مرغ آبپز بدون پوست – شاید همون تخم مرغ عسلی خودمون هست ولی بدون پوست.

مواد لازم

دو عدد تخم مرغ

آب

نمک و فلفل به میزان لازم

طرز تهیه
تخم مرغ ها را قبلن بشکنید و در یک ظرف آماده نگه دارید.
برای هر تخم مرغ یک پیمانه آب رادر یک قابلمه بجوش بیاورید. وقتی آب کاملن در اوج جوش بود قابلمه را از روی حرارت بردارید. تخم مرغ ها را خیلی به آرامی و دانه دانه داخل آبجوش قرار داده و گاز را خاموش کنید. اگر دوست دارید تخم مرغ خیلی نرم داشته باشید 3-2 دقیقه و اگر دوست دارید تخم مرغ کمی خودش را گرفته باشد 4 دقیقه کاملن مناسب است.
تخم مرغ های آماده شده را از آب خارج و روی دستمال کاغذی قرار دهید تا رطوبت تخم مرغ را جذب کند. می توانید یک لقمه ی خوب با نان تافتون- لواش یا نان را تست تهیه و با کمی کره- نمک و فلفل- پوچد اگ را میل کنید.
