Eggs in Tomato and Beef

All of us experienced egg dishes such as: egg salad, omelette, frittata. And it’s pretty easy, simple and very delicious food for a lazy day.

Ingredients

  • 4 large eggs
  • 100 g beef, cooked and diced
  • 200 g can diced tomatoes or fresh tomatoes
  • 2 tbsp tomato paste
  • Salt and pepper to taste
  • Olive oil

Instructions

Heat the Olive oil in a pan. Add diced tomatoes and cook for 5 minutes until soften. Then add tomato paste, diced beef and season with salt and pepper. Mix together and break 4 eggs top of the tomato-beef sauce. Cover the pan with a lid and cook eggs for 10 minutes. Season with salt and sprinkle chilli flakes and serve it.

Scrambled Eggs

A delicious and popular dish in all over the world. It is made from beaten white and yolk eggs.

Ingredients

  •  2 eggs
  • 20 g butter
  • 1/2 tbsp. crème fraiche
  • Salt – Pepper to taste

Instructions

Crack the eggs in a pot, add butter. Don’t add slat as it will cause watery eggs. Place the pot over low heat and start to stir slowly.

Keep stirring until eggs aقe runny. Remove from the heat, add cream fraiche, still keep stirring.

Place it back on the heat and stir for 1 minute more. Now, you could add salt and pepper.

And serve it with toasted bread and fried cherry tomatoes.

Omurice

Hi everyone, I am so excited about this recipe. So I cooked omelette rice yesterday. It was just lovely, gorgeous and delicious rice dish , full of colour , taste , vegetables.

I used chicken meat but if you wish you might be use sausages. You will be surprise how much is easy and simple to make this dish and in other hand how much is tastyyyyyyyyyyyyyy.

Ingredients

  • 2 cups cooked rice
  • 2 boneless, skinless chicken breast or thighs
  • 2 eggs
  • 2 tbsp ketchup
  • 2-3 slices of cheddar cheese
  • 1 large onion
  • 2 small carrots
  • 1 celery
  • 3 mushrooms
  • 2 cloves of garlic
  • 2 small bell peppers
  • 3 tbsp milk
  • Salt and chilli flakes to taste
  • Oil or butter

Instruction

Cut all vegetables into small pieces. Cut chicken meat into pieces. Heat the oil in a pan, add chicken meat season with salt. Fry until cooked and changed the colour.

Heat the oil in a pan again and add all chopped vegetables and season with salt and chilli flakes. Sauté until softened.

Once vegetables are done, add fried meat and ketchup. Mix well together. Next, add rice to the cooked vegetables and combine together.

 

Now place some of rice mixture in a bowl, add pieces of cheddar cheese and top it with more rice. Whisk eggs in a bowl with pinch of salt and 3 tbsp milk .Heat the oil in a pan, pour the egg into the pan and tilte to cover the bottom of pan. Allow to cook the omelette.

Put a plate on top of the rice bowl and put the omelette top of the rice. It ‘s done , ready .

Cheese omelette

This is my cheese omelette. Combination or eggs with orange cheddar cheese.

Ingredients

2 eggs

30g orange cheddar cheese, grated

Butter

Salt and pepper to taste

Method

Beat the eggs with salt and pepper in a bowl. Melt the butter in a pan. Pour in the eggs and cook for a minute until omelette lightly set. Put grated cheese in the centre of omelette and cook until cheese has melted. Then fold the omelette in half and turn the heat off.

Tomato omelette

This is my favourite omelette with tomatoes . I have made them with Persian tomato because taste of these tomatoes are very good and give lovely flavour and colour to any dish.

Method

Melt the butter in a pan. Add diced tomatoes and fry for 2-3 minutes. Beat the eggs in a bowl. Season with salt and pepper. Crack the eggs in a bowl. Season with salt and pepper. Beat the eggs, an add it to the fried tomato and beat it. Add it to the fried tomatoes and cook it.

Chicken Omelette with Fried Onion

Omelette is a dish made from beaten eggs, duck, goose, quail , ostrich egg…fried in butter or oil. Sometimes omelette is plain and sometimes you can add other ingredients and give more flavour.

I love any dish made from eggs : Boiled, fried, scrambled and poached eggs all are not only fantastic and tasty also full of goodness.

Ingredients

  • 3 eggs
  • One skinless, boneless  chicken breast, cooked and shredded
  • One large onion, chopped
  • Salt, chilli powder to taste
  • Olive oil
  • Slices of Persian flat bread or tortilla bread

Method
Peel and finely chop onion. Melt the butter or heat the oil in a pan and fry onion until get gold colour. Put it aside. Crack the eggs into a bowl, add a pinch of salt and chilli powder and beat well with a fork. Add shredded chicken and beaten eggs to the pan with fried onion and let it cook and serve it with flat bread.

Onion omelette muffins

These egg muffins are so good, moist and delicious. Obviously you can make omelette in different way. For instance my mother used to fry sliced onions, mix with eggs and make a delicious fried onion omelette, wrap it by tortilla bread ( lavash bread) and go on.

I just tried same omelette recipe in muffin cups, and result of my effort looks very nice.

Ingredients

2 eggs

1 large onion, peeled and thinly sliced

salt, pepper to taste

Butter or vegetable oil

How to make it

Fry sliced onion in a pan until golden brown. Put fried onion into the  muffin cups (no need to fill cups up, just half way). Crack an egg top of each cup, sprinkle salt and pepper. Put in oven with 200C and cook for 15-120 minutes.

Eggs in bread baskets

These omelettes inside the bread baskets are so cute  and super easy to make them.

Ingredients
2 eggs
2 slices of bread
4 Tbsp of shredded cheddar cheese
Salt and pepper to taste
Dash of vegetable oil

Preparation
Preheat the oven at 180 C.
Cut crusts of slice of bread. Roll out the bread with a rolling pin and make it thin. Slightly grease cake tin. Place one slice of thin bread in the cake tin and put some of shredded cheddar cheese on the bread then crack an egg top of the cheese. Season with salt and pepper.
Place it in the oven. Cook for 20 minutes. If you wish have hard egg, let it cooking for 30 minutes.

Toasted bread omelette with herbs / cheese

These  are omelettes with toasted breads but in different way.

Ingredients for omelette with herbs

1 large egg

1 slice of bread

2 tbs of olive oil

3 tbs of fresh herbs ( dill, tarragon and coriander)

A clove of small garlic

Salt- pepper to taste

1/2 tsp  turmeric

30g Cheddar cheese, grated

Salt- pepper to taste

Pick leaves of dill, tarragon and coriander. Wash and roughly chop them. Place them in a bowl. Crack the egg and add it to the bowl. Add grated garlic. Season mixture with salt- pepper and turmeric. Gently beat egg and vegetables. Set aside.

Persian Frittata with Herbs (Kookoo Sabzi)

Kookoo (frittata) is a group of Persian meatless (mostly) and sometimes with meat foods that is mixed with eggs. Kookoo is quit easy and quick to make. Kookoo might be something like frittata or herb patties: a mixture of egg with vegetables.

Sabzi means herb in Farsi. In koko sabzi, herbs such as parsley, coriander, chives or spring onions and dill are used. Traditionally kookoo cooked in round shape pans on the gas stove but you can bake them in square shape and in the oven as well :).

Ingredients

4 eggs

500 g  herbs includes: Parsley, coriander, dill, spinach , chives or green part of spring onions)

3  tbsp chopped Walnuts

2 tbsp Barberries ( Zereshk)

4 cloves of garlic, grated

1  tsp turmeric

2 tbsp flour

1 tsp baking powder

Salt and pepper to taste

Method

Remove stems from all herbs. Wash and drain them. Chop them in a food processor .

In a large bowl with chopped herbs, add eggs and whisk it well.

Add  beaten eggs, grated garlic and rest of ingredients  to chopped herbs. Mix  until well combined.

Heat the oil in a non stick pan. Put kookoo mixture in the pan, spread it in the pan and gently press the herbs batter.

Cover the pan with a lid and allow to cook and fried one side, then flip over and leave to cook other side or until browns.

Serve kookoo sabzi either  cold or warm with bread or steamed rice, salad and pickles.
