Green B Frittata ( Tabrizi Kookoo Loobia Sabz)

Kookoo lobia sabz is a traditional classic dish in Tabriz an ancient city in NW of Iran. This dish is served in especial occasions and for Iftar in month of Ramadan.

Tabrizi green beans is absolutely delicious, full of flavour and colour.

Kookoo ( kuku) in Iranian cuisine, applies to an eggy dish or an egg-based dish. Kookoo or frittata might be meatless that would be a vegetarian dish and sometimes is made with meat.

Kookoo is a mixture of whipped eggs with different ingredients.

Green beans is called loobia sabz in Farsi language. My today recipe is meatless kookoo loobia sabz but you can add 200g minced beef to the ingredients if you wish.

Ingredients

  • 350 g baby green beans, finely diced and boiled
  • 100 g carrots, finely diced and boiled
  • 100 g potatoes, finely diced and fried
  • 1 large onion, finely chopped and fried
  • 5 eggs
  • 2 tbsp chopped walnuts
  • 1 tbsp flour
  • ½ tsp baking powder
  • 1 tbsp saffron water
  • 1 tbsp milk
  • 1 tsp turmeric
  • Salt and pepper to taste
  • Vegetable oil

Instructions

Crack the eggs into a large bowl. Add milk, chopped walnuts, flour, baking powder, saffron water, turmeric and season with salt and pepper. Whisk it well until all ingredients combine together. Saffron smell spread all over the kitchen and it’s lovely.

Next, add fried and boiled vegetables to the egg mixture. Mix all together.

Heat the oil in a deep pan, pour the mixture in the pan. Firmly press the ingredients with the back of the spoon to the down. Cover the pan with a lid and allow to cook on side ( about 10-15 minutes), then flip over to cook other side.

Serve it in a platter garnish with Zereshk (Barberries) and cut it into pieces.

zucchini fritters with orange-yogurt sauce

Maybe you do not like zucchini (courgette) taste, but you can make it tasty and enjoy it now and again.
Zucchini is very watery and best way or let’s say ways to remove excess water is to salt the zucchini and then squeeze it.
Today I have my zucchini cakes with orange-yogurt sauce. Just give a try and find out how much they are tasty, delicate and light.

Ingredients
1 large zucchini, coarsely grated
3 baby carrots, grated
2 spring onions, chopped
1 small bunch fresh dill leaves, chopped
3 large eggs
150 g haloumi cheese, grated
1 clove garlic
1tsp baking soda
2tbsp bread crumbs
Salt and chili flakes to taste
Olive oil

Ingredients for orange-yogurt sauce
1 orange zest
1 small clove garlic
3tbsp plain yogurt

Preparation
Grate the zucchini. Because zucchini is really watery I have used two methods to remove the water. First of all, toss with salt to draw out the liquid ( 15 minutes). Then place it in a kitchen towel, bring corners of towel together and squeeze out the liquid as possible.

Place grated zucchini in a bowl, add grated haloumi cheese, garlic, carrots, chopped spring onions and dill, baking soda, bread crumbs, eggs, and season with salt and chili flakes.
Stir to combine well.


Heat the oil in a pan. Drop 1 tbsp of mixture into the pan and cook 5 minutes each side.
Mix orange zest and grated garlic with yogurt.

Potato frittata ( kookoo sibzamini)

In Iranian cuisine, kookoo ( frittata) refers to a dish with fried vegetables or meat and egg. This kind of dish has a very beautiful crunchy texture.
Today’s recipe is potato frittata ( koo koo sib zamini) made with chives, mint and eggs. Koo koo would be served warm or cold and leftovers are even more delicious so if you prepare ahead and serve it next day, still taste would be just delicious.

Ingredients
4 medium potatoes, grated
1 medium onion, grated
2 eggs
2 cloves of garlic, grated
1 small bunch of chives, thinly sliced
Hand full fresh mint leaves, thinly sliced
1 ½ Tbsp plain flour
½ Tsp turmeric
Salt and chili powder to taste
Vegetable oil

Preparation
Pour grated potatoes and onion in the centre of a kitchen cloth and squeeze out the juice of potatoes and onion. Transfer them into a bowl, add grated garlic, chopped chives and mint to them. In a separate bowl with eggs, add turmeric, flour , salt and chili powder, mix well and pour it over the potato mixture, and blend well.
Heat the oil in a saucepan, take 1 Tbsp of batter and flatten them. Let they fry. Once one side is golden, flip them over and let other side fries as well.
Serve koo koo sibzamini in a platter with fresh herbs and salad.

 

کوکو ی سیب زمینی
کوکو در آشپزی ایرانی به غذایی گفته میشود که از ترکیب تخم مرغ با سبزیجات یا گوشت تهیه می شود. کوکو را می توان به صورت گرم یا سرد سرو کرد و حتی اگر برای روز بعد نیز باقی مانده باشد- مزه ی بهتری خواهد داشت.

مواد لازم

چهار سیب زمینی خام رنده شده

دو پیاز متوسط رنده شده

دو تخم مرغ

یک دسته ی کوچک تره ی خرد شده

به میزان یک مشت نعنای تازه ی خرد شده

دو حبه سیر

یک و یک دوم ق غ آرد

نصف ق   چ زردچبه

نمک و فلفل قرمز به میزان لازم

طرز تهیه
سیب زمینی و پیاز رنده شده را روی یک دستمال آشپزخانه ریخته- گوشه های دستمال را جمع کرده و آن را فشار دهید تا آب اضافی سیب زمینی ها و پیاز خارج شود – سپس آنها را داخل یک کاسه ریخته و سیر رنده شده – تره و نعنای خرد شده را نیز اضافه کنید.
در یک کاسه ی مجزا- تخم مرغ ها را با زردچوبه – نمک – فلفل و آرد مخلوط کرده وروی سیب زمینی های رنده شده بریزید و خوب مواد کوکو را مخلوط کنید.
روغن را در تابه گرم کنید. یک قاشق غذاخوری از مایع کوکو را داخل تابه ریخته و با قاشق آن را پهن کنید. وقتی یک طرف کوکو طلایی شد روی دیگر را برگردانید و سرخ کنید.
کوکوی سیب زمینی را با سالاد و سبزیجات تازه سرو کنید.

Spinach & Ground Beef Frittata

This is a very popular frittata from Iranian Azerbaijan ( NW of Iran) . It is a rich and delicious frittata. You could serve it either hot or cold, both are equally pretty tasty.

Ingredients
200 g spinach
300 g minced beef
1 large grated onoin
4 Potatoes
7 whole eggs
3 tbsp walnuts, chopped
2 tbsp barberrie (zereshk)
Salt and paprika
1 tsp turmeric
1 tsp baking soda
Olive oil

Preparation
Put your minced beef in a big bowl and add grated onion to the meat. Mix all together. Heat the oil in the pan, add the meat and fry until browned, set aside. Cook spinach leaves for 5 minutes. Cook boil potatoes as well. Put all cooked ingredients in a food processor and grind them.
In a big bowl, crack the eggs, add all spices, and barberries and chopped walnuts. Mix very well. then add ground ingredients and combine all together.
Heat good amount of oil in the pan, and once oil is very hot, pour mixture in pan and allow to fry and cook on medium heat. Then, flip over and let to cook other side. You can serve it with rice or with bread, both equally go well.

Potato Pancakes

I used to live in Warsaw , Poland. What a beautiful country and very friendly people. I have learned this recipe from a Polish friend. It is easy to make – very tasty pancakes AND it is very similar to our Persian style koko sibzamini.

Ingredients
6 potatoes, peeled
1 onion, peeled
1 egg
2 tbs flour
1/2 tsp turmeric
Salt- pepper for taste
Cream ( it is optional)
Olive oil

Preparation
In a bowl, grate potatoes and onion on the star shape grater. Add egg, spices and flour to the grated potatoes and onion. Whisk the mixture very well.
Heat up the saucepan with the olive oil over medium heat, add 2 tbs of mixture . Fry one side then flip to the other side and let it to fry until golden brown.
Garnish it with cream and herbs.

Enjoy.
