Vegetarian kebab

This is one of the  tastiest vegetarian kebabs which is made with bread and vegetabls. It is simple but super tasty and easy to make it, with crispy texture, golden outside and fulllllllllllll of flavour. You may serve it with yogurt, sweet chilli sauce, any kind of chutney or ketchup.

Ingredients

  • 5 slices of fresh white or brown bread
  • 1 cup chickpeas, cooked
  • 1 onion
  • 1 lemon juice
  • Handful fresh mint leaves
  • Handful fresh coriander leaves
  • 1-2 cloves of garlic
  • Small piece of fresh ginger
  • 3 tbsp yogurt
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp coriander powder
  • ½ tsp curry powder
  • 1 tsp Olive oil
  • salt and pepper to taste

How to make it???

Put slices of bread into a food processor or blender and blend it until crush and look like soft bread crumbs and set aside.

Put cooked chickpeas into a mixing bowl. Add onion, garlic, ginger, mint and coriander leaves, lemon juice, yogurt and oil to the chickpeas. Blend until become purée. Add puree mixture and all spices to the bread crumbs, mix until combine well.

Grease your hand, take a small portion of mixture and roll it like a hot dog, however you can give ball shape or cutlet/ round burger shape too. Once all kebabs are done, you may push the wooden sticks into the kebab . it ‘s just optional.

Now heat the oil or butter in a saucepan. Place kebabs into the pan and fry for 3-4 minutes, until golden crispy.

Serve it with your favourite sauce.

Vegetarian kebab

Ingredients

Persian kebab kubideh with rice (Chelow kebab)

Kebab is an absolute favourite, the most popular and delicious dish in Iran. In Iranian cuisine, there are different types of kebab with ground meat or diced meat and believe me all are super tasty and you will be over the moon when you have kebab for lunch or dinner.
Kebab is usually grilled over hot coals or in the oven if you have no barbecue.
Chelow kebab means a dish with rice and kebab. Kebabs are various cooked meat dishes.

My today’s kebab is called ‘ kebab kubidhe ‘ made with ground beef/lamb, other kind of kebab is ‘kebab barg’ with diced beef, lamb or chicken. Still, there is more different kebabs.
Chelow or pilaf (pilau) is  a kind of plain steamed rice topped with butter, saffron and kebab.
Making a good kebab firstly requires quality fresh meat. It should be combination of lamb with beef ( mixed minced). The meat should be around 20% fat which will keep the kebab juicy and moist.
Secondly, when you buy minced meat, you should ask your butcher to grind the meat 2-3 times or do it at home by using your food processor.
Thirdly, you need to marinate the kebab meat earlier and leave the meat to rest in the fridge overnight.

Once kebab is ready serve it with pilaf/polow, fresh herbs, sumac powder  and doogh ( that is an Iranian yogurt based drink).

 

Ingredients for kebab

  • 600 g ground lamb
  • 400 g beef
  • 250-300 g onion, grated and remove excess juice
  • 1/2 lime/lemon juice
  • Salt and pepper to taste

 

Ingredients for accompaniment

  • A bunch of cherry tomatoes
  • 4-5 potatoes
  • 3-4 red-yellow bell peppers

Ingredients for mint sauce ( optional)

  • Handful fresh leaves of mint and coriander
  • 3 tbsp Greek yogurt
  • 1 small bell pepper
  • Salt to taste

Preparation
Grind finely the meat 2-3 times or ask butcher do it for you. Grate the onion and remove the juice. In a big bowl, add grated onion, salt, pepper, lime juice and meat. Mix well and knead the meat mixture for 3-4 minutes and  until  well combined… Kneading the meat mixture for few minutes will make the meat like a paste that will stick together and not fall apart when your thread it on skewers. Then refrigerate the meat overnight.


For threading the kebab you can use either  metal skewers or wooden ones. If you are using wooden skewers, you need to soak them in water overnight as well to prevent of burning in the oven.
Next day, divide the  meat into seven or eight pieces and thread on the wooden skewers by pressing the meat and shaping it evenly. Preheat the oven to 180C for grilling the kebabs.

 Place a flat bread or  (tortilla bread) on the baking  tray and place the kebabs skewers on it. Grill the kebab for 20-25   minutes.The juice from the kebab will soak into the flat bread as the kebab cooks.

Thread the potatoes and peppers on the skewers as well. Grill them in oven 200C for 20-30 minutes. You can do grill  the tomatoes too  but I just fried them in a pan

For refreshing mint sauce you need to blend all ingredients in a blender and make a puree.
Once kebab and accompaniments are grilled, remove from the oven. Traditionally kebab kubideh is served  with steamed saffron rice ( chelow/polow), cubes of butter on top of the rice, fresh herbs such as basil, chives, mint, onions.

Sprinkle sumac powder on kebab. If you serve the kebab with rice, you can sprinkle sumac powder on the rice as well.

Iranian pan kebab ( kebab Tabei )

Hello lovely Ladies and gentlemen. For today I cooked Persian pan kebab that is known as kebab tabei or kebab deegi. These kebab tabei are hearty, simple, delicious meal and easy peasy to make them. So just cook it, serve it, sit and watch your favourite TV program. These kebabs might be served with rice and salad or with Lavash or tortilla bread.

Kebab in the Iranian cuisine has a special place. There are variety of kebabs, such as: ground meat kebab: kebab koobideh, sour kebab : kebab torsh, beef tenderloin : kebab barg. These kebabs made either with minced or diced beef, lamb, chicken or fish.

There are different kinds of kebab in the Persian cuisine and kebab tabei or pan fried kebab is one of the most delicious and brilliant meals. Kebab tabei is a juicy, moist and flavourful kebabs in a frying pan. Making this kind of kebab at home is very easy, and no need to a grill. All you need is minced beef /lamb and onion.

Ingredients

  • 500g beef/lamb mince
  • 1 large onion, grated
  • large tomatoes or cherry tomatoes
  • 1 green or yellow bell pepper
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

Squeeze grated onion to get rid of onion juice. In a bowl add minced meat, onion, paprika, season with salt and pepper and mix all ingredients together until well combined. Set aside for 15 minutes.

Add vegetable oil to a non stick pan. Spread the meat mixture in the pan and press the meat with your hand to cover the base of pan evenly.

Place the pan over medium low heat and allow to cook for 10 minutes until kebab has hardened. Now using a spatula or a knife and cut the flattened keban into stripes as you see in the photos.

Flip over kebab strips, also add tomatoes and chunks of bell pepper to the pan. Pour 4 tbsp water to the pan. Cover the pan with a lid and cook for 7-8 more minutes until other side of kebabs cooked and lightly roast tomatoes and bell peppers.

Serve the kebabs with rice and Shirazi salad.

Persian Kebab Koobideh

Kebab in the Iranian culture is one of super foods. Kebab is a kind of meat dish. It does not necessarily need to be only lamb or beef grounded meat , it could be combination of both together.

One of popular kebabs in Iran, is kebab koobideh. Kebab might be served with rice ( pilaf/polow ) along with salad, fresh herbs . This rice with kebab is a simple and plain rice without any herbs or nuts. And sometimes kebab served in wrapped flat naan bread ( Lavash, or Sangak).

Kebab koobideh literally means a kind of kebab has been grounded, so koobideh means grounded.

Iranian food and cuisine poorly represented in international level. I love to introduce and present Iranian/Persian food as much as I can.

Some Iranian foods have long history and return to ancient time ( thousand or hundreds years ago) some are forgotten from Persian table. I just try with sharing my recipes present Persian cuisine.

Ingredients

500 g grounded meat ( mixed minced)

1 medium onion, grated and drained

Salt and pepper to taste

Method

Finely grate onion. Squeeze onion juice to get rid of all moisture, other wise kebab meat will fall off from skewers in the cooking process.

In a bowl with meat, add onion, season with salt and pepper. Combine together and knead meat mixture well for 2-3 minutes until meat mixture becomes paste like. Keep the meat in the fridge for 3-4 hours.

 

 

Preheat the oven to 180C.

Make your fingers wet with tap water. It will help meat does not stick to your hand. Get an orange size meat portion in the palm of your hand and press the meat to the kebab skewer.

Once you prepared all kebabs in the skewers. Put slices of flat naan bread in baking tray and put kebabs on the bread, so you will catch kebab juice on the bread.

 

Place the tray in the oven and let to cook for 25-30 minutes.

Once all kebabs are done. Get one slice of naan bread ( Persian Lavash bread or tortilla) rub some butter on the bread, spread some freshly chopped chives, coriander, parsley and onion. Place pieces of kebab top of it. Sprinkle sumac on kebab. Wrap the bread and enjoy it.

Pan Fried Kebab With Aubergine Sauce ( Kabab Tabei Ba Sauce Bademjan)

There is variety of kebab in Iran along with different method of cooking ( grilled or pan-fried). I just would tell, alllllllllllllllllllllllll those beautiful kebabs are just heavenly delish. So, if you love kebab, and yet do not want a grill one, this pan kebab is tasty and quick to make.

Ingredients for kebab

200 g ground beef
2 medium onions, finely diced
4 medium tomatoes, diced
1 bell pepper, cut into strips
1 Tsp turmeric
Salt- chili powder to taste
Oil or butter
1 baguette bread

 

 

Ingredients for sauce

1 eggplant, peeled and cut into half
2 clove garlic, grated
5 Tbsp plain yogurt
1 Tbsp olive oil
Salt to taste
½ lime or lemon juice

Preparation
Heat the oil in a frying pan. Saute the diced onions for 5 minutes. Add bell peppers and all spices. Let to fry for few minutes. Add ground beef, stir gently. Once the meat is browned, add diced tomatoes and allow cooking just for 2-3 minutes. (no need to cook for long time).Taste and season if needed. Set aside.


Peel of aubergine. Cut into half. Grill in the oven or on the stove and grill until rich brown. Cut it into small pieces. In a bowl with lemon juice and grated garlic, add chopped eggplant, olive oil and salt. Using a blender and make it puree and smooth. This sauce has a Smokey flavour and give wonderful taste to the kebab.


Spread aubergine sauce all over the bread. Flatten a rich portion of kebab top of the sauce and serve it with fresh herbs such as: mint leaves, chives, radish, spring onions.

Pan Fried Sumac Kebab

Sumac is one of essential spices in Middle East cooking. It is lovely spice with purple colour and lemony taste. In Iranian cuisine, Sumac is used in stews, Kebabs and rice for the flavour.

Ingredients
200 g ground beef/lamb meat
2 medium onions
2 potatoes/ cooked
2 tomatoes
2 Tbsp flour
1 Tbsp ground sumac
½ tsp turmeric
Salt- chilli powder to taste
Oil

Preparation
Grate the onions. Squeeze out of the juice. Add ground meat , flour, sumac and all spices to the grated onions and combine all together very well.

Heat the oil in a pan, take a portion of meat mixture and give a shape, place in the pan alongside with tomatoes. Cook until kebabs are brown and cooked.
These lovely pan fried kebabs could be serves with rice or bread, cooked potatoes and fried tomatoes.

Pan Fried Minced Kebab

Kebab is Persian favourite. They are cooked on a grill, on a skewer over a fire or  in a frying pan and all of them  are delicious. Here is very easy peasy way to prepare your lovely pan fried kebab.

Pan fried minced kebab

Ingredients

200 g minced beef or lamb

2 large tomatoes, grated

1 onion, finely grated

1 small bell pepper, finely chopped

1 tsp sumac powder

Salt and pepper to taste

Method

It’s very easy and quick to make this lovely minced kebab. In a bowl with grated onions, add minced meat, grated tomatoes, chopped bell pepper and seasoning with salt and pepper.

When all ingredients thoroughly combined heat oil in a frying pan, and place meat mixture in the pan and fry until brown.

Now it’s time for sumac. Drop some olive oil on a roll bread and sprinkle sumac powder on it. Now spread fried kebab on the bread and garnish with fresh mint and slices of radish and onion.

Aubergine kebab with sumac

This type of kebab is combination of eggplant and ground meat with flavorful spices that makes it special.

 
Ingredients
250g ground meat ( either beef or lamb)
1 large eggplant
2 medium onions, grated
1 tbs sumac ( somaq)
1 tsp turmeric
1 tsp cumin
1 tsp cinnamon
Flat breads
Salt and pepper
5 tbs olive oil

 

Preparation
Peel off onions and eggplant. Cut them into small pieces. Heat the pan, add the oil. Place onions in the pan and let it to cook for 5 minutes. Then add chopped egg plant and all spices. Let it to cook for 5-6 minutes more. Stirring it. At the last stage add ground beef. Stir it frequently until meat is brown.
Serve it with flat bread and garnish with fresh herbs and sprinkle sumac top of the kebab. Sumac gives beautiful lemony taste to kebab.

کباب لقمه ی بادمجان و سماق
این نوع کباب ترکیبی از بادمجان و گوشت چرخ کرده با ادویه های معطر می باشد که آن را بسیار مخصوص می کند.

مواد لازم:

دویست و پنجاه گرم گوشت گوساله یا گوسفندی

یک عدد بادمجان درشت

دو عدد پیاز متوسط

یک ق غ سماق

یک ق غ زردچوبه

یک ق چ زردچوبه

یک ق چ زیره

یک ق چ دارچین

نان مودر علاقه

نمک  و فلفل به میزان لازم

روغن زیتون

طرز تهیه
پوست پیازها و بادمجان را جدا کرده و خرد نمایید. ماهی تابه را روی گاز گرم کنید. روغن به ماهی تابه بریزید و پیاز های خرد شده را برای مدت 5 دقیقه تفت دهید. سپس بادمجان خرد شده و ادویه ها را اضافه کرده و بگذارید برای 6-5 دقیقه ی دیگر بپزد. در مرحله ی آخر گوشت چرخ کرده را اضافه کنید . مواد را همچنان با قاشق هم بزنید تا گوشت پخته شود. این کباب بسیار خوشمزه را با نان به صورت لقمه سرو کنید همراه با سبزیجات تازه. سماق هم روی کباب بپاشید که مزه ی فوق العاده لذیذی به کباب می دهد.

Lamb Shawarma

Shawaram or doner kebab is one of most popular fast food or street food  in many countries.

This gorgeous kebab originally made with lamb or mutton but nowadays,  you can make shawarma with beef, chicken or mixture of both.  It  cut in thin slices and serve as a kind of sandwich wrap inside a flatbread or baguette bread along with sauce and salad.

Ingredients for marinating kebab:
400 gr lamb meat
2 large onions, peeled and chopped
2 large tomatoes, sliced
2 large potatoes
3 tbs Olive oil
2 tb lemon juice
1/2 tsp turmeric
1 tsp curry powder
Pepper- salt to taste
Bread ( budget or pita bread as you prefer)

Ingredients for sauce
Half of cucumber
handful of fresh mint and dill leaves
2 tbs Olive oil
2 tbs Greek yogurt
Pinch of red/black pepper

 

Preparation
For making sauce, cut cucumber into slices and chop herbs as well. Place yogurt, herbs and cucumber and pepper into the blender and pure it. Put it aside.
Cut meat lamb into thin strips. Peel off one of onions and grate it. Place meat, grated onion, olive oil, lemon juice, turmeric, pepper and curry powder in a big bowl. Mix them very well and then put it into a plastic bag and keep it in the fridge over the night.
Peel off potatoes, cut them lengthwise and fry them.

Peel off second onion and slice it. Cut tomatoes into chunks. Fry onion slices over medium heat for about 5 minutes. Add tomato to the fried onion. Let it to cook for more 5 minutes. Keep it warm over law heat until kebab is ready to serve..
Heat up a pan, then put oil after it’s heated up add marinated lamb strips and cook it until meat strips has browned.

Kebab is ready now. For serving this sandwich first put a layer of fried onion and tomato, second layer would be fried lamb strips and finish it with sauce. Serve it with fried potatoes. Nosh-e Jan

Bowl shaped kebab

Kebab is one of the most delicious and favourite dishes in Iran. You can grill the kebab or pan fry it or make it in the oven.This recipe is super easy and double super tasty.

 
Ingredients
300 g ground beef
1 medium onion
1 slice of sandwich bread
3-4 potatoes
3-4 tomatoes
120 g cooked rice
Salt and black pepper to taste
Olive oil or butter

 

Preparation
Preheat the oven at 200 C.
Grate the onion and squeeze fully so the juice is all out. Put ground beef in a bowl, add grated onion and season it. Soak one slice of bread in the water and squeeze fully. Add it to the beef. Mix and knead very well.
Coat the bottom of a pyrex bowl with oil or butter. Spread beef mixture in the pyrex using your hands. Sprinkle some olive oil top of the beef mixture.
Place the pyrex bowl in the preheated oven on. Cook it for 15-20 minutes
Meanwhile, Cook potatoes in a boiled water. Heat the oil in a pan, and fry the tomatoes. Set aside.
Once kebab is ready, remove kebab from the bowl and place it in a plate. Put cooked rice in the centre of bowl shaped kebab with potatoes and tomatoes. Garnish the rice with sumac ( special spice for kebab) .
It is sooo good.

کباب کاسه ای
کباب یکی از لذیذترین و پرطرفدارترین غذاهای ایرانی هست چه کباب روی ذغال – چه کباب تابه ای یا کباب پخته شده در فر.
طرز تهیه ی این کباب کاسه ای بسیار آسان و بسیار بسیار خوشمزه هست.

مواد لازم

سیصد گرم گوشت چرخ کرده گوساله

یک عدد پیاز

یک عدد نان تستی

سه چهار عدد سیب زمینی

سه چهار عدد گوجه فرنگی

صدو بیست گرم برنج

نمک و فلفل سیاه به میزان نیاز

روغن زیتون یا کره

طرز تهیه
فر را روی 200 درجه ی سانتیگراد گرم کنید.
پیاز را رنده کرده و آب پیاز را بگیرید.
یک تکه نان تست را در آب بخیسانید. نان را فشرده تا آب آن خارج شود. در یک ظرف گوشت چرخ کرده را با پیاز رنده شده – نمک و فلفل و نان مخلوط کنید و ورز دهید.
کف ظرف پیرکس را کمی کره یا روغن بزنید. گوشت را در ظرف پخش کنید بطوریکه تمام کف ظرف و دیواره ی پیرکس با گوشت پوشیده شود. روی گوشت کمی روغن پخش کنید

.
کاسه ی پیرکس را داخل فر گذاشته برای 20-15 دقیقه بپزید.
در همین ضمن – سیب زمینی ها را آبپز کنید. گوجه ها را در کمی روغن سرخ نمایید.
وقتی کباب آماده شده از داخل کاسه ی پیرکس بیرون آورده و داخل ظرف مورد نظرتان قرار دهید. کته ی پخته شده را وسط کباب قرار دهید- مقداری سماق روی کته بریزید و با سیب زمینی و گوجه فرنگی سرو نمایید.
