Ash Doogh (Azerbaijani Dovga Soup)

Today I made Aash-e doogh (dovga aashi). Maybe you ask what is Aash? In Iranian cuisine  there are two kinds of  liquid food.  Aash is a thick soup and exactly like soup made with variation of vegetables, or noodles,, stocks and spices. My aash today   is called Ash-e doogh  in Persian language and is called  Dovga Ashi or Ayran ashi in Azerbaijani . There are different recipes for this aash, and this is Ardebili version of Ash-e Doogh.

It is a super delicious, healthy nutritious and pleasantly refreshing and tangy yogurt soup that is called Dovgha aashi or yogurt based soup.

You can have dovga ashi any time of the year : as a warm soup in the winter time or as a refreshing cold soup in hot summer time.

Yogurt Aash made from plain yogurt and water with, fresh and aromatic herbs such as coriander, parsley, dill, mint, chives directly from grocery  and tender cooked chickpeas or white beans.

You may have this meal as a starter or as a main course with hot fresh bread. Traditionally it is served in large bowls called ‘ kaaseh’ and in smaller bowls called ‘ peyyaleh’.

This beautiful super tasty aash with fresh herbs is  popular in Iran, specially in NW of country in ancient city of Ardebil which is located in Azerbaijani part of Iran .

Ardebil is known for it’s trade in honey and carpet. Also, Twenty two sites in Iran are inscribed by the UNESCO on the list of the Worlds Heritage sites. One of them is located in Ardebil.

Ingredients

  • 2 kg plain yogurt
  • 1 litre water
  • 1 egg
  • 1 ½ cups cooked chickpeas or white beans
  • 1 cup rice, washed
  • 150 g ground beef or lamb
  • 1 onion, grated
  • 2 bunches of coriander
  • 2 bunches of parsley
  • 2 bunches of dill
  • 2 bunches of chives or green part of spring onions
  • 2 tbsp plain flour
  • 3 cloves of garlic, grated
  • 1 tsp dried mint
  • Salt and black pepper to taste
  • Vegetable oil

 

 

How to make it?????

Herbs  would be chopped , washed and drained on a colander. Mix ground meat with grated onion, add some salt-pepper and make small meat balls and set aside.

Now, in a large pot add yogurt and whisk it until smooth. Then crack the egg in a bowl, beat it and add beaten egg, washed rice and flour to the yogurt and combine together.

Next add water into the pot and mix until you have a smooth yogurt based liquid ( if you like to have a thin soup, simply add more water ).

In this step, place the pot on the high heat and with a wooden spoon or spatula constantly stir until bring it to a boil ( it will take about 10-15 minutes). Keep stirring  to prevent the liquid from curdling. Once started to boil, bubbles will appear on the surface.

Now reduce the heat. Stir in chopped herbs, chickpeas and meat balls. Give a stir and allow to cook for 20 minutes until meat balls and rice cooked.

 

Then remove from the heat and add grated garlic, salt and dried mint, stir for 2-3 minutes and aash is ready. In some recipes, you may fry dried mint in a little oil and garnish the soup too.’

Ash Doogh (Azerbaijani Dovga Soup)

Ingredients

Sugared Grapes (انگور شکری)

This is a fun recipe. Super easy and beautiful. Every one will enjoy it, especially children. So obviously star of this recipe is grape. You can choose red- dark purple, or green grapes. Basically it is coating the grapes with sugar. You can use regular granulated sugar or coloured flavoured sugar.

All are beautiful. With granulated sugar you can make grapes like frosted grapes and with coloured sugar you make your grapes like precious gem stones.

They are so good in parties, or on the cakes or with turkey meals.

انگور شکری

طرز تهیه این انگورهای زیبا فوق‌العاده آسون و سریع هست. قول میدم همه دوست داشته باشن مخصوصن کودکان. خوب همونطور که مشخصه ستاره ی امروز انگور هست . شما می تونید از هر رنگ انگور استفاده کنید : انگور سبزیاقوتی یا قرمزو همچنین می تونید از شکر سفید عادی استفاده کنید که باعث میشه انگورها شبیه انگور برفی و یخ زده دیده بشن و یااز شکرهای رنگی و طعم داراستفاده کنید که انگورهای شما رو شبیه سنگهای جواهر خواهند کرد.

با این انگورهای شکری می تونید کیک یای شیرینی تزیین کنید.

مواد لازم

چند شاخه انگور سبزیا قرمز

آب سیب

شکر سفید یا رنگی و طعم دار

طرز تهیه

انگورها را بشویید. می‌توانید انگوررا به صورت خوشه تزیین کنید و یا حبه حبه. انگور را ابتدا داخل آبمیوه قرار داده و سپس از شکر روی آن‌ها بپاشید یا داخل شکربغلطانید.

بگذارید انگورها خشک شوند و نوش جان کنید.

Kutab (An Azerbaijani Stuffed Flat Bread Naan)نان قطاب آذربایجانی

Qutab or Kutab is an Azerbaijani gorgeous and very thin flat bread (naan) which is typically filled with ground meat and onions or green herbs such as mixture of spinach, dill, coriander, … spices and cheese . So, Kutab comes with different fillings and you can change the filling because as I mentioned, you can use any fillings you choose. In North Khorasan Province and NW of Iran this kind of bread (naan) is popular too.

In Indian and Afghanistan cuisines also you can find stuffed bread with different names such as paratha or bolani. Kutab or Qutab is mostly eaten for breakfast. For garnish the bread typically use sprinkle of Sumac or pomegranate seeds, that gives double taste to the bread.

With my recipe you can make 10-12 kutab breads which are medium size but if you make  them in smaller size, you will have more breads.

The size of this kind of bread should be in the size of a medium size pan. For making dough I offer two different recipes one with egg and other one egg free. So it would be your choice 🙂 . And now   I am going to introduce kutab with 2 different fillings 🙂 . Seriously they are sooooooooo good and sometimes I wish I could share them with all you guys.

Ingredients for dough

  • 500g plain flour
  • 350 ml cold water
  • 1 egg
  • ½ tsp salt

  • 625g plain flour
  • 420ml cold water
  • 2 tbsp vegetable oil
  • 2 tsp salt

 

Ingredients for meat filling

  • 300g ground beef or lamb
  • 1 large onion, peeled and grated
  • ½ tsp turmeric
  • ¼ tsp cumin
  • Salt and black pepper to taste

Ingredients for vegetables filling

  • 70g Spinach
  • 20g dill
  • 10g parsley
  • 10g coriander
  • 20g chives
  • 130g Feta cheese ( or goat cheese, or cheddar, Parmesan, mozzarella cheese)
  • ½ tsp dried mint
  • Salt and black pepper to taste
  • 2 tbps Olive oil

How to make it?????

This is how to make egg free dough: In a bowl, add flour, salt and oil. Combine together and then add water. Mix until you have dough. If the dough is dry add some water and if the dough is sticky add some flour.Knead the dough for 3-4 minutes. Cover the dough and let it to rest for half an hour.

And this is how to prepare dough with egg: In a bowl mix water, egg and salt. Then, add flour to it and combine until dough is formed. Knead the dough for few minutes. Cover the dough and let to rest for 30 minutes.

Now, let’s prepare the fillings: In a bowl mix ground meat, grated onion with turmeric, cumin, salt and pepper. Combine well. Heat the oil in a pan and fry the meat until browned and set aside.

For herbs filling:Roughly chop herbs. Add crumbled cheese, virgin olive oil, to the herbs and season with salt and pepper and mix together.

Now fillings are ready. After 30 minutes, divide the dough into 10 or 12 balls. Use a rolling pin and on a floured surface, roll each dough until you have a thin circle.

Now Spread some of meat mixture or herb mixture On one half of a circle. Fold the other half of the circle over the filling and press edges with your fingers to seal it. Now cut the edges with a cutter to give a nicer shape.

Heat a dry pan over medium heat. Place prepared breads and cook each side for 3-4 minutes on each side until golden.

Remove from the pan and rub a piece of butter on the bread while is hot, and sprinkle some sumac on the meat stuffed bread and sprinkle pomegranate seeds on the herbs bread.

نان قطاب

این نان اسامی گوناگونی دارد مثل نان قوتابقطاب یا کوتاب . کوتاب یک نوع نان پهن شکم پرمعروف در جمهوری آذربایجان هست. این نان در مناطق آذری زبان ایران تهیه می‌شود و به ختاب معروف است . نان ختاب همینطور در استان خراسان شمالی و در شهر بجنورد – پخت شده و طرفداران فراوانی داره. همانطور که این نان به اسامی مختلف نامیده میشه درشهر های مختلف هم دستور خاص خود را دارد. لطفن اگر در شهرهای دیگر ایران هم چنین نانی پخت میشه در کامنت این پست یادآوری کنید خوشحال میشم بدونم .

نان کوتاب یا قوتاب از یک خمیر بسیار ساده درست میشه و به صورت سنتی با گوشت چرخ کرده و پیاز ویا با سبزیجاتی همجون اسفناج – کدو تنیلگشنیزجعفرینعنا و پنیر پر مییشود.

ولی مواد میانی نان را می تونید به میل خودتون تغییر داده و سبزیجات مورد علاقه خودتون رو استفاده کنید.

در آشپزی هندی و افغانستانی نیز این نوع نان پخته میشه که به اسامی پاراتا و بولانی معروف هستند.

نان ختاب یا قطاب معمولن برای صبحانه صرف میشه . وقتی این نان پخته شد روی نان سماق یا دانه‌های انار می ریزند که مزه ی نان را چندبرابر خوشمزه تر میکنه.

برای تهیه این نان طرز تهیه دو نوع خمیر را ارائه کردم یکی با تخم مرغ و دیگری با تخم مرغ و همینطور دو نوع نان شکم پر یکی با گوشت و دیگری با سبزیجات و پنیر. این دو نوع نان شکم پر که امروز پختم بقدری خوشمزه بودن و من را هیجان‌زده کرد که آرزو کردم کاش میشد با همه ی شما این نونها رو تقسیم کنم و ببیننید جقدر خوشمزه هستن.

مواد لازم برای خمیر با تخم مرغ

پانصد گرم آرد همه منظوره

سیصدو پنجاه میلی لیتر آب سرد

یک عدد تخم مرغ

نصف ق چ نمک

مواد لازم برای خمیر بدون تخم مرغ

ششصدوبیستوپنج گرم آرد همه منظوره

چهارصدوبیست میلیلیتر آب سرد

دو ق ع روغن مایع

دو ق چ نمک

مواد لازم گوشتی

سیصد گرم گوشت چرخ کرده

یک عدد پیاز درشت رنده شده

نصف ق چ زردچوبه

نصف ق چ زیره

مقداری سماق

نمک و فلفل سیاه به میزان نیاز

مواد لازم برای سبزیجات

بیست گرم شوید

بیست گرم گشنیز و جعفری

بیست گرم تره

صدوسی گرم پنیر تبریزی یا هر نوع پنیر دیگر مانند چدار – پارمزان یا مازارلا

نصف ق چ نعنا خشک

نمک و فلفل سیاه به میزان لازم

دو ق غ روغن زیتون

کمی دانه انار

طرز تهیه

برای تهیه خمیر بدون تخم مرغ: داخل یکی کاسه آرد – نمک و روغن را هم بزنید و سپس آب را افزوده و خوب مخلوط کنید تا خمیر یکدستی داشته باشید. اگر خمیر شل بود و به دست می چسبیدی کمی آرد و اگرخشک بود کمی آب اضافه کنید و سه چهار دقیقه خمیر را ورز دهید. روی آن را بپوشانید و بگدارید برای نیم ساعت استراحت کند.

برای تهیه خمیر با تخم مرع: داخل کاسه آبتخم مرغ و نمک را با هم مخلوط کنید و بعد آرد را به آن افزوده و خوب همه ی مواد را با هم ترکیب کنید و سه چهار دقیقه خمیر را ورز دهید تا خمیر آماده شود. روی خمیر را پوشانده و بگذارید نیم ساعت استراحت کند.

تا آماده شدن خمیرها مواد میانی نان‌ها را آماده می کنیم: داخل یک‌کاسه گوشت چرخ کرده را با پیاز رنده شده – زردچوبه – زیره – نمک و فلفل مخلوط کنید. داخل تابه کمی روغن را گرم کرده و گوشت را سرخ کرده و کنار بگذارید تا خنک شود.

برای سبزیجات هم می بایست سبزیجات را درشت خرد کرده و پنیر خرد شده – نعنا خشک– روغن زیتون و نمک و فلفل را به سبزی افزدوه و همه مواد را با هم مخلوط کرده و کنار بگذارید.

حالا خمیر هم آماده هست. به صورت سنتی اندازه این نان می بایست به اندازه ی دست یک فر بالغ باشد و درنتیجه با این میزان خمیر می‌توانید 12-10 نان تهیه کنید ولی اگر خمیر کوچکتری داشته باشید میزان نان‌ها افزایش خواهند یافت.

خمیر را تقسیم کرده و یک جانه خمیر را روی سطح آردی قرار داده و با وردنه آن را به صورت یک دایره نازک در آورید. روی یک نیمه نان مقداری از مخلوط گوشت و یا سبزیجات ریخته و نیمه دیگر خمیر را روی نیمه گوشتدار قرار دهید ( مطابق تصاویر)

لبه های خمیر با با انگشت بفشارید تا دور نان بسته شود .برای شکیل شدن نان با کاتر پیتزا دور نان را برش دهید .

یک تابه را به صورت خشک روی حرارت داغ کرده و نان‌ها را در تابه سرخ کنید. هر طرف نان 4-3 دقیقه وقت نیاز دارد تا برشته شود.

وقتی نان آماده شد. کره را روی نان بمالید تا سطح نان کره ای شود. روی نانهای گوشتی سماق و روی نانهای سبزی دار دانه انار بریزید و نان‌ها را سرو کنید. این نانها به تنهایی یک غذای ساده – سالم و خوشمزه هستند و یا در کنار سوپ نوش جان کنید.

Persian Loobia Polo (Green Bean Rice With Minced Beef)

Today I am going to introduce Persian Green bean rice with minced beef. Green bean is called Loobia /lubia in Farsi language. Green bean rice or lubia polo is a popular and comfy rice dish and is one of my favourites too. It is a rice dish, which is layered with rice and mixture of a sauce made of green beans with beef or lamb meat aromatic spices and tomatoes. You may make this meal with either minced or diced meat.

If you are a vegetarian, simply delete meat from the ingredients and add chopped carrots, still is a veryyyyy delicious vegetarian version of green bean rice or lubia polo.

Ingredients

  • 3 cups rice, washed and soaked in salted water
  • 400g minced beef or lamb
  • 400g fresh green beans, washed and diced
  • 1 large onion, peeled and finely chopped
  • 3tbsp tomato paste
  • 2tbsp saffron water (optional)
  • 1tsp turmeric
  • ¼ tsp black pepper
  • 1tsp dried rose petals powder
  • 1tsp cinnamon powder
  • ½ cup hot water
  • Salt to taste
  • Olive oil

How to make it?????
In a pan, heat the oil and add chopped onion. Constantly stirring until soft. Then add minced beef, and dried spices: salt- pepper, cinnamon, dried rose petals powder, turmeric and tomato puree.

Saute for 5 minutes until all ingredients blended and meat is fried. Once meat mixture is done, turn off the heat and set aside.

Heat the oil in a pan and add chopped green beans. Fry for 6-7 minutes, then add meat mixture to the green beans and mix well together. Add ½ cup hot water to the mixture. cover and let it simmer until the water is absorbed.

Now we are going to prepare the rice: In a pot, bring 8 cups of water to a boil. Drain the salted water of the rice and pour the rice into the boiling water. Allow to cook for 10 minutes on medium heat. Then use a colander and drain the semi cooked rice.

Add some oil to the pot. Cover bottom of the pot with slices of potatoes as you see in the photo.

Add a layer of rice and top it with mixture of meat and green beans sauce. Repeat the process until you finish all ingredients. Sprinkle saffron water all over the rice.

Cover the pot with a lid and allow to cook the rice over the medium to low heat for 30 minutes. Once rice is cooked, serve it in a plate, and gently remove crispy potatoes from bottom of the pot and along with yogurt-cucumber mixture or salad Shirazi serve it. Noshe jan

Ingredients

3 cups rice, washed and soaked in salted water

2tbsp saffron water (optional)

1tsp turmeric

¼ tsp black pepper

1tsp dried rose petals powder

1tsp cinnamon powder

½ cup hot water

Salt to taste

Olive oil

How to make it:


In a pan, heat the oil and add chopped onion. Constantly stirring until soft. Then add minced beef, and dried spices: salt- pepper, cinnamon, dried rose petals powder, turmeric and tomato puree.  
Saute for 5 minutes until all ingredients blended and meat is fried. Once meat mixture is done, turn off the heat and set aside.

Ruby Rice (Yaqoot Pilaf)

This is other Afghani rice dish which is called yaqoot pilaf or Ruby pilaf, due to it’s gorgeous colour that is taken from the cherries and is a reminder of Ruby gem stone. Yaqoot means Ruby the precious gem stone.

This rice dish is similar to an Iranian dish which is made with sour cherries , and  in following photo you can see a photo of this rice :

Ingredients

  • 3 cups rice, soaked in salted water for 1-2 hours before cooking
  • 1 cup fresh or frozen sour cherries ( tart cherry, Morello cherry)
  • ½ cup white sugar ( if you wish your rice has a mild sweet taste)
  • ½ tbsp cardamom powder
  • ½ cup water
  • Olive oil

How to make it?????

In a pot with cherries add sugar and cardamom. Pour ½ cup water on it and allow to cook for over low heat for 15 minutes.

Ruby Rice (Yaqoot Pilaf)

Ingredients

3 cups rice, soaked in salted water for 1-2 hours before cooking

1 cup fresh or frozen sour cherries ( tart cherry, Morello cherry)

½ cup white sugar ( if you wish your rice has a mild sweet taste)

½ tbsp cardamom powder

½ cup water

Olive oil

How to make it?????

In a pot with cherries add sugar and cardamom. Pour ½ cup water on it and allow to cook for over low heat for 15 minutes.

Green rice (Zamarod pilaf)

Green rice or herbed rice is popular in many countries. For example in Iran we make herbed rice with dill or other green rice which is mixture of fresh herbs including: coriander, parsley, dill, chives, fenugreek. In following photo you can see Persian herbed rice (Sabzi polow).

Or there is a Mexican rice dish made with cilantro, and parsley. Among Indian rice dishes also are herbed rice meals.

My today recipe is Afghani green rice cooked in spinach and meat stock. In some versions of this rice dish there is a combination of spinach, dill and cilantro too. This gorgeous rice dish is called ‘ Zamarod pilaf’in native language.  ‘Zamarod’ means ‘Emerald’ the green precious gem stone. This rice dish is served in parties or wedding ceremonies.

So, if you are or not Spinach lover, just give a try to this recipe and then you will just love it. Very tasty simple rice dish. The deep green colour of this rice comes from taking juice of blended spinach.

Ingredients

How to make it?????

Heat the oil in a pan and sauté spinach for 2-3 minutes. Remove it from the heat. Add salt, cumin powder and meat broth to the fried spinach (for the extra flavour) and blend the spinach mixture well in blender. Use a sieve and strain it in order to separate juice from leaves. Now we have  spinach juice as a colouring agent for our rice.

 

Now for cooking rice, bring the water to a boil in a pot. Drain the salted water of rice and pour the rice into the boiled water. Allow to cook for 10 minutes. Remove from the heat. Use a colander and drain the rice.

 

Turn the rice back into the pot. Add spinach juice to the rice and mix it well. There is no necessity to use all of the spinach juice. Just add enough to give good green colour to the rice. Place the cooked meat among the rice. Cover the pot with a lid and allow to steam for 20 minutes.

Tas kebab( Persian Meat & Vegetables Stew)

Tas kebab is a Persian beef/lamb and vegetables stew. Traditionally it’s made with lamb but you can make it with beef, or veal too. In some different versions you may add eggplants and  quince too.

Tas kebab is a hearty and tasty stew with aromatic spices and fresh vegetables like carrots, potatoes, onions, ….which is enjoyed in Iran, Greece, Turkey and the Republic of Azerbaijan.

Traditionally the meat should be cut into chunks. The sauce of tas kebab is reddish due to tomato paste. You can serve it with either rice or flat bread.

Ingredients

  • 300g diced beef or lamb meat
  • 50g Beef dripping
  • 1 bell pepper, diced it
  • 1 large carrot, peeled and cut into round shape
  • 1 large onion, cut into rings
  • 1 large onion, finely chopped
  • 6-7 cherry tomatoes
  • 150g green beans, cut into small pieces
  • 200g potatoes, peeled and cut into pieces
  • ¼ tsp black pepper
  • ¼ tsp chilli flakes
  • ½ tsp turmeric
  • 1/2 tsp paprika
  • Salt to taste
  • 1 tbsp tomato paste
  • ½ tsp saffron water ( optional)
  • Olive oil
  • 2 ½ cups water

How to make it???

Place the diced meat in a pan. Finely chop one of onions and add it to the meat, season with black pepper. Set the pot on the stove and fill it with water. Bring the water to a boil, then turn the heat down and cover the pot with a lid. Simmer the beef until tender.

While, beef is cooking, heat the oil in a pan and fry potatoes and carrots for 7-8 minutes. Then add chopped green beans, onion and bell pepper and fry for 5 minutes. Transfer fried veggies to a pot.

Once meat is cooked, add beef dripping ( the benefit of cooking with animal fats is just a nice flavor) and all spices but saffron water and let to fry for 5 minutes. Add meat to the pot.

Mix 2 ½ cups of water with tomato paste and saffron water and pour it over all the ingredients , add tomatoes and let to simmer for half an hour..

Serve tas kebab with rice or flat bread such as Persian Lavash naan bread, pitta bread ,…

Roses Carrot- Zucchini Tart

This colourful tart will get all attention at a party. I love the contrast between colours in this dish.

Ingredients

  • 1 puff pastry sheet
  • 2 eggs
  • 1 large green zucchini
  • 6 orange- purple and yellow carrots
  • 350g ricotta cheese
  • 100g mozzarella cheese or Feta cheese
  • ¼ tsp nutmeg powder
  • ¼ tsp black pepper
  • ½ tsp dried mint or oregano
  • Salt to taste

How to make it?????

we need a tart pan. Now unfold puff pastry, just big enough to cover the pan. Trim the excess. Place a piece of parchment paper in as shown. Place some beans on it, in order to avoid moving the paper.

Place it in the oven and allow to bake on 200C degree for 15-20 minutes. Once it is baked, let it cool down.

 

Now, in a large bowl whisk the eggs, then add ricotta and mozzarella cheese, dried herb, nutmeg, pepper, salt and mix all ingredients well together.

Preheat the oven to 200C degree. Slice zucchinis and carrots lengthwise and very thin.

Now, spread the cheese mixture in the baked puff pastry. Now we are going to make rose shape rolls. So for making a rose shape roll you would need 3 slices of zucchini or carrot Then take one slice of zucchini or carrot and roll it. Take second slice and rolling around the first one.

Place each one of the rose buds among the cheese mixture. Carry on with remaining of the ingredients and repeat the process and place each one next to the other one.

Once you finished rolling , spray some vegetable oil on rolled vegetables. Transfer the tart pan into the oven and allow to bake for 45- 50 minutes.

Zucchini Flat(naan)Bread

Naan / noon /nan is a Persian word and means bread. Naan is a kind of flat bread found in the Iranian cuisine, Azerbaijani, Turkish, Indian and Middle East countries.

Naan being freshly prepared in tandoor and we can get fresh beautiful naan for breakfast, lunch and dinner from bakery everyday. There are loads of different kinds of naan bread. All are gorgeous, tasty and beautiful. Today I baked my zucchini flat bread.

Zucchini flat bread naan, is a favourite treat. Zucchini which is called ‘ Kadoo’ makes main roll in keeping the bread soft and moist. It is a beautiful combo of zucchini with onions, cheese and spices. I have used mozzarella cheese, but it goes well with feta or cheddar cheese too. These are Sooooooo good. Sooooooo delicious and hearty naan bread.

Ingredients

  • 3 cups all purpose flour
  • 1 large zucchini, grated
  • 2 eggs
  • 1 onion, finely chopped
  • 30-40g Cheese (feta cheese, mozzarella cheese or cheddar cheese)
  • 40-50 ml water
  • 1tsp baking powder
  • 2tsp salt
  • 1tsp paprika
  • 1.2 tsp chilli flakes
  • Vegetable oil

How to make it?????

Grate the zucchini and squeeze to release the juice. Add chopped onion, eggs, cheese and season with spices. Mix all together. Then add flour, baking powder and combine with hand. Slowly add water to the batter and knead it for 2-3 minutes. If the batter is sticky add some flour. Make a ball and cover the dough and allow to rest for 1 hour.

After an hour, place the dough on a floured surface and divide the dough into 8 pieces. Roll each dough into a small ball.

On a floured surface, using a rolling pin and roll it into a flatten circle.

Heat a little bit oil in a pan and add in flattened dough. Once one side fried ( 3-4 minutes) flip over and fry other side.

Walnuts Snowballs

These beautiful cookies could be made with walnuts or pecan. They are buttery, with plenty of walnuts and full of flavour. It’s surprisingly easy recipe to follow.

  • 113g unsalted butter, room temperature
  • 3tbsp white sugar
  • 1tsp vanilla extract

How to make it?????

In a large bowl, add all ingredients and mix it up by hand. Keep mixing until turning into a dough. Then warp it up in plastic and refrigerate it for half an hour to chill. By this way, would be easier to roll it up afterwards.

Preheat the oven to 176C degree. Now open the dough and roll them into small balls and place them on a parchment paper lined tray. Transfer the baking tray into the oven and allow to bake for 15 minutes.

Once they are done, they are fragile so let them cool for 5 minutes.

Now still they are warm, so coat them with powdered sugar and because they do not take much sugar at first time, so after 15 minutes when they are cool, roll them in powdered sugar for the second time and that’s it. Enjoy it 🙂

این کیک های توپی رو میشه با پی کنPecanنوعی گردوگرمسیری و یا با گردومعمولی درست کرد. معمولن نزدیک کریسمس که میشه یکی از شیرینی‌هایی که در منازل درست میکنن walnuts snow balls هست که توپک های خیلی خوشمزه ی کره ای و پر از گردو هستن. طرز تهیه ی این توپک ها بقدری ساده هست که تعجب خواهید کرد. نکته ی دیگر اینکه می تونید خمیر مایه را از چند روز یا چند هفته قبل آماده کرده و در یخچال نگه دارید و بعد آن‌ها را بپزید.

مواد لازم

یک پیمانه آرد همه منظوره

یک پیمانه گردوی خرد شده و بوداده شده

صدوسیزده گرم کره بدون نمک و نرم

سه ق غ شکر سفید

یک ق چ عصاره وانیل

پودر قند

طرز تهیه

داخل یک‌کاسه بزرگ تمام مواد لازم را ریخته و با دست مواد را آنقدرمخلوط کرده و ورز دهید تا به صورت خمیر یک‌دست در آید. سپس خمیر آماده شده را داخل پلاستیک پیچیده و برای نیم ساعت در یخچال نگه دارید تا کمی سفت شود.

بعد از نیم ساعت فر را روی حرارت 176 درجه سانتیگراد گرم کنید. سینی فر را با کاغذ آشپزی بپوشانید. خمیر آماده شده را از پلاستیک خارج کرده و مطابق تصاویر توپک های کوچکی به اندازه ی گردو درست کنید وداخل سینی فر قرار دهید.

سینی را داخل فر گذاشته تا برای 15 دقیقه کیک ها بپزند. وقتی آماده شدند سینی را از فر خارج کرده و چون کیک ها حالت ترد و شکننده دارند بگذارید برای 5 دقیقه بمانند و سپس در حالیکه هنوز گرم هستند داخل پودر قند بغلطانید ولی چون دفعه اول کاملن پودر قند را بخود نمیگیرند بگذارید 15 دقیقه بمانند و وقتی سرد شدند برای بار دوم باز در پودر قند غلطانده و حالا می‌توانید نوش جان کنید.
