Scrambled eggs

A delicious and popular dish in all over the world. It is made from beaten white and yolk eggs.

Ingredients

  •  2 eggs
  • 20 g butter
  • 1/2 tbsp. crème fraiche
  • Salt – Pepper to taste

Instructions

Crack the eggs in a pot, add butter. Don’t add slat as it will cause watery eggs. Place the pot over low heat and start to stir slowly.

Keep stirring until eggs aقe runny. Remove from the heat, add cream fraiche, still keep stirring.

Place it back on the heat and stir for 1 minute more. Now, you could add salt and pepper.

And serve it with toasted bread and fried cherry tomatoes.

اسکرمبلد اگز – تخم مرغ همزده

 نتونستم معادلی برای این نوع تخم مرغ پیدا کنم. اسکرمبلد اگز شامل زرده و سفیده ی تخم مرغ هست که با کره و شیر (یا خامه ی ترش)- نمک و فلفل تهیه میشود. نکته ی کلیدی در این نوع املت همزدن مداوم آن هست تا لحظه ای که آماده میشه.

مواد لازم

دو عدد تخم مرغ

بیست گرم کره

یک دوم ق غ خامه ترش

نمک و فلفل به میزان لازم

طرز تهیه

تخم مرغ ها را داخل قابلمه شکسته و کره را اضافه کنید. نمک در این مرحله لازم نیست چون باعث میشود تخم مرغ ها بعد از پخت آب بیاورند.

قابلمه را روی حرارت ملایم قرار دهید و به آرامی شروع به هم زدن مواد کنید. وقتی کره آب شد و تخم مرغ ها کمی خود را گرفتند از روی حرارت برداشته و همچنان همزدن را ادامه دهید و خامه ی ترش را اضافه کرده و باز هم بزنید.

سپس قابلمه را مجددن روی حرارت قرار داده و همچنان مواد رابرای 1 دقیقه ی دیگر هم بزنید. حالا تخم مرغ ها آماده هستند و می توانید نمک و فلفل را اضافه کنید. اسکرمبلد اگز رامی توانید با گوجه فرنگی سرخ شده و نان کره ای میل کنید.

I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
