Spinach soup

What about  a healthy, filling and a light green soup for today!!

200g spinach
1/2 cup brown lentils
1/2 cup barley
2 medium onions, peeled and finely chopped
2 cloves of garlic, peeled and finely chopped
Parsley stalks
Olive oil
Salt – pepper to taste


Heat the oil in a saucepan, add chopped onions and garlic. Add salt and pepper. Fry gently until softened but not coloured.

Meanwhile, Add 800 ml water to a pot and cook dry lentils and barley. Cover the pot, reduce the heat and simmer until cook tender.
Chop parsley and spinach, add it to the onions and cook for 5 minutes. Once lentils and barley are cooked, add fried mixture to the lentils and barley. Let it to cook for 10 minutes more.
Garnish it with yogurt and chopped parsley.


سوپ اسفناج

یک سوپ سبک – سالم و مقوی هست  که زیاد وقتتون رو در آشپزخونه نمیگیره.


مواد لازم

دویست گرم اسفناج

نصف پیمانه  عدس

نصف پیمانه جو

دو عدد پیاز نگینی خرد شده

دو حبه سیر ریز خرد شده

چند شاخه جعفری

روغن زیتون

نمک و فلفل به میزان لازم



طرز تهیه
روغن را در ماهی تابه داغ کنید. پیاز و سیر خرد شده را به همراه نمک و فلفل به ماهی تابه بیفزایید. کمی آنها را تفت دهید تا نرم شوند ولی رنگ شان تغییر نکند. جعفری و اسفناج را خرد کرده و به پیاز و سیر اضافه کنید و بگذارید به مدت 5 دقیقه پخته شوند.
سپس 800 میلی لیتر آب را درون قابلمه ریخنه و عدس و جو را به آن اضافه کنید. در قابلمه را گذاشته و احازه دهید با حرارت ملایم پخته شوند.

وقتی عدس و جو پخته شد- به مواد تفت داده شده در بالا بیفزایید و برای 10 دقیقه ی ذیگر بگذارید با هم پخته شوند.
سوپ آماده شده را می توانید با ماست و جعفری خرد شده تزیین نمایید.

Iranian cuisine is a combination of rice with meat ( chicken, beef, lamb, fish, turkey), nuts, fruits, dried and fresh herbs and vegetables. Iranian food is a celebration of flavor, colour and spices such as: saffron, cinnamon, cardamom, turmeric, dried rose petals, dried limes, cumin, .... I share my recipes in Farsi/English along with step by step photos of preparation. I take all my own pictures. I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
