Herb stuffed bread ( herbs samosa)

This is a very simple but healthy and tasteful recipe.  For wrapping herbs, I  use a kind of  Iranian bread that is called ‘ Lavash bread similar to tortilla bread .



  • 3 lavash bread (Tortilla bread)
  • 30 g parsley leaves
  • 30 g spring onions
  • 50 g spinach leaves
  • ½ Tsp turmeric powder
  • Salt- pepper to taste
  • Plain yogurt
  • Butter
  •  1tbsp flour


Wash and finely chop all the green. Melt the butter in a pan. Add all spices and chopped herbs . Saute for 5 minutes until soft, set aside.

Mix the flour with a little bit of water to make glue like paste and set aside. Cut the crusts of the bread as you see in the photos, and give rectangular shape. Take 1 Tbsp of herbs mixture and put on the bread. Wrap the bread according to the photos.
Seal the edge of each bread with flour glue. Repeat the processe with remaining of the ingredients.

Heat the oil in the pan and fry all the wrapped breads until both sides are golden brown.
Serve hot with garlic yogurt or plain yogurt.


سمبوسه ی سبزیجات با نان لواش
این دستور تهیه ی سمبوسه بسیار آسان می باشد. یک غذای سالم – خوشمزه وآماده کردن آن فوری

مواد لازم

نان لواش –

سی گرم برگ چغندر –

سی گرم پیازچه –

پنجاه گرم اسفناج –

نصف ق چ زردچوبه –

یک ق غ آرد –

نمک و فلفل به میزان لازم –

ماست –

کره –


طرز تهیه
سبزیها را شسته و خیلی ظریف خرد کنید. کره را در تابه آب کنید. تمام ادویه ها و سبزیجات را برا ی 5 دقیقه تفت دهید تا سبزیجات نرم شوند. وقتی آماده شدند آنها را به کناری بگذارید .
آرد را با کمی آب مخلوط کنید و خمیر آبکی تهیه کنید . نان لواش ها را به صورت مستطیل های کوجکی برش دهید . 1 ق غ از مخلوط سبزیجات راداخل نان گذاشته و مطابق شکل نان را تا کنید. در انتها مقداری از چسب آردی روی لبه ی نان بزنید و آن را با انگشت به آرامی فشار دهید تا بهم چسبیده شوند.

مقداری روغن را در تابه داغ کنید و بسته های نان را در روغن سرخ کنید تا هر دو طرف آن طلایی شوند. این خوراک خوشمزه را با ماست و سیر یا ماست تنها می توانید سرو کنید.

I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
