Dupiazeh sibzamini دوپیازه سیب زمینی یا دوپیازه آلو

If you had a busy day and are not in mood to spend long time in the kitchen or do not know what to make, try this recipe. It’s very easy, hearty and extremely palatable dish.

Dupiazeh literally means ‘2 onions’ in Persian language. This dish is popular in cities such as Shriaz and Bushehr (South and SW of Iran).
Dupiazeh might be served with Persian Lavash naan bread ( pitta bread) or with rice.

Ingredients

  • 300g potatoes, cooked
  • 1 large onion, peeled and cut lengthwise
  • 1 -2 eggs
  • 50 g butter
  • 5tbsp olive oil
  • ¼ tsp turmeric
  • Salt and black pepper to taste

Preparation
I present two different way for preparing dupiazeh: One dish with eggs , and other one without eggs.
I cooked baby potatoes and did not peel them off, simply because with skins is tastier and potato skin has natural nutrition but if you do not like, peel them off and cut into small pieces.Melt the butter in a non-stick pan, also add oil and chopped onion.

Sauté onion until soft and slightly golden. Add turmeric, season with salt and black pepper. Stir well.
Add cooked potatoes and mix with onion. Gently stir. It’s done. Tthis is the one dish without egg/eggs.

But you might crack the egg/eggs in the potato mixture, gently stir and let egg cook.
Serve with Persian lavash bread ( or pita bread ).

دوپیازه سیب زمینی یا دوپیازه آلو

اگر امروز وقت یا حوصله ی زیادی برای پخت غذا ندارید و یا نمیدونید چی درست کنید. این غذارو امتحان کنید. دوپیازه ی سیب زمینی یا آلو یک غذای بسیار ساده و راحت هست. دوپیازه در شیراز و بوشهر خیلی طرفدار داره واگر می پرسید آلو هم داره یانه؟ باید بگم نه – فقط در شیراز زیبا به سیب زمینی ” آلو” میگن.
این غذای خوشمزه رو میشه با نان یا کته هم سرو کرد.

مواد لازم

سیصد گرم سیب زمینی آبپز

یک عدد پیاز درشت – پوست گرفته و طولی خرد شده

یکی دو عدد تخم مرغ

پنجاه گرم کره

پنج ق غ روغن مایع

یک چهارم ق چ زردچوبه

نمک و فلفل به میزان لازم

طرز تهیه
من به دو روش متفاوت دوپیازه رو تهیه کردم: یکی با تخم مرغ و دومی بدون تخم مرغ.
سیب زمینی ها رو با پوست آبپز کردم چون با پوست خوشمزه تر میشه و پوست سیب زمینی خاصیت زیادی داره اما گر شما دوست ندارید پوست سیب زمینی ها رو جدا کنید و در اندازه ی کوچک خرد کنید.
کره رو در یک تابه آب کنید- روغن مایع را نیز همراه با پیاز خرد شده به کره اضافه کنید. پیاز را تفت بدید تا نرم خیلی کم طلایی بشه ولی نباید به صورت سرخ کرده در بیاد. زردچوبه – نمک – فلفل و سیب زمینی ها رو هم اضافه می کنیم- به آرامی همه ی مواد را با هم مخلوط می کنیم. دوپیازه ی ساده آماده هست.
می تونید به مواد بالا 2-1 تخم مرغ هم اضافه کنید و هم بزنید تا تخم مرغ پخته بشه.
این غذای خوشمزه را با نان یا برنج می شه سرو کرد.
