This is a quick recipe for a crispy sweet and spiced apple strudel for a cold evening with a cuppa tea .
Ingredients
400g apple
1 lemon zest
1tsp lemon juice
1 sheet puff pastry
140g sugar
80g raisins
70g almond flakes
1 ½ tsp cinnamon powder
1tbsp flour
1tsp vanilla extract
100g unsalted butter
1 egg beaten
3tbsp milk
Icing sugar for dusting
Method
Preheat the oven to 190C degree.
Peel the apples and cut into the small pieces. Melt the butter in a pan. Add diced apples, lemon juice, lemon zest and raisins. Sauté for 5 minutes and remove from the heat.
In a bowl, combine the sugar with flour, vanilla extract and cinnamon. Stir well. Add it and almond flakes to the apple mixture and combine well.
Roll out the puff pastry and place the filling in the centre and fold the pastry. Seal the ends as well. with a sharp knife, give few thin shallow cut on top of the pastry.Mix egg with milk and brush pastry with egg-milk .
Sprinkle flour on baking tray. Transfer the pastry to the tray and bake it for 40 minutes until golden and crisp.
Served with custard and a cuppa tea or coffee.
