Eggs in bread baskets

These omelettes inside the bread baskets are so cute  and super easy to make them.

2 eggs
2 slices of bread
4 Tbsp of shredded cheddar cheese
Salt and pepper to taste
Dash of vegetable oil

Preheat the oven at 180 C.
Cut crusts of slice of bread. Roll out the bread with a rolling pin and make it thin. Slightly grease cake tin. Place one slice of thin bread in the cake tin and put some of shredded cheddar cheese on the bread then crack an egg top of the cheese. Season with salt and pepper.
Place it in the oven. Cook for 20 minutes. If you wish have hard egg, let it cooking for 30 minutes.

Persian Marmalade cookies ( Shirni Mashhadi )

These are Iranian version of shortbread cookies with marmalade. very buttery, delicious and flaky. These beautiful cookies are called Shirni Mashadi or Almani in Iran.They are flavoured with honey, butter and vanilla. garnished with nuts and dried fruits.

Once cookies are ready, two cookies are sandwiched together with strawberry- cranberry, orange jam or marmalade and garnished either with melted chocolate or chopped nuts, fruits and seeds.

600 g all-purpose flour
300 g unsalted butter
1 cup powdered sugar
¼ cup honey syrup
2 egg yolks
¼ cup milk
1 Tsp vanilla extract
Strawberry marmalade or jam, dried rose petals, ground pistachio, sun flower seeds, raisins for decoration of cookies.

Combine the butter and sugar in a food processor and beat until creamy ( 5 minutes). Add the egg yolks and hone syrup to above mixture and beat in for 1 minute. Then, add vanilla extract and the milk. Slowly add flour to the butter-sugar mixture . Mixing on low speed until just combined.
Wrap the dough with cling film and place it in the fridge for 1 hour.

Preheat the oven to 180 C.
Roll out the dough until 2 mm thickness. Use a cookie cutter and cut the dough. Place the cookies on baking tray and bake in the oven about 10-12 minutes. Once they are ready, let cool.
Brush honey syrup over the each cookie and sprinkle dried rose petals or sun seeds or raisins and pistachio.

Also you can spread a layer of strawberry marmalade on each whole cookie and place other cookie on top of it.
Once they are ready, you can store them in the fridge. These cookies are perfectly served with cup of tea or coffee!
