Sweet chilli and tomatoes pasta

This pasta made with roasted chilli peppers and tomatoes.


3 large tomatoes, halved
1 large red chilli
2 garlic cloves, grated
40 g ground almonds
1 cup green olives, chopped into small pieces
200 g dried pasta
150 g chicken breast, diced
Handful fresh basil leaves, chopped
Olive oil
Salt- chilli flakes to taste


Place the tomatoes and chilli skin side up on the baking tray and grill until charred. Then leave to cool and remove the skin from the tomatoes and chilli.
Place the ground almonds on a baking tray and cook under the grill for 2 minutes or until golden.

Heat the olive oil in a saucepan and Fry the diced chicken until golden, add chilli flakes and salt. Then add green olives, and grated garlic. Stir the toasted ground almond into the mixture.

Using a food processor, blend the chilli and tomatoes to make a puree. Add blended tomatoes and chopped basil leaves to the mixture and combine together.
Cook the pasta in boiling water for 10 minutes. Drain the pasta and transfer to a serving dish and pour over the sauce.

پاستای فلفل دلمه و گوجه فرنگی
این پاستای ایتالیایی با سس گوجه فرنگی و فلفل دلمه ی کبابی و پودر بادام تهیه میشود.



مواد لازم

سه عددگوجه فرنگی درشت از وسط نصف شده

یک عدد فلفل دلمه ی درشت

دو حبه سیر رنده شده

چهل گرم پودر بادام

یک پیمانه زیتون سبز خرد شده

دویست گرم پاستا

صدوپنجاه گرم سینه ی مرغ خرد شده

دو ق غ برگ تازه ی ریحان خرد شده

نمک و فلفل به میزان لازم


طرز تهیه
گوجه ها و فلفل دلمه را داخل سینی فرگذاشته و کباب کنید . بگذارید خنک شده و پوست آنها را جدا کنید.
پودر بادام را نیز درون سینی فر ریخته و برای 2 دقیقه در فر تست کنید.
روغن زیتون را گرم کنید و گوشت مرغ خرد شده را سرخ کنید – نمک و فلفل همراه با زیتون خرد شده و سیر رنده شده را به گوشت اضافه کنید . 2-1 دقیقه تفت دهید و سپس پودر بادام برشته شده را نیز به مواد بالا بیفزایید و به آرامی همه ی مواد را همچنان روی حرارت هم بزنید.
گوجه و فلفل کبابی را داخل غذا ساز ریخته و به صورت پوره در آورده و روی مواد سرخ شده ی بالا بریزید و با هم مخلوط کنید. سس آماده هست.
پاستا را در آب بجوش آمده 10 دقیقه بپزید . آبکش کنید و در ظرف مورد نظرتان سرو کرده و روی آن سس آماده شده را بریزید.

I share my recipes in Farsi/English along with step by step photos of preparation. I take all my own pictures. I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
