Garlic Bread With Cheese

I never can say NO to garlic bead. This recipe is one easiest recipes for preparing garlic bread.

Ingredients

one budget bread or Ciabatta loaf

2 cloves of garlic, grated

50g melted butter

½ cup shredded cheddar cheese

½ cup shredded mozzarella cheese

Pinch of  sweet chilli powder

Preparation

Preheat the oven to 175C.

Mix melted butter with grated garlic. Place bread on a baking tray and brush butter mixture on bread. Then, sprinkle over the cheese mixture and pinch of chilli pepper. Bake in the oven for 10- 15 minutes and until cheese is melted and lightly brown.

Jalebi ( Persian Zulbia )

Zulbia is a kind of deep fried pastry with saffron sugar syrup. It’s a fantastic and super tasty sweet. Zulbia has a crunchy, crispy texture. It is popular sweet in Iran, some African countries such as Algeria, Tunisia , Lybia, in Middle East countries and also in some of Asian countries. Zulbia has been mentioned in cooking book from 10th century.

Zulbia is called in different ways: Zulbieh, Jalebi, Zelabia. It’s one of most favorite sweets in Iran during Ramadan. There are different recipes , in some of them there is not yogurt but using yogurt gives a nice crispy –glassy texture to the zulbia. Among the ingredient for saffron –sugar syrup, there is rose water. If you have no access to Rose water or perhaps you do not like it, you can use orange blossom instead.

Ingredients

  • 1 ½ cups corn flour
  • 1 cup yogurt
  • 1 tbsp oil
  • 2 tbsp plain flour
  • 1/2 tsp baking soda

Ingredients for saffron syrup

  • 1 ½ cup sugar
  • 1 cup water
  • 1 tbsp  saffron water
  • 1/2 cup rose water ( or orange blossom )
  •  2 tbsp lemon/ lime juice

 

Preparation
In a large bowl with corn flour, add yogurt and mix well.
Add 1tbsp oil and plain flour. Mix it thoroughly to get a lamp free batter. Cover the batter with plastic wrap and let to rest for an hour.

 


Meanwhile we prepare saffron sugar syrup. In a pot add water and sugar. Stir until sugar is dissolved. Then add saffron water, rose water and lemon juice. Simmer for about 10 minutes and set aside. If you do not like rose water you can use orange blossom instead.

 


After an hour, add baking soda to the batter, mix well. Cover it with a plastic wrap and let to rest for 5-10 minutes.

Now you have a thin and runny batter. Pour the batter into a squeeze bottle.

 


Warm the oil on a high temperature. Now squeeze the bottle in order to pour some of the batter in hot oil. Try to give ring shape to the batter and fry both sides. Then, soak fried zulbia in the WARM sugar syrup for 30 seconds. Place them in a plate and garnishing with chopped pistachio or leave it plain.

Traditional Herb Salad with Bread and Cheese (Sabzi Khordan)

In Persian food table you will always have vegetable or herbs salad in summer time and different types of pickles in winter season. These salads are made of fresh fruits or vegetables that usually housewives are buying straightly fresh from vegetable grocery.

In my country when we buy herbs, it is always selling in big bunches of very fresh herbs ( Sabzi khordan) . Popular herbs or Sabzi khordan in our Persian table includes: chives , radish. scallion . mint , dill , basil . parsley , coriander tarragon  and watercress


You need to pick herbs from stalks and then put them in a big bowl of cold water and let soak for 10 minutes and then drain in a colander. You can keep them fresh for few days in the fridge by wrapping herbs in a cotton towel.

You can serve these beautiful green and aromatic herbs in a basket or platter. You can have all these herbs or just get herbs you fancy, I am sure once you eat, you will not stop and eat more and more specially when you serve herbs with warm and fresh breads and feta cheese :).
These herbs are enough flavoured that no need to any dressing.

Choban Salati (Shepherd’s Salad)

A delightful Turkish salad. Very simple, healthy and delicious with very beautiful dressing consists lemon juice, salt and olive oil.

Ingredients

1 Cucumber
1 Tomato
1 Onion
1 Bell pepper
Small bunch of Parsley leaves
1 lime or lemon juice
Olive oil
Salt and pepper to taste

Preparation
Finely chop cucumber, tomato, onion, parsley and bell pepper. Add olive oil, lemon juice, season with salt and pepper and gently mix together.

Sweet Chilli and Tomatoes Pasta

This pasta made with roasted chilli peppers and tomatoes.

Ingredients

3 large tomatoes, halved
1 large red chilli
2 garlic cloves, grated
40 g ground almonds
1 cup green olives, chopped into small pieces
200 g dried pasta
150 g chicken breast, diced
Handful fresh basil leaves, chopped
Olive oil
Salt- chilli flakes to taste

Method
Place the tomatoes and chilli skin side up on the baking tray and grill until charred. Then leave to cool and remove the skin from the tomatoes and chilli.
Place the ground almonds on a baking tray and cook under the grill for 2 minutes or until golden.

Heat the olive oil in a saucepan and Fry the diced chicken until golden, add chilli flakes and salt. Then add green olives, and grated garlic. Stir the toasted ground almond into the mixture.


Using a food processor, blend the chilli and tomatoes to make a puree. Add blended tomatoes and chopped basil leaves to the mixture and combine together.
Cook the pasta in boiling water for 10 minutes. Drain the pasta and transfer to a serving dish and pour over the sauce.
