Zaban puff pastry (Persian puff pastry sweets)

Zaban is flaky, crusty, golden Persian sweet pastry. Zaban means tongue in Persian language. These honey sweets are perfect for a treat and super yummy. Shirni-e Zaban is lovely with cup of  coffee or tea.




Zaban puff pastry

Puff pastry
3 tbsp. honey
2 tbsp. rose water
2 tbsp. sugar
Pinch of saffron
Crushed pistachio , sesame seeds or coconut powder



Heat the oven to 200C.
In a bowl, combine the honey with rose water ( or warm water), mix well and set aside.

Unfold puff pastry on your counter. By a sharp cutter, cut the pastry into circle or triangular pieces.

Place the cut out pieces in the baking tray. With a knife make a lengthwise cut in the centre of each piece.
With a brush, lightly brush pastry pieces with honey syrup. Sprinkle each piece with sugar.

Place the baking tray in the oven and let it to bake for 15-20 minutes, until it golden and puffed. Then remove from the oven, let it cool and once again brush top of pastry with honey syrup, sprinkle crushed pistachio or coconut powder top of each piece of pastry.
If you like, mix some cream with saffron and apply for topping.
It is done. Serve it with tea or coffee and enjoy it.


شیرینی زبان

شیرینی زبان از شیرینی های  خاطره آور دوران کودکی ما ایرانی هاست. زبان در عین سادگی  جزو اون دسته از شیرینی هاست که در بیشتر مجالس ایرانی  متدوال  هست . شیرینی زبان با طعم و عطر عسلی و زعفرانی رو با خمیر هزارلایه و  معمولن در برش های مربع یا مستطیل و خیلی آسون و سریع میشه در منزل تهیه کرد  شاید هم بخاطر همین برش های مستطیلی شکل به زبان معروف شده

شیرینی خونگی زبان که تازه در خونه تهیه کردین با یک فنجون چای یا قهوه ی عصرونه خیلی میچسبه..

خمیر هزار لایه

سه ق غ عسل

دو ق غ گلاب

دو ق غ شکر

مقداری زعفران

پسته – کنجد یا نارگیل برای تزیین زبان

طرز تهیه
فر را با حرارت 200 درجه ی سانتیگراد گرم کنید.

در یک پیاله عسل را با گلاب مخلوط کرده و کنار بگذارید.

خمیر هزار لایه را باز کرده و با یک کارد خمیر را به شکل مستطیل یا دایره برش دهید. خمیرهای برش خرده را داخل سینی فر قرار داده و یک برش طولی در وسط هر تکه خمیر ایجاد کنید. با برس از شیره ی عسل روی خمیر بزنید. مقداری شکر روی خمیر ها بپاشید.
سینی را داخل فر قرار داده و بگذارید برای 20-15 دقیقه یا زمانی که زبان طلایی رنگ شده و پف کرده بپزد.
سینی را از داخل فر خارج کنید تا زبان ها سرد شوند. سپس روی شیرینی ها مجدن از شربت عسل زده و مقداری پودر پسته و نارگیل ویا مخلوط خامه و زعفران بریزید .

Hello everyone, my name is Rozina. I am Iranian with Azerbaijani roots. I was raised in Iran but I am living in Scotland. I am passionate about cooking and preparing meals for my family and friends. I tell them the story behind the meal, the pronunciation of their Iranian name and the spices that used in Persian cuisine. I am an archaeologist, photographer, a cooking teacher, and very interested to introduce Persian and Azerbaijani meals, desserts and beverages to people from different cultures, as I love to try food from all over the world. Iranian cuisine is a combination of rice with meat ( chicken, beef, lamb, fish, turkey), nuts, fruits, dried and fresh herbs and vegetables. Iranian food is a celebration of flavor, colour and spices such as: saffron, cinnamon, cardamom, turmeric, dried rose petals, dried limes, cumin, .... I share my recipes in Farsi/English along with step by step photos of preparation. I take all my own pictures. I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
