Persian turmeric rice (Dampokhtak دمپختک)

Dampokhtak is traditional Persian steamed rice. It’s made with fried onion, dried yellow fava beans, rice and turmeric. It’s one of easiest  and simplest Iranian rice dishes. Turmeric powder with lovely earthy taste is main spice of this dish.

Ingredients
2 cups rice, rinsed under cold water
1 cup dried yellow fava beans, cooked boiled
1 large onion, sliced thin
1tsp turmeric powder
Salt and chili flakes to taste
Butter

Method
In a pan, melt the butter and add onion. Sauté until slightly golden. Add turmeric and stirring frequently.

In a pot, bring to a boil 3 cups of salted water; add rice, fried onion, cooked beans, and chilli flakes. Gently stir to blend all ingredients. Place the lid and cook over medium heat for 20 minutes.

Once rice is ready, transfer dampokhtak to a serving dish with pickled vegetables, Greek yogurt or salad.
It’s simple and delicious rice dish, good choice for vegetarian as well.

دمپختک یا دمی باقالی
دمپختک یکی از غذاهای سنتی ایران هست که با پیاز سرخ شده – باقالای زرد- برنج و زردچوبه تهیه میشه. یکی از آسونترین و خوشمزه ترین کته هاست. زردچوبه با طعم خوش و رنگ زیباش اصلی ترین ادویه ی این غذا محسوب میشه.

مواد لازم

دو پیمانه برنج

یک پیمانه باقالای زرد خشک پخته شده

یک ق چ زردچوبه

یک پیاز درشت ریز خرد شده

نمک و فلفل به میزان نیاز

طرز تهیه.
در یک تابه کره را آب کرده و پیاز خرد شده را تفت می دهیم تا کمی نرم شده و رنگش تغییر کند. زردچوبه را اضافه می کنیم و 3-2 دقیقه پیاز را در حال هم زدن تفت می دهیم.
در یک قابلمه 3 پیمانه آب را با مقداری نمک به جوش می آوریم. برنج – پیاز تفت داده شده – باقالاها و فلفل را داخل قابلمه می ریزیم. به آرامی مواد داخل قابلمه را هم می زنیم تا مواد با هم مخلوط شوند. در قابلمه را می گذاریم تا با حرارت متوسط رو به پایین برای 20 دقیقه دم بکشد.
وقتی برنج آماده شد داخل ظرف مورد نظر سرو و با سالاد- ماست و یا ترشی سرو می کنیم.
با اینکه دمپختک یک کته ی خیلی ساده ای هست ولی بسیار خوشمزه و لذیذ می باشد.
