Carrot-cherry cake

I got this recipe from one member in Cookpad UK: Aunti Eiko’s dark cherry and carrot cake. I baked this yummy cake and, especially with those gorgeous red cherries turned into a tasty cake.


Carrot-cherry cake
200g unsalted butter
200g sugar
180g plain flour
300g shredde carrots
200g glace cherries
90g almond powder
5 eggs
1tsp baking powder
100ml maple syrup


Preheat the oven on 180C. Grease cake tin with butter.
Whip 5 eggs white with 20 g sugar in a large bowl. Mix butter with 180 g sugar well and then add egg yolk one by one. In a bowl with butter mixture add plain flour, almond powder and baking powder. Mix until blended. Then stir in whipped eggs white, shredded carrots and glace cherries. Combine together.


Divide the cake mixture between the two cake tins and bake for about 50 minutes. Remove the cake from the tins, pour maple syrup over the surface of cake and leave until completely cold. I had a touch of Mascarpone cheese top of the cake as well.


کیک هویج و گیلاس
کیک هویج از کیک های خیلی خوشمزه هست ومیدونم که با مواد مختلفی هم تهیه میشه مثلن با گردو – کشمش – پرتقال … ولی با گیلاس امتحان نکرده بودم. دستور تهیه ی این کیک رو از یک خانم ژاپنی ” عمه ایکو” که عضو کوکپد در انگلستان هستن بدست آوردم و پختم . خیلی کیک خوشمزه ای شده بود مخصوصن با این گیلاس های قرمز قشنگ.


مواد لازم

دویست گرم کره ی بدون نمک

دویست گرم شکر

صدو هشتاد گرم آرد سفید

سیصد گرم هویج رنده شده

دویست گرم گیلاس تازه یا کمپوتی و یا شکری

نود گرم پودر بادام

پنج عدد تخم مرغ

یک ق چ بیکینگ پودر

صد میلی لیتر شیره ی افرا

طرز تهیه.
فر را روی حرارت 180 درجه ی سانتیگراد گرم کنید. قالب کیک را باکره کمی چرب کنید و آماده بگذارید.
5 سفیده ی تخم مرغ را با 20 گرم شکر مخلوط و خوب هم بزنید. کره را با باقی شکر (180گرم) مخلوط کنید و بعد زرده های تخم مرغ را یکی یکی به کره اضافه کرده و هم بزنید تا باهم خوب ترکیب شوند.
در این مرحله- آرد – پودر بادام- و بیکینگ پودر را به مخلوط کره اضافه کنید و همه ی مواد را با هم ترکیب نمایید. سپس سفیده های آماده ی تخم مرغ را همراه با هویج رنده شده و دانه های گیلاس به مواد کیک اضافه کنید .
مایع کیک را  در قالب کیک ریخته و برای حدودن 50 دقیقه بپزید. وقتی کیک آماده شد از قالب خارج کنید روی سطح کیک شیره ی افرا را ریخته و بگذارید کیک خنک شود.

I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
