Leek and green peas soup

My family and I are big fan of soup and that’s why 3 times a week i make different soups. Today i made a wonderful, green and satisfying soup with leek, green peas and mint.


Leek and green peas soup
250g green peas
2 leeks
2 vegetable stock cubes
150g cream cheese
Handful fresh mint leaves
1/2 lemon juice
Salt- red/black pepper
2-3 tbs olive oil

Thinly slice the leeks and cut into the small rings. Place them in a bowl with cold water and allow the leeks stay in the water for few minutes. Drain and rinse it. Heat the oil in a pan and add the leeks. Let it to cook for about 10 minutes. Then, add green peas and allow to cook for 5 minutes more.

Pour 500 ml cold water in a pot. Bring it to boil. Add vegetable stock cubes to the pan. Simmer for few minutes. Add cooked ingredients to the pot. Cover and simmer for 10 minutes.

Meanwhile, add lemon juice, salt and pepper to the cream cheese. Mix it very well. Add it to the soup. Then add mint leaves.. Remove from the heat. Taste and adjust it.

blend your soup with blender or food processor. Serve it in your favorite plates and garnish it with mint leaves and cream cheese.


سوپ تره فرنگی و نخود س

خانواده ی من علاقه ی زیادی به سوپ دارن برای همین هفته ای سه بار سوپ های مختلفی درست میکنم. امرزو سوپ تره فرنگی و نخود سبز درست کردم. . یک سوپ ساده – سبز که خیلی هم خوشمزه هست.

مواد لازم

دویست پنجاه گرم نخود سبز

دو ساقه تره فرنگی

دو قرص عصاره ی سبزیجات

صدو پنجاه گرم پنیر خامه ای

یک دسته نعنای تازه

نصف لیمو ترش

نمک و فلفل به میزان لازم

روغن زیتون


طرز تهیه
تره ها را ظریف خرد کرده و بشویید تا ماسه های موجود از سبزیها جدا شوند. کمی روغن را در تابه گرم کنید و تره ها را برای 10 دقیقه تفت دهید. سپس نخود فرنگی را نیز اضافه کنید وبگذارید 5 دقیقه دیگرروی حرارت باشند.
500 میلی لیتر آب رادر قابلمه ریخته و بجوش آورید. عصاره ی سبزیجات – و تره و نخود را بیفزایید. بگذارید برای 10 دقیقه به آرامی بپزد. سپس آب لیمو- نمک – فلفل- پنیر خامه ای و برگ های نعنا را نیز به سوپ اضافه کنید.اجازه دهید 5 دقیقه روی حرارت بماند. سپس از روی گاز بردارید و مزه کنید اگر نیاز به نمک و فلفل بیشتری هست اضافه کنیدو سپس در مخلوط کن ریخته و سوپ را به صورت پوره در آورید. در زمان سرو می توانید ب برگ نعنا و کمی پنیر خامه ای روی سوپ قرار دهید.

I share my recipes in Farsi/English along with step by step photos of preparation. I take all my own pictures. I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
