Tuna fish patties کتلت ماهی تن

This recipe is combination of tuna fish with potato, fresh tarragon and seasoned with aromatic spices. Freshly chopped tarragon gives very nice flavor to the fish cakes.


Tuna fish patties


140 g canned tuna fish

1 cooked potato

Small bunch of fresh tarragon

1 ½ tbsp corn flour

50 g cooked green peas

1 egg

½ tsp cumin powder

½ tsp coriander powder

½ tsp ginger powder

¼ tsp turmeric powder

Salt and chili flakes to taste

Bread crumbs

Olive oil



Drain the liquid from tuna can. Mash cooked potato. In a bowl, mix together all of the spices, chopped tarragon, green peas, egg yolk, corn flour, tuna fish and mashed potato.


Divide the mixture into small parts and form into a ball and then flatten into a patty. In a small ball, whisk white egg. First dip each patty into the white egg and then cover with bread crumbs.


Heat the olive oil in a pan, gently place patties in the pan and cook each side for 3-4 minutes until nicely brown.

Serve fish patties with sweet chilli sauce or tartar sauce.


کتلت ماهی تن

کتلت ماهی تن که امروز تهیه کردم با مواد ارزون و بسیار آسون تهیه میشه. ترکیبی هست از ماهی تن با سیب زمینی – تلخون و

ادویه های معطر. تلخون مزه و طعم خیلی خاصی به کتلت ها داده بود.

مواد لازم

صدوچهل گرم ماهی تن کنسروی

یک عدد سیب زمینی آبپز

یک دسته ی کوچک تلخون تازه ی خرد شده

یک و نیم ق غ آرد ذرت

پنجاه گرم نخود سبز پخته

یک تخم مرغ

نصف ق چ پودر تخم گشنیز

نصف ق چ پودر زنجبیل

یک چهارم ق چ زردچوبه

نمک و فلفل به میزان نیاز

روغن زیتون

آرد سوخاری

طرز تهیه

ماهی تن را داخل آبکش ریخته و فشار دهید تا آب اضافی ماهی خارج شود. سیب زمینی پخته را پوست گرفته و با گوشت کوب بکوبید. داخل یک‌ کاسه تمام ادویه ها – تلخون خشک شدهنخود سبززرده ی تخم مرغآرد ذرتماهی تن و سیب زمینی کوبیده شده را با هم خوب مخلوط کنید.

مخلوط آماده شده را به قطعه‌های کوچک جدا کنید. و به صورت کتلت شکل دهید. و در سفیده ی تخم مرغ قرار داده و در آخر با آرد سوخاری بپوشانید.

روغن زیتون را در تابه گرم کنید – هر طرف کتلت را 4-3 دقیقه سرخ کنید .

کتلت ماهی را با سس تارتار یا سس چیلی شیرین سرو کنید.

I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
