Salad Olivier ( Persian potato salad)

Salad Olivier is a kind of potato salad, so much popular in Iran. I do not think you can find someone dislikes this dish in Iran. It’s a dish for 4 seasons. It is great side dish. Salad Olivier is a traditional Russian salad but as I mentioned above is very popular in Iran.


اولیویه 3
4 large potatoes, cooked
3 eggs, hard boiled
1 shredded chicken breast
1 cup cooked green peas
200 g pickled cucumbers

1 cup mayonnaise
1 cup Greek yogurt
3 tbsp lemon juice
Salt- pepper to taste
Sunflower oil



First is first: place all ingredients for dressing in a bowl and mix very well, set aside.
Shred the chicken meat. Mash the eggs and potatoes. Dice the pickled cucumber. Then in bowl, add shredded chicken, mashed eggs and potatoes, dices cucumber and green peas. Now mix ingredients with dressing sauce very well. Check seasoning.

سالاد اولیویه
سالاد اولیویه یک نوع سالاد سیب زمینی می باشد که در ایران – مغولستان- آمریکای لایتن – اروپا طرفدار دارد. فکر نمی کنم در ایران کسی این سالاد را دوست نداشته باشد و همه ی ما با این سالاد خاطره داریم.
سالاد اولیویه ( اولیویر) در اصل یک غذای روسی می باشد که در نسخه ی اولیه با سیب زمینی پخته- نخود سبز.تخم مرغ- هویج. پیازچه- زبان گوساله- خیار شور و خیار سبز تازه تهیه میشد ولی به مرور تغییراتی در مواد آن ایجاد شد. اولین بار این سالاد توسط یک آشپز بلزیکی به نام لوسین اولیویر در یکی از رستورانهای لوکس مسکو در روسیه تهیه شد.

مواد لازم

یک عدد سینه ی مرغ پخته و رشته  شده

چهار سیب زمینی آبپز شده

سه تخم مرغ آبپز شده

یک پیمانه نخود سبز پخته

دویست گرم خیارشور خرد شده

مواد لازم برای سس

یک پیمانه سس مایونز

یک پیمانه ماست چکیده

سه ق غ آبلیمو ترش

نمک و فلفل به میزان لازم

روغن مایع

طرز تهیه:
در یک پیاله سس مایونز- ماست- نمک- فلفل- آبلیمو و روغن زیتون را با هم مخلوط کنید. در یک کاسه ی بزرگ هم سیب زمینی ها را پوست کنده و با گوشت کوب له کنید. تخم مرغ ها را هم به همین ترتیب. خیارشورهارا ریزریز خرد کنید. مرغ آبپز شده را ریش ریش نمایید. سس تهیه شده را روی مواد خرد شده بریزید و همگی را خوب با هم مخلوط کنید. سالاد اولیویه آماده هست. نوش جان

I share my recipes in Farsi/English along with step by step photos of preparation. I take all my own pictures. I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
