I have made this bread sticks with chopped green olives. They last for 4-5 days with freshly soft texture ans soooooooo tasty.
3 ¼ cups of whole meal bread (but you can have plain flour as well)
2 ¼ Tsp dry yeast
¼ cup olive oil
1 cup green olives, finely chopped
1 Tbsp. sugar
2 Tbsp brown sugar
1 Tsp salt
1 ¼ cups warm water
4-5 Tbsp salted butter
In a bowl with dried yeast, add warm water with a pinch of sugar. Cover the bowl with a lid and leave it for 10 minutes until yeast is activated.
Mix flour, salt and two different types of sugar in the mixer. Then add yeast mixture and olive oil to the flour. Mix on mediu,m speed for 5-6 minutes.
Grease a large bowl with some olive oil and place the dough in the bowl. Sprinkle some flour top of the dough. Cover it with kitchen towel for 2 hours.
After two hours, remove the dough from the bowl, place it on a floured surface. Using a rolling pin, roll it to a round shape dough. Spread chopped olives on the dough. Fold it up and using a rolling pin , and roll it to a circle shape. Cut out into strips. Give each one of strips a twist.
Lining the baking tray with parchment paper . Place twisted doughs onto the baking tray.
Cover them with a kitchen towel and leave them to rest for 40 minutes.
Preheat the oven to 205C.
After 40 minutes brush the top of the bread sticks with melted butter and put them in the oven.
Bake them until for about 15 minutes. Once they are ready, brush them again with more melted butter and enjoy these beautiful bread sticks.
