Mirza ghasemi

This is another dish for eggplant lovers. Basically it is fried aubergines in tomato/garlic sauce. Mirza ghasemi is from North of Iran near Caspian sea. This dish is incredibly tasty with smoked flavour. Good recipe for vegetarian as well.

 
Ingredients
2 large eggplants, sliced lengthwise
2 large tomatoes, finely chopped
3-4 cloves garlic, finely chopped
3 eggs
1 Tsp turmeric
Salt and black pepper to taste
Oil

 

 

Preparation
Peel off the skin of aubergines. Grill them in the oven or on a stove until blackened. When they are grilled, let cool and then chop finely and set aside.
Heat the oil in a pan, fry chopped eggplants for 10 minutes, stirring thoroughly. Add chopped tomatoes and spices and chopped garlic and cook for additional 10 minutes. Stirring constantly. Then, crack the eggs and pour into the aubergines mixture. Stir well until blended and cook for 2-3 minutes. Serve this beautiful eggplant dish warm with flat bread or rice.

یک دستور غذای دیگه برای کسانی که عاشق خوراک با بادمجان هستند. میرزاقاسمی یکی از غذاهای محبوب و خوشمزه هست که در اصل از نواحی شمالی ایران و اطراف دریای کاسپین آمده ولی در همه جای ایران معروف و محبوب هست.
میرزا قاسمی یک خوراک فوق العاده لذیذ- خوش آب ورنگ و ساده هست که طعمی دودی داره و غذای مناسبی برای گیاهخواران هم میتونه باشه.

مواد لازم

دو عدد بادمجان درشت و پوست گرفته و از وسط نصف شده

دو عدد گوجه فرنگی درشت

سه چهار حبه سیرخام کوبیده

سه عدد تخم مرغ

یک ق چ زردچوبه

نمک و فلفل به میزان لازم

روغن

طرز تهیه
پوست بادمجانها را گرفته و در داخل فر یا روی گاز کباب کنید. سپس بگذارید بادمجان های کبابی خنک شده و به صورت ریز خرد کرده و کنار بگذارید.
روغن را در تابه گرم کنید- بادمجان های خرد شده را برای 10 دقیقه در روغن سرخ کنید و مرتب هم بزنید. سپس گوجه فرنگی های خرد شده – ادویه ها و سیر خرد شده را اضافه کنید و برای 10 دقیقه ی دیگر تفت دهید. تخم مرغ ها را شکسته و روی بادمجانها بریزید. خوب همه ی مواد را با هم مخلوط کنید و بگذارید برای 3-2 دقیقه دیگر روی حرارت باشد.
این غذای فوق العاده لذیذ را به صورت گرم و با نان یا کته سرو کنید.
