Mint chocolate truffles

These chocolate balls are rich, tasty and handmade.

Ingredients

  • 500 ml heavy cream
  • 600 g dark chocolate, chopped
  • 130 g honey
  • 130 g butter
  • Small bunch of fresh mint leaves, chopped

 

To garnishing the truffles

  • 1 cup Cocoa powder
  • 1 cup finely chopped chocolate

Preparation
Heat the cream in a pot. Add honey and chopped mint. Heat for 6-7 minutes. Put chopped chocolate and butter in a large bowl.
Strain the hot cream in order separate out mint leaves. Pour the hot cream over the chopped chocolate with butter. Stir the mixture until melt the chocolate and butter and still slowly whisk the mixture until smooth.
Then cover the melted chocolate bowl and let it to cool for 3-4 hours in the fridge.
Once chocolate has cooled . Wear gloves, using small spoon , roll the mixture into balls. You need to roll quickly to avoid of melting chocolate.
When all chocolate balls are rolled , dip in chopped chocolates and then dip in cocoa powder.
Refrigerate truffles in a container for 2 weeks.

 

ترافل شکلات نعنایی

یک دسر خوشمزه ی نعنایی که راحت تهیه میشه

مواد لازم

دو پیمانه کرم خامه ای

ششصد گرم شکلات سیاه

صدوسی گرم عسل

صدوسی گرم کره

یک دسته ی کوچک نعنای تازه و خرد شده

برای تزیین ترافل

یک پیمانه پودر کاکائو

یک پیمانه شکلات خرد شده

 

طرز تهیه
کرم خامه را در یک قابلمه گرم کنید. عسل و نعنای خرد شده را اضافه کنید و بگذارید برای 7-6 دقیقه روی حرارت بماند. شکلات های خرد شده و کره را داخل یک کاسه ی بزرگ بریزید. کرم داغ شده را از الک رد کنید تا برگ های نعنا جدا شوند. و بلافاصله کرم را روی شکلات و کره بریزید. مخلوط را هم بزنید تا شکلات و کره آب شود و به صورت خمیر یکدستی در آید.
روی ظرف خمیر یک درپوش گذاشته وبرای 4-3 ساعت در یخجال قرار دهید.
وقتی خمیر شکلات خنک شد و خود را گرفت دستکش به دست کنید و با یک قاشق مربا خوری خمیر را بردارید و به شکل توپ کوچک در آورید. شکل دادن به خمیر شکلاتی باید خیلی سریع انجام شود که خمیر شل نگردد. وقتی همه ی توپ های شکلاتی آماده شدند. ابتدا داخل شکلاتهای خرد شده و سپس در پودر کاکائو بغلطانید.

این ترایفل های خوشمزه و خانگی را می توانید در ظرف در پوش و در یخچال برای دو هفته نگه دارید.

 

 

 

 

 

Mirza Ghasemi

This is another dish for eggplant lovers. Basically it is fried aubergines in tomato/garlic sauce. Mirza ghasemi is from North of Iran near Caspian sea. This dish is incredibly tasty with smoked flavour. Good recipe for vegetarian as well.
Ingredients
2 large eggplants, sliced lengthwise
2 large tomatoes, finely chopped
3-4 cloves garlic, finely chopped
3 eggs
1 Tsp turmeric
Salt and black pepper to taste
Olive oil

Preparation
Peel off the skin of aubergines. Grill them in the oven or on a stove until blackened. When they are grilled, let cool and then chop finely and set aside.
Heat the oil in a pan, fry chopped eggplants for 10 minutes, stirring thoroughly. Add chopped tomatoes and spices and chopped garlic and cook for additional 10 minutes. Stirring constantly. Then, crack the eggs and pour into the aubergines mixture. Stir well until blended and cook for 2-3 minutes. Serve this beautiful eggplant dish warm with flat bread or rice.

 

 

 

Persian lamb Kidneys with Tomato Sauce

Lamb kidneys ( Gholveh) is a juicy,  very simple and inexpensive dish with tomato sauce that is prepared quickly.

Ingredients

5 lamb kidneys
2 onions. Finely chopped
3 tomatoes, diced
2 Tbsp. tomato paste
3 potatoes, cut into the small cubes
Salt and pepper to taste
1 Tsp. turmeric
1 Tbsp. flour
Butter or Oil

Preparation
Wash lamb kidneys, and cut into half. Slightly coat in the flour. Heat the oil in the pan, and fry each side for 2-3 minutes. Set aside.
Heat the oil in a pan and fry diced onions until slightly translucent.


Then, in a bowl with tomato paste, add salt- pepper, turmeric and 150 ml. water. Blend together. Pour tomato sauce and fried onions over the fried kidneys. Let it to cook for 5 minutes. Then add diced tomatoes. Cover the pan, and allow to cook over low flame for 10 minutes or until liquid is absorbed.


Meanwhile, fry chopped potatoes in the oil, add some salt and turmeric. Stirring occasionally until fried.
Serve the kidneys with fried potatoes and salad.

Cheese Balls

Any kind of cheese is always tasty and lovely  starter or snack. I have prepared  cheese balls made with feta cheese and cream cheese with different garnishing. You can use your favourite herbs/fruits for your cheese balls.

Ingredients
300 g feta cheese
3 Tbsp. cream cheese
2 Tbsp. dried rose petal leaves
2 Tbsp. grounded walnuts
2 Tbsp. chopped chives
2 Tbsp. candied orange peel

Preparation
In a big bowl with feta cheese, add cream cheese. Mix together very well. Take small portion of cheese mixture (as big as a walnut) and give ball shape.
Once all cheese balls are ready, roll them one by one in different herbs and fruits which you have prepared early.
Serve these beautiful and tiny cheese balls with breads or biscuits. They are so good and tasty.

 

Cheese wraps

This recipe is about cheese wraps. It is fast and easy and fun to prepare.
Ingredients
Tortilla bread or Persian Lavash bread
Turkey slices ( or Ham)
Red bell pepper, finely chopped
Spring onions , finely chopped
Grapes, finely chopped
Walnuts, crushed
Black olives, chopped
Cream cheese
Salt to taste

 

 

Preparation
I am going to prepare two different types of cheese wraps. One with cheese, walnuts, and grapes. Second one with cheese, Turkey slices, bell pepper, black olives and herbs.
In a bowl with cream cheese, add chopped bell pepper, black olives, herbs, and pinch of salt. Mix well together.
Spread thinly cream cheese mixture on the bread and just make sure all over the bred is covered. Put slices of Turkey top of cheese mixture. Rolls up bread tightly as much you can. Wrap it nice and firm. Put warped bread in the refrigerator for 1 hour. Then, unwrap carefully and cut it into small pieces. They are gorgeous
In a bowl with cream cheese, add chopped grapes and walnuts. Mix together. Spread second cream cheese mixture top of the bread and repeat process like above mentioned.

 

 

 

Tahini baklava

This is other type of baklava , very crunchy and without sugar syrup but still is tasty.

 
Ingredients
Filo pastry sheets
100 g sugar
200 g tahini
200 g unsalted butter
Chopped walnuts

 

 

Preparation
Preheat the oven at 180C.
Unwrap a filo sheet and brush all over the filo with melted butter. Put second filo sheet over the first one and do same with second filo sheet as well. Then, place third layer of filo sheet and brush with tahini, sprinkle sugar and then spread grounded walnuts over it. Roll it up. Cut into slices.
Place them on a baking tray, brush them with melted butter and sprinkle some sugar. Bake at 180C for 15 minutes.

 

باقلوا با ارده
این نوع باقلوا ترد و شکننده و بدون شهد می باشد ولی با اینحال هنوز بسیار خوشمزه هست.

مواد لازم
ورقه های خمیر یوفکا

صد گرم شکر

دویست گرم ارده

دویست گرم کره ی بدون نمک آب شده

گردوی خرد شده

طرز تهیه
فر را در 180 درجه ی سانتیگراد گرم کنید.
یک ورقه از خمیر یوفکا را باز کرده و روی آن را کره ی آب شده بزنید. ورقه ی دوم را روی اولی گذاشته و مجددن کره ی آب شده بزنید. ورقه ی سوم را روی ورقه ی دوم گذاشته و روی آن ارده را بزنید و کمی شکر بپاشید و سپس کردوی خرد شده بریزید. خمیر را بپچید و به اندازه ی دلخواه خمیر را برش دهید. تکه های باقلوا را داخل سینی فر گذاشته و روی آنها مجددن کمی کره ی آب شده و شکر بریزید.
سینی را داخل فر گذاشته و اجازه دهید به مدت 15 دقیقه بپزد.

 

 

Newspaper shape baklava

Baklava is a kind of crunchy sweet and rich pastry made with filo pastry and filled with chopped nuts such as: almonds, walnuts, pistachio and hazelnuts and spices like, cinnamon, cardamom and cloves.
In Iran there is drier version of baklava as well that is cooked in diamond- shaped and flavoured with rose water.
Baklava is very popular in Iran, Turkey, Greece, countries around Persian Gulf, Republic Azerbaijan, Armenia and African countries such as: Libya, Tunisia and Algeria.

Ingredients
Filo pastry sheets
500 g sugar
2 ½ cups water
150 g unsalted butter, melted
1 Tbsp. lemon juice
1 Tsp cinnamon powder (one cinnamon stick)
Chopped nuts (walnuts and pistachio or almond). Put as much nuts as you can, because more and more nuts will make baklava more tasty 🙂

 

 

Preparation
Preheat the oven to 150C.
For sugar syrup, heat the sugar, water, lemon juice and cinnamon powder in a saucepan. . Bring it to a boil and allow to simmer for 10 minutes. Turn off the heat and let to cool.
Lay one sheet of filo pastry on working table and brush with melted butter. Then, pinch the filo pastry lengthwise) as you see in the images). Spread chopped nuts on the filo pastry and fold it ( as you see in the image).
Place them in a baking tray. Cut it into small square shapes.  Brush with melted butter. Put the tray in the preheated oven and allow to bake for about 40- 45 minutes. Once baklava is ready, Pour chilled sugar syrup over baklava and some nuts for topping. Let baklava set in sugar syrup for 5-6 hours and serve it.
