These apple pie fingers are super easy and fun to make and are flaky little easy bites, delicious with adorable presentation.
3 apples, peeled and grated
handful fresh mint leaves, finely chopped
½ lime juice
1 cup sugar ( your choice: brown, white)
2 sheets puff pastry
½ cup oat or plain flour
1 tsp vanilla essence
½ tsp cinnamon powder
2 eggs yolk
In a pot with 1 cup water add all ingredients but puff pastry 🙂 :). Allow to simmer for 10-15 minutes, until reduce juice. Then, remove from the heat and let to cool. Mint leaves give such a lovely minty taste and flour or oat make the apple mixture thick.
Preheat oven to 180C.
Grease baking tray with butter. Lay out one puff pastry sheet in the tray and spread apple mixture over the entire surface of pastry sheet. Place second puff pastry sheet on top. With a pizza roller cut vertically thin strips.
Brush eggs wash over the pastry and sprinkle brown sugar as well. Place in the oven and bake for 15-20 minutes. Once apple pie is golden brown, remove from oven and serve with your favourite dipping, custard cream or ice cream.
