Raisin-bell pepper pizza

This pizza is full of colour and has amazing taste.
Puff pastry dough
5 tbsp. tomato paste
½ red or green bell pepper, sliced thinly
3 tbsp. green olives, chopped
1 small onion, sliced thinly
2 garlic cloves, finely chopped
3 tbsps. Raisins
1-2 rosemary stalks, finely chopped
Salt- pepper
Olive oil
Preheat oven at 200 C.
Heat the oil in large frying pan and add the bell peppers, onion, garlic, raisins, rosemary, salt and pepper and fry gently for 10 minutes or until they have softened , then leave them to cool.
Grease baking tray with olive oil. Place a puff pastry sheet in the tray. Spread the tomato paste top of the pastry. Sprinkle fried mixture over the pastry. Bake pizza for 20 minutes and until edges are golden.
Cut into small squares and serve this delightful pizza.

پیتزای کشمش وفلفل دلمه
این پیتزا با داشتنن مواد مختلف –  ظاهر رنگارنگی داشته و فو ق العاده ه ه ه ه لذیذ هست.

مواد لازم
یک ورقه خمیر هزار لایه

نصف فلفل دلمه ی رنگی

یک عدد پیاز کوچک خلالی خرد شده

سه ق غ زیتون سبز خرد شده

یک حبه سیر خرد شده یا رنده شده

سه ق غ کشمش

پنج ق غ رب گوجه فرنگی یا گوجه ی خرد شده

نمک و فلفل به میزان لازم

روغن زیتون

یکی دو شاخه رزماری خرد شده

طرز تهیه
فر را با حرارت 200 درجه ی سانتیگراد از قبل گرم کنید.
مقداری روغن را در تابه گرم کنید. فلفل دلمه ی خرد شده- پیاز – سیر-کشمش – رزماری – نمک و فلفل را در تابه به مدت ده دقیقه تفت دهید تا مواد نرم شوند ( نباید سرخ یا طلایی شوند). سپس سینی فر را با کمی روغن چرب کنید. خمیر را روی سینی باز نموده و رب گوجه فرنگی یا گوجه فرنگی رنده شده را روی خمیر پخش کنید . سپس مواد تفت داده شده را روی گوجه فرنگی ریخته و به صورت یکنواخت تمام سطح خمیر را بپوشانید. پیتزا را داخل فر قرار داده وبگذارید به مدت 20 دقیقه و تا زمانی که خمیر طلایی شود در فر بماند.
پیتزای آماده شده را به صورت مربع های کوچک خرد و سرو نمایید. این پیتزا برای سرو در مهمانی های عصرانه بسیار مناسب می باشد.

Iranian food is a celebration of flavor, colour and spices such as: saffron, cinnamon, cardamom, turmeric, dried rose petals, dried limes, cumin, .... I share my recipes in Farsi/English along with step by step photos of preparation. I take all my own pictures. I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
