Persian rice flour pudding ( Fereni)

Fereni is a smooth dessert with soft texture. It is made with rice flour ( not rice grains), sugar, rose water, milk and saffron.

 
Ingredients
800 ml milk
3 tbsp. rice flour
2 tbsp sugar
Pinch of saffron
1 tsp rose water
For garnishing
Almond flakes, crushed pistachio and cinnamon powder

 
Preparation
Bring milk to boil. Add rice flour, stirring constantly to avoid of forming lumps. Add saffron thread and keep stirring. Cook until mixture thickened. Then add rose water and sugar to taste. Allow the mixture to boil for 2 more minutes on medium heat and yet keep stirring. It is done.
Fereni might be served either warm or cold. Garnish with pinch of cinnamon powder, almond flakes and crushed pistachio.

فرنی دسری هست با بافت نرم و کرمی که با آرد برنج ( نه با دانه های برنج) – شیر- شکر- زعفران و گلاب تهیه میشود. این فرنی بسیار خوشمزه می باشد.

 

مواد لازم

هشتصد میلی لیتر شیر

سه ق غ آرد برنج

دو ق غ شکر

کمی زعفران

یک ق چ گلاب

مقداری بادام و پسته ی خرد شده

پودر دارچین

 

طرز تهیه
شیر را بجوش آورید. آرد برنج را به شیر اضافه کنید و مرتب هم بزنید تا مانع از توده شدن آرد برنج شود. سپس زعفران را به مواد بالا بیفزاید و همچنان هم بزنید تا مخلوط غلیظ گردد. سپس گلاب وشکر را نیزبه مایع در حال پخت اضافه کنید و بگذارید 2 دقیقه ی دیگر روی حرارت متوسط بپزد در حالیکه همچنان فرنی را هم می زنید ( اکر از همزدن متوقف شوید فرنی ته گرفته و میسوزد).
فرنی را می توانید گرم یا سرد میل کنید. برای تزیین روی فرنی هم می توانید از پودر دارچین و خرده های بادام و پسته استفاده کنید.
