Gata ( walnuts rolled sweet)

This lovely sweets are so good and delicious. Armenian population in Iran make it and it is very popular between all nation. We can get it easily form confectioneries or bakeries.

1 cup unsalted butter
2 cups plain flour
1 cup icing sugar
½ tsp nutmeg powder
½ tsp cardamom powder
1 tsp cinnamon
1 egg yolk
1 cup crashed walnuts
Puff pastry dough


Heat the pan on a medium heat and melt the butter in it. Add flour and stir in for 5 minutes. Then add sugar and stir in for 2 minutes. Add cardamom, cinnamon, nutmeg, and walnuts to the mixture and stir for 2-3 minutes more. Set aside to cool.
Preheat the oven on 175C .
Sprinkle 1-2 tbsp. flour on working table. Place puff pastry dough on it. Brush with egg yolk. Spread filing mixture on dough and then roll the dough from one of the long sides. Give soft punch to the dough with rolling pin.. Brush with egg yolk surface of prepared dough . Then use a cutter or a knife and cut it into small pieces.
Set them in a baking tray and bake in oven for 30 minutes or until golden.
Serve it with your favourite tea.

شیرینی گاتا
این شیرینی های خوشمزه و لذیذ بین ارامنه ی ایرانی بسیار معروف هست و در تمام قنادی ها میتوان به این شیرینی لذیذ و قتشگ دست یافت


مواد لازم

یک پیمانه کره ی بدون نمک

دو پیمانه آرد همه منظوره

یک پیمانه پودر قند

یک پیمانه گردوی خرد شده

نصف ق چ پودر جوز هندی

یک دوم ق چ پودر هل

یک ق چ پودر دارچین

یک عدد زرده ی تخم مرغ

یک ورقه خمیر هزار لایه یا همان پاف پیستری

طرز تهیه
کره را در تابه آب کنید و آرد را به آن بیفزاید و به مدت 5 دقیقه هم بزنید. سپس شکر را اضافه کرده و 2 دقیقه با آرد هم بزنید . حالا- پورد هل- دارچین- جوز هندی و گردوی خرد شده را بیفزاید و برای 3-2 دقیقه ی دیگر هم بزنید و سپس مخلوط آماده شده را از روی حرارت بردارید تا خنک شود.
روی تخته ی کار کمی آرد بپاشید. یک ورقه خمیر را روی تخته باز کنید . روی خمیر یک لایه زرده ی تخم مرغ را با برس بزنید. ماده ی شیرینی آماده شده را روی خمیر پخش کنید . سپس خمیر را از طرف طولی تا کنید. سپس با وردنه یکی دوبا ر خیلی آرام روی خمیر را بکوبید. باز مجدن یک لایه زرده ی تخم مرغ را روی خمیر بزنید. با یک چاقو خمیر را در اندازه های کوچک برش دهید و روی سینی گذاشته داخل فر فرار دهید و برای 30 دقیقه یا زمانی که طلایی شوند با حرارت 175 درجه ی سانتیگراد بپزد.با چای داغ خیلی می چسبه.

Iranian cuisine is a combination of rice with meat ( chicken, beef, lamb, fish, turkey), nuts, fruits, dried and fresh herbs and vegetables. Iranian food is a celebration of flavor, colour and spices such as: saffron, cinnamon, cardamom, turmeric, dried rose petals, dried limes, cumin, .... I share my recipes in Farsi/English along with step by step photos of preparation. I take all my own pictures. I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
