Broccoli Soup

This soup is one my favourites. It is very delicious and there is a good harmony between combination of ground almond with broccoli.


340 g broccoli, cut into small florets

1 large onion, finely chopped

1 clove garlic

250 ml milk

500 ml dissolved stocks ( vegetable or beef)

45 g ground almond

Salt – cayenne pepper

Olive oil


Heat the oil in a pan and add chopped onion. Fry it until is soften. Then add chopped garlic and stir for 2 minutes. Add broccoli, ground almond, salt and pepper. Stir for 5 minutes. Add dissolved vegetable stock. Bring it to boil and and let it simmer until broccoli is tender. Let it to cool, then pour it in a food processor and purée it.

Return back purée mixture into the pot, add milk and allow to cook for few minutes.

Serve this tasty soup in a bowl and sprinkle with fried almond flakes.
