Mikado cookies

Mikado wafer cookies is very popular in Iran and can get it in all bakeries and confectioneries in Tehran and other cities. It is basically wafer sheets coated with mixture of melted chocolate or cocoa.



1 cup all-purpose flour

230 g unsalted butter

2/3 cup powdered sugar

2 tbsp. cocoa powder

1 tsp cardamom powder

1 tsp cinnamon powder

Wafer sheets


In a pan, heat the flour for 10 minutes on medium heat and stir constantly. Then, add butter and stir until butter melted. Add, powdered sugar and mix together. Once they combined, add cocoa powder and spices, mix all ingredients together and allow heating for 2-3 minutes more. Set aside until cool enough.

Take one wafer sheet and coat surface of wafer sheet with cocoa mixture, then place second wafer sheet top of it and repeat process until 4 layers. Now cookies are ready, just let them to rest for 1 hour and serve with cup of nice tea or coffee and enjoy it.

یک پیمانه آرد گندم

دویست سی گرم کره

دو سوم پیمانه پودر قند

دو ق غ پودر کاکاو

یک ق چ پودر هل

یک ق چ پودر دارچین

ورقه های ویفر

طرز تهیه

آرد را در تابه بدون کره به مدت 10 دقیقه با حرارا ت ملایم تفت دهید و مرتب هم بزنید. سپس کره را در سه مرحله کم کم به آرد افزوده و بگدارید کره آب شود. سپس پودر قند را بیفزاید ومواد را با هم مخلوط نمایید. در آخر پورد کاکائو و ادویه ها را بیفزایید. به مدت 3-2 دقیقه همه ی مواد را با هم مخلوط کنید. سپس از روی حرارت بردارید تا خنک شود. ورقه ی ویفر را روی با یک لایه از ماده ی آماده شده بپوشانید سپس ورقه ی دوم ویفر را گذاشته و به آرامی روی لایه ی قبلی فشار دهید و مجدد ماده ی کاکائو را روی ویفر پخش کنید. این کار را بتا چهار لایه انجام دهید. حالا شیرینی ها آماده هستند فقط بگذارید کمی بمانند و بعد با چای یا قهوه میل کنید.

Iranian food is a celebration of flavor, colour and spices such as: saffron, cinnamon, cardamom, turmeric, dried rose petals, dried limes, cumin, .... I share my recipes in Farsi/English along with step by step photos of preparation. I take all my own pictures. I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
