Persian sour herbs stew (Torishi tareh)

Torshi tareh is a delicious- veggie and traditional stew dish from North of Iran. It might be served with either plain steamed rice or with bread.

Ingredients

70g coriander, finely chopped

70g parsley, finely chopped

100g spinach leaves, finely chopped

20g fresh mint leaves, finely chopped

3spring onions, finely chopped

2tbsps cooked rice

3eggs

2tbsp lemon juice or more ( it based on your taste)

3garlic cloves, smashed

2/3tsp turmeric powder

butter or oil

salt- pepper to taste

Preparation

Heat the oil or melt the butter in a pan. Add smashed garlic cloves, salt- pepper- turmeric and rice. Sauté for 2 minutes. Add chopped vegetables. Stir and let them cook.

Add lemon juice. Crack the eggs into the veggie mixture. Put the lid on pan and let eggs cook for a minute. Then gently mix eggs with veggies. Making sure no to scramble eggs 🙂

Serve the dish with rice.

ترشی تره

ترشی تره یکی از غذاهای محلی شمال ایران می باشد. این غذای لذیذ را می‌توان با کته یا نان سرو کرد.

مواد لازم

هفتاد گرم گشنیز خرد شده

هفتاد گرم جعفری خرد شده

صد گرم اسفناج خرد شده

بیست گرم نعنای تازه

سه شاخه پیازجه ی تازه ی خرد شده

دو ق غ برنج پخته

سه عدد تخم مرغ

سه حبه سیر له شده

دو ق غ آب لیمو

دوسوم ق چ زردچوبه

کره یا روغن مایع

نمک و فلفل به میزان لازم

طرز تهیه

روغن را در تابه گرم کرده و سیر کوبیده شده – نمک – فلفلزردچوبه و برنج را در تابه به مدت 2 دقیقه تفت می دهیم.

سپس سبزیجات خرد شده را به مواد بالا اضافه می‌کنیم و می‌گذاریم بپزند.

زمانیکه سبزیجات پختآب لیمو و تخم مرغ ها را به مخلوط سبزی اضافه می کنیم. در تابه را می‌گذاریم تا کمی تخم مرغ ها سفت شوند و سپس تخم مرغ ها را با سبزی مخلوط می‌کنیم ولی نباید زیاد تخم مرغ ها خرد کرد.
