Carrot stew with potatoes and chicken

Carrot stew that is called ‘ Khoresht Haveej’ in Farsi, is a Persian stew that is made with carrots, potatoes and meat.

300 g chicken breasts
2 medium onions, chopped
300 g baby carrots
3 potatoes, peeled and cut into strips
2 tbsp. tomato paste
1 tbsp. Saffron water
1 tbsp. fresh lemon juice
¼ tsp chili powder
½ tsp turmeric
Olive oil

Place chicken in a pot. Add water and let it to cook. If there is left chicken. Once it is cooked, remove it from the pot and fry it in olive oil until turns golden and add return it back to the pot.
Heat the oil in a pan, add chopped onions. Sauté until just soft. Then add chili powder and turmeric. Stir in for couple of minutes. In other pan, fry baby carrots for 10 minutes.
Fry potato strips as well. Set aside.
In a bowl with cold water, add tomato paste and salt. Mix all together. Pour liquid into the pot with chicken. Add fried carrots, onions, potatoes, saffron water and lemon juice. Taste and adjust salt and chili, if needed. Allow to cook for about for 30 minutes over medium heat.
Serve it with rice, salad and pickles.


خورش هویج و مرغ
مواد لازم

سیصد گرم گوشت سینه مرغ

سیصد گرم هویج ریز یا درشت خرد شده

دو عدد پیاز خرد شده

سه عدد سیب زمینی – طولی خرد شده

دو ق غ رب گوجه فرنگی

یک ق غ آب زعفران

یک چهارم ق چ پودر فلفل

یک ق غ آب لیمو

یک دوم ق چ زردچوبه

نمک به  میزان لازم

روغن زیتون

طرز تهیه
مرغ را آبپز کنید. وقتی آماده شده در کمی روغن سرخ کنید تا طلایی شود. در یک تابه مقداری روغن گرم کنید. پیاز های خرد شده را تفت دهید تا نرم شوند. سپس پودر فلفل و زرد چوبه را به پیاز اضافه و 2 دقیقه ی دیگر نیز ادویه ها را تفت داده و تابه را از روی حرارت بردارید. هو یج ها را 10 دقیقه تفت دهید و سپس سیب زمینی های خرد شده را سرخ کنید.
در یک پیاله مقداری آب سرد را با رب گوجه فرنگی و کمی نمک مخلوط کنید. مایع آماده شده راداخل قابلمه ای مرغ بریزد. سپس پیاز – سیب زمینی- هویج سرخ شده- آب زعفران و آب لیمو را نیز اضافه کنید و و مجدد مزه ی خورشت را امتحان کنید – اگر نیاز به نمک و فلفل بیشتری هست – اضافه کنید.در قابلمه را گذاشته و اجازه دهید برای 30 دقیقه با حرارت متوسط خورشت آماده شود.
خورش هویج را با کته /پلو و سالاد و ترشی سرو کنید.

I share my recipes in Farsi/English along with step by step photos of preparation. I take all my own pictures. I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
