Beef and vegetable soup

250 g beef meat, cut into small cubes
1 large onion, finely chopped
1 large carrot, diced
1 large parsnip, diced
Small bunch of parsley, chopped
100 g pearl barley
2 beef stocks cubes
3 tsp mustard sauce
Salt- pepper as desired
Olive oil

Heat the oil in a pan and add diced beef and chopped onion. Fry for 10 minutes. Stirring, until onion soft. Then, add mustard, and season with salt and pepper. Fry 2 -3 minutes more. Set aside. In other pan, fry diced vegetables for 5 minutes. Pour 2 litres of water in a pot, bring it to boil. Stir in pearl barley, fried vegetables , beef and beef cubes. Cover and simmer until meat is tender and cooked. Stir time to time. Add chopped parsley and let it cook for 10 minutes more.
Serve it with bread and butter or sandwich.


سوپ گوساله با سبزیجات

مواد لازم

دویست پنجاه گرم گوشت خرد شده ی گوساله

صد گرم جو

یک عدد پیاز درشت خرد شده

یک عدد هویج  خرد شده

یک عدد  زردک خرد شده

یک دسته ی کوجک جعفری خرد شده

دو عدد قرص عصاره ی گوشت گوساله

سه ق چ سس خردل

نمک و فلفل به میزان نیاز

روغن زیتون

طرز تهیه
روغن را در تابه گرم کنید. گوشت و پیاز خرد شده را به مدت 10 دقیقه در تابه تفت دهید وقتی پیاز ها نرم شدند – سس خردل و نمک و فلفل را نیز افزوده و 2 دقیقه ی دیگر همه ی مواد را حرارت دهید . و بعد از روی گاز بردارید. در یک تابه ی دیگر هویج های خرد شده را به مدت 5 دقیقه تفت دهید. در یک قابلمه 2 لیتر آب را بجوش آورید. جو- هویج ها و گوشت تفت داده شده و عصاره های گوشت گوساله را درون قابلمه بریزید. در قابلمه را گذاشته و اجازه دهید سوپ با حرارت ملایم تا زمانی که گوشت نرم و لطیف شود بپزد. وقتی گوشت خوب نرم پخته شد جعفری های خرد شده را هم اضافه کنید و بگذارید برای 10 دقیقه ی دیگر روی حرارت باشد.
این سوپ مقوی و خوشمزه را با نان و کره یا ساندویچ می توانید میل کنید.

Iranian cuisine is a combination of rice with meat ( chicken, beef, lamb, fish, turkey), nuts, fruits, dried and fresh herbs and vegetables. Iranian food is a celebration of flavor, colour and spices such as: saffron, cinnamon, cardamom, turmeric, dried rose petals, dried limes, cumin, .... I share my recipes in Farsi/English along with step by step photos of preparation. I take all my own pictures. I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
