Sour meatballs

These meatballs are combination of ground meat with lemon juice, cumin and herbs.



250g ground beef or lamb

1 cup cooked rice

Small bunch of fresh parsley, finely chopped

2 lemons juice

1 egg

1 tsp cumin powder

1 tbsp flour

Salt and chilli pepper to taste




In a bowl with cooked rice, add half of chopped parsley, meat, half of cumin, salt and chilli pepper. Mix ingredients together. Add an egg and mix well. Roll the meat into balls. Fry meat balls in hot oil until golden brown.

Squeeze the lemons to collect juice. Add rest of spices , chopped parsley, 1 tbsp of flour and 1 cup of water to the lemon juice. Give the sauce a good whisk. Pour it into the meatballs pan and simmer for 20 minutes. Serve the meatballs with flat bread and crispy fried potatoes.

مواد لازم

دویست پنجاه گرم گوشت چرخ کرده

یک پیمانه برنج پخته شده

یک عدد تخم مرغ

چند شاخه جعفری خرد شده

یک ق چ پودر زیره

نمک و فلفل به میزان لازم

روغن زیتون

مواد لازم برای سس

یک ق غ آرد همه منظوره

دو عدد لیمو ترش

یک ق غ جعفری خرد شده

یک پیمانه آب

طرز تهیه
جعفری ها را ریز خرد نمایید و با گوشت چرخ کرده – برنج پخته و ادویه ها مخلوط کنید. تخم مرغ را به گوشت اضافه و همه ی مواد را خوب ورز دهید و به صورت کوفته قل قلی های کوچک یا متوسط در آورید. در تابه کمی روغن را داغ کنید و کوفته ها را سرخ نمایید.
برای تهیه ی سس: آب لیمو ها را با 1 ق غ خوری جعفری خرد شده – آب و آرد مخلوط کنید و روی کوفته های در حال سرخ شدن بریزید. اجازه دهید کوفته ها روی حرارت متوسط به مدت 20 دقیقه بپزند.
این کوفته های خوشمزه را با نان و سیب زمینی سرخ شده می توانید میل کنید.

Iranian food is a celebration of flavor, colour and spices such as: saffron, cinnamon, cardamom, turmeric, dried rose petals, dried limes, cumin, .... I share my recipes in Farsi/English along with step by step photos of preparation. I take all my own pictures. I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
