Meatballs or as we say in Farsi: Kofteh کوفته are popular and known in most countries. Different cities in Iran have their own version of meatballs. They might be giant or tiny, they might be savoury , or sour and they might be plain meatballs or stuffed with boiled eggs and fruits. Main ingredient in all meatballs is ground meat along with different ingredients such as herbs, and spices. In the following recipe, meatballs are combination of ground meat with rice, lemon juice, cumin and herbs.
250g ground beef or lamb
1 cup of cooked rice
50g fresh parsley, finely chopped
2 lemons juice
One and half of tsp ground cumin
1 tbsp flour
Salt and chilli pepper to taste
In a bowl with cooked rice, add ground meat, half of chopped parsley, some ground cumin, and season with salt and chilli pepper. Mix ingredients together. then, Add an egg to the meat mixture and mix well until well combined. Now, Roll the meat into the medium size balls. Heat some oil in a pan. Fry meat balls in hot oil until golden brown and then turn off the heat.
Squeeze the lemons to collect juice. Add remaining spices, chopped parsley, 1 tbsp of flour and 1 cup of water to the lemon juice. Give it a good whisk. Pour it into the meatballs pan and simmer for 20 minutes. Serve the meatballs with flat bread and crispy fried potatoes.
