Persian Apple-Apricot Lamb Stew

نزدیکThis stew is terrific, full of flavor and colourful. It’s made from apple, dried apricot and meat ( lamb/ beef/chicken). Just delicious.

200 g rice
300 g boneless lamb meat, cut into cubes
1 cup of dried apricot, chopped into pieces
2 large apples, peeled off, chop into small pieces
2 medium onions, sliced
2 tbs of Saffron water
3 tbs of flaked almonds
1 cinnamon stick
Salt – pepper for taste
1/2 tsp turmeric
1 tbs mixed spices, special for mixing with rice ( 1 tsp of cumin, 1 tsp of ginger, 2 tsp of rose petals, 1 tsp of cardamon, 1 tbs of cinnamon, 1 tsp of nutmeg, 2 cloves).
Olive oil

Place meat cubes with enough water in a pot and cook it until is tender.If there is left some meat juice, you could save it for adding to stew. Once it is cooked, set it aside. In a pan add 3 tbs of olive oil, add sliced onions, saute until soft. Then add cooked meat and saute for 5 minutes more, stir occasionally.

Add spices and mix it with onions and meat. Add 2 tbs of saffron water and cinnamon stick. Let it to saute for couple of minutes. Add chopped apples and apricot with saved meat juice or 1 cup of water. Cover the pot with lid and simmer 15 minutes.
Meanwhile, cook the rice with spices.
Garnish the stew with flaked almonds.
